Quinoa Puff Protein Bars
Ingredients:
1 medium banana, mashed
1/2 tsp. Cinnamon
½ cup peanut butter, natural
1 ¼ cup quinoa puffed
2 scoops of protein powder, I used Truvani vanilla protein powder
¼ cup (heaping) sunflower seeds, roasted, unsalted
¼ cup (heaping) plain roasted peanuts
¼ cup (heaping) walnuts, chopped
2 Tbsp. maple syrup
½ tsp. Vanilla extract
⅓ cup chocolate chips, I use Guittard semi sweet
Directions:
Preheat oven to 350 degrees F.
Mash the banana in a large bowl until it is pureed. I like to give it a mix with a hand mixer to help with this. The banana is the binder holding everything together.
Then add the peanut butter, cinnamon, maple syrup and the vanilla extract and mix until everything is well combined. At this point, it’s time to add the protein powder ( I used Truvani’s plant based vanilla protein powder) and mix well.
Add the quinoa, sunflower seeds, peanuts and walnuts and stir with a large spoon.
Prepare a baking sheet with a layer of parchment paper and place the mixture on top. Place another piece of parchment paper on top and press the mix flat like you would the like button if you are enjoying this recipe. I like saying that! Ideally you want the bars in a rectangular shape and about 1/2 to 1 inch thick. You can use your hands or even a rolling pin to help you smooth the dough out.
Then remove the top layer of parchment paper and place the pan in the oven for between 18 and 20 minutes. Cool a bit and then you can drizzle or coat some semi sweet chocolate over the top.
Place the chocolate in a bowl and microwave on high for 30 second increments, stirring in between each 30 seconds. Do this until the chocolate just melts. If it gets too hot it can burn, so be careful. Spread this over the top of the bars and let it cool in the refrigerator. Then you can cut into bar or square shapes. Freezes well too.

If only we could taste videos through the screen, right? Thanks for watching!
I love how you try to bring recipes with ingredients that are healthy or at least “better for you” than a lot of items currently being sold in stores. I’ve never heard of puffed quinoa, so I find this recipe very interesting. Thanks so much!

@@RockinRobinCooks forgot like to buy you a tea 🫖 but I don’t do pay pal
Looks great but I need more information. I couldn't find it but can you provide the carb and fiber count so I can figure out what I can have?
They look tasty and fairly easy, I just need to pick up some puffed quinoa then I'll head for the kichen. How do you recommend storing the bars? Would waxed or parchment paper work or is it just better to layer them in a cookie tin? Thanks!
Hi Alice, I put mine in a ziploc bag in the freezer. Thanks for watching!
Yummy where did you find the puffed quinoa?
I purchased them off of Amazon. This isn't the exact one I used but it is the same company. amzn.to/43uby3N They are out of the exact one I used. You can also try Whole Foods or Sprouts.
I like granola bars, never had a protein bar. It looks really good, gonna have to see if I can get those puff things. I like almonds the best out all those nuts. I'll have to look at the different types of things you listed i can't stand peanut butter
I bought the quinoa puffs from Amazon but it is currently unavailable. You can use almond butter as a substitute for peanut butter.
The no whey made me giggle. Hahaha Thanks so much for this! My daughter and I are on a weight loss journey and have been working really hard! But sometimes you have to have a little treat or you get discouraged. So we've been buying protein bars at the store and you're right, they're just not that good. These look delicious! We've decided to try these this weekend. Off the the natural grocery for the ingredients! I'll let you know how they turn out! Thanks so much!
Hi Darcy, I hope you and your daughter are successful in your weight loss journey! That's great you are doing it together. I hope you enjoy the protein bars!
This looks so good. I am trying to eat better, I must loose some weight. Thank you for your recipes. I’m going to try several of them right now away. Thank you!
Good for you Pauline! Try not to make too many big changes at once as it can be overwhelming. Cooking your own food is a great start! Enjoy!
Thanks going to make it don’t have the puff going to use Cheerio cereal
Let me know how they turn out with the cheerios!
First joke took a minute - early morning for me. Second one was easier
Love this recipe!
Jokes and recipes - the perfect recipe for a great day! Thanks for watching!
Instead of putting it in the oven have you tried putting in the refrigerator?
I have not tried putting it in the oven. You could do a test if you want. Put half a batch in the fridge and half in the oven and see if you notice much difference. Thanks for watching!
@@RockinRobinCooks I will try
Yum! Could you please not wear black, you have such a pretty figure.
How creepy
