Md ji nice information, but u can make it without boiling it, as Kanji of Black Carrot is made, that is particularly after winter in Jan -feb whole method is, same, except boiling it, just cut it in slices add drinking water &if possible put in sunlight for few days to get it fermented, more over if someone makin kanji of black carrot of say 1 kg can add 2 beetroots in the same water same spices, We in North India drink Black carrot + Beetroots kanji , so try it also

Yes it just takes longer, you can store on top of refrigerator or in the cupboard above if worried about cold.

Beetroot is produced in winter so kanji is basically winter drink but we managed to store beetroot for summer

If you can get Kosher Salt, its better for fermenting vegetables and making sauerkraut.

Beet root has oxalic acid you will get kidney stones if you drink daily. If it is fermented with oxlates eating bacteria "oxalobacter" then its fine.
