- Beetroot Kvass
Ingredients quantity
Beetroot 2 nos
Pink salt 50 gm
Ginger(optional) 1 inch
Water 1 ltr
Apple cider vinegar 4 tsp
Method :
1. Wash the beetroot then Trim the tops and tails, but leave the skins on.
2. Cut the beetroot into 1/2-inch cubes.
3. Place the beetroot cubes in a very clean 1 litre jar .
4. Chopped ginger with skin & add in jar (for additional flavoring) .
5. Add pink salt & water in jar, leave headspace at the top of the jar & Stir them well.
6. Add Apple Sider Vinegar & Stir it well.
7. Cover it with a lid , not to air tight .
8. Let the jar stand at room temperature for 4 Days
9. Once the mixture is fermented strain and transfer it into bottle , refrigerate it .
10. Ready to Drink .

1.पानी उबाल कर ठन्डा कर के डालते समय एक चम्मच पिसी राई (छोटी,भूरे रंग की) डालें तो बहुत उत्तम काँजी तैयार होगी.
2.पिसी राई डालें तो सिरका डालने की आवश्यकता ही नही, सिरका थायरायड की समस्या में ठीक नही.
3..बोतल पर ढक्कन लगाना गलत है; खाँसी में खमीर उठने पर, गैसें निकलने के लिये बोतल पर रूमाल के साईज़ के कपड़े से ढक कर रबड़ का छल्ला चढ़ाना बेहतर है.
4.सुबह- शाम इस मिश्रण को stir करके हिलाते रहें

50 gm salt will translate into 5% saline solution or more. I think right concentration is 2.5%

Yes fungus aa gyi, fridge mei bhee rakh diya thaa nd salt bhee bahut zayada thaa.
Bohot zada salty tha kvass jis trah se apne banaya. Ek bar bataye k esa kyu. 50g namak bilkul ghula hua tha. Fungus bhi bohot ayi.

You can drink beet kvass after it's fermented, but it's often best to wait a few days. The flavor improves after sitting in the fridge for at least a week. The liquid will thicken, become darker, and seem less watery. Beet kvass can last for at least a month in the fridge, but the amount of antioxidants and lactic bacteria will start to decrease after that. 🙂

Salt should be maximum 2-3 % here you have put 5% of salt Kvass can be made without salt which a BP patient can consume with out any hesitation and can get benefit of it

Some how dont feel comfortable using beetroot without de-skinning . Will is work without de-skinning too??
well scrub it well on surface, according to Dhanashree lot of enzymes are lost when you remove the skin..

Beetroot kvass can be stored in the refrigerator for up to a month, and it should be kept out of direct sunlight during fermentation and storage; ideally, store it in a cool, dark place.🙂

chef, I have made kanji four times so far. Every time everything was fine, but when I went to prepare the fifth batch, after four days I saw that the fungus had fallen off, the first two days I poked the lid of the jar a little (with a clean dry chop stick). Only on the third day the lid was not opened. Now, can Kanji with fungus be eaten or should I throw it away? Please let me know. I know, I bother you a lot, ask a lot of questions. Please forgive me.
When it comes to consuming kanji with fungus, it is generally safe to consume as long as the fungus used is edible and harmless.🙂
