Today, will teach all of you how to make your own homemade pineapple jam at home. Sweetness, spices, and acidity can be adjusted according to your preference. This jam is made from fresh pineapples, however also it will be fresher and sweeter than store-bought jam. It's best to be used for making New Year's Pineapple Cookies. 2200克 (4颗) 黄梨
2颗 八角
½茶匙 肉桂粉
450-500克 细纱糖**
½颗 柠檬皮
½颗 柠檬汁(鲜渣)

2200g (4pcs) Pineapple
2pcs Star Anise
½tsp Ground Cinnamon
450-500g Castor Sugar
½pc Lemon Zest
½pc Lemon Juice (Freshly Squeezed)

提示Tip:
我重新制作了一批,发现我们可以在煮前榨出黄梨汁。 这可以使炒时间缩短到大约25分钟左右(影片中我没渣汁出来,炒一小时多)。
I did remake a batch n found out we can squeeze the juice before cooking. That enable me to cut short the cooking time to about 25minutes or so(in video, out squeezing out juice, took me one hour more to cook)

The time of cooking will be shorter if you drain the liquid after blending process..

Like your video. If can shorter the video it would be better. For e.g The front part of cutting the pineapple can be shorter.
Not a good idea, the pineapple flavour will be much reduced.
bad idea. without the juice it will end up taste like just very sweet jam. The pineapple essence is lost

yes, u can make them ahead, be sure to cover with cling wrap to avoid them getting dry

450g sugar, will it be too much? 2.2kg pineapple is before peel or after? Thank you.
After peel, it's ok for my family. Also depends on the pineapple sourness that u used. Adjust Accordingly

I think I will just use 4 average size of pineapples, peel and cut in big chunks, it's hard to do measurements

如果烤得够干是耐较久的,必须收密封容器,不能接触到潮湿。要新鲜的话尽量2个星期内吃。

@@whispersoftheQuran taste wise, both also ok, just the color will be deeper for the one that cooks longer.
I think the one that squeezed out juice will be able to last longer, since it will be much easily to cook till quite dry.. but if u cook longer n dry enough even those with juice can store longer as long as they are in fridge.
Store in Freezer will be even longer..
