延续上期黄梨饼,今天我们继续来做第二款“黄梨饼/黄梨酥”。这个食谱饼干比较稳固,以酥皮型牛油香的饼干为底,里面包这自家自制的黄梨酱。外观是美丽的春花形状,好可爱又有新年气氛。放隔天吃,黄梨酱融合跟饼干,酸甜酥香, 我本身较喜欢这款黄梨饼干哦~
Following the last episode’s Pineapple Tart Cookies, today we continue to make the second version of "Pineapple Tart Cookies". This cookie recipe is relatively stable. It is made using flaky buttery pastry crust as its base, wrapping within is our homemade pineapple jam. With a beautiful spring flower shape appearance, they look so cute and filled with Chinese New Year atmosphere. Eat it on the next day, the flavor of pineapple jam has fully combined with flaky pastry crust, sour and sweet. Personally, I more prefer this type of flaky Pineapple Tart Cookies~

=80小饼干=
227克 无盐牛油(冷)
340克 普通面粉
1茶匙 发粉
½茶匙 盐
50克 糖粉
1颗 鸡蛋
½茶匙 香草精
1茶匙 冷水(可选)
=蛋液=
1颗 鸡蛋
少许 盐
(预热烤箱170C: 20分钟)
(上下火,不开旋风,中层烤)

=80pcs small cookies=
227g Unsalted Butter (Cold)
340g All Purpose Flour
1tsp Baking Powder
½tsp Salt
50g Icing Sugar
1 Egg
½tsp Vanilla Extract
1tsp Cold Water (Optional)
=Egg Wash=
1 Egg
Pinch of Salt
(Preheated Oven 170C: 20minutes)
(Top bottom heat, no fan force, middle rack)

Made this today. The dough was really hard to work with, melts quickly thus hard to shape using a cookie cutter. It’s not bad, buttery but lacks abit of fragrance like milk powder and not sweet enough. Thanks for the video!

I used this recipe n made it into pineapple balls . The outlook is nice but I’m just wondering why is the pineapple abit hard even though it’s wrapped inside the dough ? I place it on the middle rack with 上下火 170 degrees。should I put it on the lowest rack but with only 下火 ?
i use 上下火, without fan force, middle rack. dont on fan, or else it will dry fast

I baked this last week, though I chilled dough in fridge, find that my dough is slight wet (I didn't add cold water) but the egg w/o shell is 65gm. It's quite difficult to cut because dough is soft because of its wetness. Could it be the egg is too big? Also I didnt use BP. Please advise. Thank you for recipe. Have a great Happy Winter Solstice
Oh, pls follow the exact recipe ya? Baking powder must be included, else your cookies wont puff nicely.
Oh.FYI, my eggs around 56-58g.your eggs might be larger than mine. Must sure butter must be really really cold from fridge.erm dough actually depends on country's humidity too. During raining my dough tends to be sticky too, coz flour absorb all the moisture in the air.. u can choose to chill the dough longer, or just sprinkle abit flour to combine until it can become a dough ball

Welcome, pls send photo after making. This depends on how dry is your pineapple fillings, the dryer the longer, the more moisture the quicker it grow mold.
Best to airtight and eat them fresh within a week

会太湿,不好捏成型...面团会变成像粿那样。饼干类都要靠块状的牛油来做,特别是要压模型的饼干。我也很想用植物油。ghee应该可以。商业工厂虽然是用植物油做,相对的他们有添加其他的东西。
是的,不鼓励,本身觉得ghee也很软,方块牛油最好。

老師昨天 我第一次学做你的 黃梨餅 但是失敗了 為什麼餅皮太濕了 什麼原因
水不可一次性加完,要慢慢加。份量要准,每个面粉不同吸水性。而且你的牛油一定要冷,不可以室温过高,不然融了就面团湿感觉,其实是出油了
