- Pineapple tart is one of the popular cookies for Chinese New Year in Malaysia! In this video, I will share the tips of getting the "melt in the mouth" and beautiful pineapple tart. Besides the recipes, the handling and the understanding of the ingredients is important to achieve the good pineapple tart.

Dough Ingredients
250g unsalted butter
370g All purpose flour
50g icing sugar
20g corn flour
2 egg yolks
Filling
Pineapple jam
Egg Wash
1 whole egg
1 yolk
a few drops of cooking oil

I don’t see the same mould in shopeee but I think baking shop sells it. You might need to try at any baking ship near you
How long do you rest the dough for??
Dear autumn, thanks a lot for this recipe. I followed your recipe exactly and I really like the “melt in your mouth” texture. Would definitely be using this recipe shall I want to make pineapple tarts again in the future. I would recommend this recipe to anyone who wants to make pineapple tarts at home. As for the filling, I use the one from “iwen”. Hope this info would be helpful to other viewers 😄

Corn flour gives melt in mouth feel.
So cute!! I'm going to try and make this but using Redman's premix. Hopefully it can turn out the same as yours :)

It’s the flour used. Every flour is different in absorbing liquid. You can reduce 20g flour and see

No fix timing and it very much depends on how soft your butter as well as the mixer speed used

Can I use custard powder instead of corn flour?
I have not tried that. Corn flour make the tart crispy fragile. But I have not tried using custard powder though

Length doesn’t really matter. It is just how long u can pipe the dough

I would bake at lower temp for ball shape as the moisture is trapped and might crack more. I baked 160C for ball shape pineapple tart

There's double bake. 180deg 8min, egg wash then another 8-10min or till it turns golden brown. Need to turn on the subtitle.

Open tart might need a little more harder dough than this. You can adjust the flour amount to make it drier dough

how about pineapple jam recipe
I use 3 medium size pineapple, grind and drain the juice. Add 100g rock sugar and one cinnamon stick and cook it until dry
Not easy to pump out the dough.
Keep the dough cover and do not dry it out
