He usually takes a chicken carcass (after removing breast/thigh/wings from whole chicken), whacks it a few times with a cleaver or heavy knife (not cutting all the way through, though), and sautés it in a big pot, adds water, maybe some herbs, and simmers for about 45 mins, then strains the broth. I’m going by memory. Anyone out there, including Chef, please feel free to correct me or fill in the blanks.

Made this a few days ago. I made it with 12 thighs as I wanted left overs for the next day. Made a error in throwing away marinade. Used too much broth making the rice wetter than I liked. Used micro greens as I'm not a fan of spinach. It was very tasty. It'll be better next time.

Thanks again for another delicious, easy recipe. Very fussy husband very pleased (not that I care much any more´LOL) . I did not have fresh so used finely chopped frozen spinach. And that marinade.sooooo good! Whiskey's eyes....OMGoodness...beautiful dog/mascot! And...that pepper mill snatch...love it and the excellent videography...it's eye candy!
