Every time you post a video I'm amazed at your talent first for all but above all how you make sure that you put out food we either all have at home or easy accessibility to.... your whole channel is such a vibe because I couldn't begin to count the amount of your recipes I've recreated....it's insane. Thank you.

Cheers Hans! I just realised my saffron stock has diminished, I should have bought lots in India, so much cheaper! (But it has to be tested, a lot of fakes too!)
as a regular "dum" biryani maker at home, chef has done very well here. I am aware this biryani is his own version. He got that so called "green" masala part spot on. 3 greens of cilantro, mint and mashed green peppers. Chef also picked yellow (brown) onions instead of red onions. red onions are good in "Pilaaf" and "tahari" but Biryani is too royal of dish to use red onions. also, chef's own touch of "chicken" masala is fine too because this is a "chicken" biryani. Authentic Biryani is mostly made with red meat (Mutton or beef), home made garam masala is a must. South India uses 1-2 lemons. North India do not. I always use lemon. some remote south India uses coconut as well but never in North. This variation looks delicious too.
If there is anything I'm craving for right now, it's a plate of flavourful homemade chicken biryani! The other word for anything you cook is 'incredible perfection' . Hope you had a great time in Mumbai.

Making biryani is an art which I have been making since last 25 years. The concept of biryani making is the flavours are soaked in the rice due to 30% uncooked rice. Rice grains should be firm,fluffy and melt in the mouth. Perfect fluffiness comes out when proper amount of gravy, saffron milk,keora essence water are added with a generous amount of clarified butter. I really appreciate your photography. 👍

Malabar Biryani.... Donne biryani.... These are unique and very different from eachother... I'm sure creating these recipies will give u a boom 💥 with your Indian fans
