i used this the next day for burrito stuffing, diced up a thigh, and it was the best burrito i ever made. i added a little bit much of the chipotle sauce the night before which made me think of it. i heated up the filling, rolled it up and toasted it in the air fryer for 6 min, then topped it with sour cream, salsa verde and chiltepin hot sauce. served with chips. will be a new staple. so easy.

Lay out a hand of corn tortillas in a pan, layer chicken mixed with enchilada sauce mixture, lay out a hand of tortillas, layer cheese...rinse repeat till pan is full👍

I put the chipotle peppers in a glass and pureed them with a hand blender. I used a spoonful-ish and that was the perfect amount. Like a lime forward with an immediate earthy rice/onion to tame it, and then the spice on the back end. My favorite one pan chicken dish for sure.

It's a burger with green chili stew smothered on top. Perfect for this time of the year! The chile can go on burritos as well! If you need the recipe for the green chile I can send mine over. Sam, could you cook up something that is a 1-pot recipe but with a steam table pan, the size used in restaurants and buffets? Something done in the oven for 12-15 people. It is actually hard to find recipes specifically for steam table pans yet it is a very common size pan. Luv your channel baby!

Made this and it was very tasty. Next time I'd go lighter on the oil and brine or marinate the chicken. The rice had great flavor but the meat didn't absorb the salt and spices.
I gotta try this. I just made my moms 70's chicken rice bake (yeah, pretty sure it was back of a campbell's soup can). My family really liked it, and my dog who was recovering from a liver infection and wouldn't eat anything crushed it. This looks way more flavorful.

Yessss! I made that one pan roast chicken and veggie dinner with Sam made a while back and everytime its friggen delicious!
I've made it twice already. Mexican style with chipotle and cumin and an Indian style with curry and coconut milk. So good!
