- This is a recipe Soba noodle in a Dashi ( katsuo & konbu soup ).
Dashi is full of Umami, and rich umami flavor is mouth-watering. It's so tasty and easy ,healthy my most favorite dish.
it's all In Japan, soba noodles can be found in a variety of settings, from fast food places to expensive specialty restaurants. Soba is very popular in Japan. It is considered a national dish like Sushi or ramen.
Of course Japanese Mom cook Soba to her family often, because makes so easy quick also Low -calorie so healthy. I hope you like it 😊
ingredients:
Dashi
1000ml water
20g Katsuobushi
Konbu (15㎝x5㎝)
1table spoon Sake
1table spoon Soy Sause
1/4 salt
-Soba Noodle -
dried soba noodle -1pack

Why don't you boil the soba in the dashi to begin with?
I'm assuming it changes the consistency of the soup, making the broth starchy from the noodles
It would destroy the taste of the dashi
