OXTAIL SOUP | recipe

  • 4 1/2 lbs oxtails
    2 ripe plantains
    2 small eddo root
    1 large cassava/ yucca
    2 sweet potatoes
    1/2 of a small pumpkin
    3 sweet corn on the cob
    1 large carrot
    1 large onion
    Chopped bell peppers
    3 tbsp minced garlic
    Chopped green onions
    Chopped parsley
    thyme
    4 habernero peppers
    2 tbsp better than bouillon Chicken base
    1 pack oxtail soup mix
    1/2 tsp black pepper
    broth
    oxtails
    sliced ginger
    celery stalks
    green onion stalks
    1/2 yellow onion
    thyme
    Rosemary
    2 star anise
    4 Pimento seeds/ all spice
    2 black Carmadom
    1 cinnamon stick
    1 tbsp seasoned salt
    1 tbsp complete seasoning
    1 tbsp all purpose seasoning
    1 tbsp garlic powder and float back
    1 tbsp onion powder
    1 tsp smoked paprika
    cornmeal dumplings
    ingredients:
    1/2 cup fine cornmeal
    1/2 cup flour
    1/2 tsp baking powder
    1/4 tsp ground cinnamon
    2 tbsp sugar
    1/2 tsp salt
    water
    method:
    in a medium size bowl add all the ingredients and mix well then add water slowly to form a soft dough, knead until Dough is smooth then let it rest for 15 to 20 mins. separate into desired size and shapes then add it to your soup cook for 5 to 8 mins once they sink to the bottom and start floating to the top that's an indication that they are done and you can serve and enjoy.

    Looks amazingly delish! Can't wait to try it out "your style"! Made this several times "my style" which is very similiar to YOUR STYLE.     Tried this recipe over the weekend and it was fabulous. Yeeessss, its a lot of steps but like Candy said its worth the effort. Normally, i would have left the thyme stalk, celery etc but i like the idea of using them to create a broth and then straining them out. I normally also leave the pumpkin to melt I followed Candy’s recipe to the letter and it did result in a more smooth texture. Loved it! Any new cook can follow this recipe - its very clear and informative - and will get perfect results every time. Thank you Candy!!

    Looks delicious!!! I prefer to use split peas puree though, it gives it a silky smooth consistency!

    Candy, this is "our time of the year"! Besides sweet potato pie and/or fruit cake.....who does it better? I LOVE savory provisions! People try, but so often "over SALT" their food! We need to show folk how to "over herb their food"! Better for you and "Taste Gdeliciousness

    Looks lovely Candy 😊. Can I cheat a little bit by pressure cooking the oxtail? I want it falling off the bone and I want to save time.

      You sure can. Make sure it's not too soft or else all your meat will become mushy floating around in the soup.
