Corn Soup | Trini Carnival Eats 🇹🇹

- There's nothing better than a nice hearty corn soup! Trinis will eat soup whether rain falling or sun shining...we love our soup! It's one of the most popular street foods, especially during carnival time. Corn soup is a filling vegetarian one-pot meal, that's great for limes and as an after-fete reviver. It's great as is, or with chicken some salted pigtails, cow heel etc.

INGREDIENTS FOR 10 QTS OF SOUP
• 2 tbsps butter + 2 tbsps avocado oil
• 1 onion, 10 cloves of garlic, 6 pimento peppers, hot pepper, bunch of thyme, 1 bundle of chive/scallion, 2 stalks of celery, 2 tbsps green seasoning & carrots.
• 1 cup of cubed aloo (potatoes) + 1 cup of cubed sweet potato + 1 cup of cubed cassava + 1 cup pumpkin
• 1/2 cup of boiled split peas & 1 tsp of turmeric
• 2 cups of coconut milk
• 1 can of cream style corn
• 6-8 cups of water (preferably hot)
• Salt as needed
• 5 corn on the cob, sliced
• 2 tbsps green seasonings
• A handful of chopped bandhania & cilantro (optional) to finish
• Dumplings: 3 cups of flour + 1 1/2 tsps
salt + 1 tbsp sugar + 1 tbsp green seasoning + 4 tbsps of coconut milk powder or enough coconut milk to form a firm dough.

Looks utterly delicious. A lot of people are not aware of this but authentic Creole corn soup has a few grains of clove in it. This gives it the true old fashioned flavour
