Last up to three months?!! It will NOT last 1 week! I don’t have will power either when it comes to fruitcake or rum cake. I’ve never had a cake like this- it appears to be a perfect blend of my two favorite cakes! I learned how to make fruitcake from my Grandmother- a recipe handed down through her family- but it’s the type found in Britain and the US. I learned to make rum cake after visiting Grand Cayman. I think this will become a favorite. The fruit mixture makes me think of another Christmas favorite that my mother and grandmother made- mincemeat pie. By far, my favorite pie!

You can wrap it up well In plastic wrap place it into a cookie tin they are selling in the dollar store or any grocery store then box it up and ship it make sure you put fragile stickers on the box or write it on. Hi dear I usually soak mine like every 2 to 3 weeks or whenever it looks like it's dry if it doesn't look dry I leave it because you don't want the cake so moist to where it's mushy and tasting like pudding in your mouth. So I go by look and not so much about timing.

Yes cooking it on very low heat with the water on the bottom rack eliminates the cracks. Good luck with the recipe

Yes small pans are OK just make sure you keep checking it because it may take less time to bake.
