Introduction:
Mieng Lao is a delightful Laotian finger food that tantalizes the taste buds with a harmonious blend of flavors and textures. Recipe/ Ingredients:
Drinking water
Chicken bouillon
Fish sauce
Sugar
Salt
Padek sauce (anchovy sauce, fermented fish sauce)
Padek paste (anchovy paste)
Tamarind sauce (homemade)
Pork rinds (deep-fried pork skin)
Herbs:
Roasted peanuts
Lemongrass slices in thin pieces
Lime cut into small pieces
Fresh chili cut into small pieces
Powder pepper
Galangal cut into small pieces
Garlic cut into small pieces
Shallot cut into small pieces
Vegetables:
Eggplant
Long green bean
Green beans
Pak e-lerd
Baby dill
Lettuce
Cabbage (optional)
Cherry tomatoes cut in half
Serve with:
Hot sauce
Instructions:
In a bowl, mix drinking water, chicken bouillon, fish sauce, sugar, salt, padek sauce, and padek paste to create a flavorful base.
Add homemade tamarind sauce for a hint of tanginess.
Include deep-fried pork rinds to add a crispy and savory element to the dish.
Prepare a plate of assorted herbs, including roasted peanuts, lemongrass slices, lime pieces, fresh chili, powder pepper, galangal, garlic, and shallot.
Arrange a variety of fresh vegetables, such as eggplant, long green bean, green beans, pak e-lerd, baby dill, lettuce, and optional cabbage.
Cut cherry tomatoes in half and add them to the mix for a burst of juiciness.
To serve, assemble the Mieng Lao by placing a spoonful of the herb and vegetable mixture on a lettuce leaf, topping it with the prepared sauce, and folding it into a bite-sized bundle.
