    Very cool! I used to make one blending a peeled potato, corn starch, flour, salt and whatever spices that went with the dish. Put it n a squeeze bottle. Then create a round design on a flat top grill or non stick pan till seared. Lift, then transfer to an oil fryer and press it down with a strainer to shape it till it is crispy. Then salt it. A good container for a fresh salad with some fresh fish and a sauce drizzled on the top!

      Sesame oil can be used but since it isn’t a neutral tasting oil, the tuiles will have the sesame oil taste.

      Not my creation but something used by many chefs as a garnish. 😂 yes cleaning is not fun because it does splatter quite a bit. 👍

      You should be able to add a little bit of sugar dissolved in the liquid. Too much sugar can caramelized and burn when frying. You can also try sprinkling a little sugar over the tuiles right when they come out of the pan.

    How high is the heat must be? And do you need to add oil to the pan before putting the batter?

      No need to add oil to the pan, just the oil in the mixture. You should use a nonstick pan. The heat should be medium high.

      I always prefer to make them fresh or the same day. They can possibly be made 1-2 days in advance and kept in an airtight container, away from humidity or with some silica gel packets.

      I recommend making this the same day. If you need to store it I would recommend placing between paper towel sheets and in an airtight container.

      I don't add anything to the skillet. Only add oil to the mixture and use a nonstick skillet. Dry the excess oil in the pan after each tuile.

      For almond tuiles I prefer using a regular tuile recipe with egg whites, butter, sugar and flour + almonds. I assume you could try this method with the addition of a little almond extract.

      While the water evaporates the oil in the mixture heats up and starts to fry the flour, it happens simultaneously. 👍

      Yes, you can use pretty much any vegetable oil, neutral tasting oils are best, unless you want the added flavor.

      Yes they can be stored for a maximum of 2-3 days in an airtight container with a desiccant pack to keep them away from humidity.

      This batter works best when fried on a skillet.
