    I have made this about half a dozen times and I (obviously) love it! It is simple and delicious. The vinaigrette elevates it to an amazing dish. The only modification I do is that I omit the paprika as it provides little to no taste.

    The vinagrette absolutely makes this dish. I'd suggest adding some sesame seeds into the crust as well as searing about 20 seconds a side on medium high rather than 10. It's so easy to make. Well done.

      Jet speed is right. Searing on high burns your spices. Searing on medium will still sear but not destroy your flavor profile. Also remember olive oil is not recommended to cook on high heat. Use an oil that has a higher smoke point, such as avocado oil so it won’t burn.

    I've already done this recipe once and I came back to get the Wasabi Vinaigrette down. As much as the tuna is the star, the Vinaigrette takes it to the next level and is essential.

      My wife and I were just talking about all of the recipes I've posted with a sauce that most people don't realize, in some ways, is the best part. You should look into my Wasabi Wings recipe, however, if you love this Vinaigrette. Bonito flakes set that one off.

    YUMmmm!!! add Sushi rice. Garnished with shredded cucumbers-carrots-coleslaw, green onions, cilantro, and toasted crushed peanuts & VOILA! A fresh comfort and kick to it😋

    Thanks, tried this with Yellow fin, used less pepper and *lots* of wasbi. Seared 20 seconds each side. To die for :) Great with Jasmine rice.

      Just be sure to use Kosher salt NOT table salt or sea salt which is 3 times more potent. ☺

    I made this today for the first time. I thought the dipping sauce needed a tad more honey and the rub was a bit salty. Better to go less salt and add it later at the table. Maybe 25% less on the rub. Yes, I did use Kosher salt. I added a bit more honey to the dipping sauce. I opted to seer the meat for 15 seconds and it was just right. I thought just a smear of oil on the pan would help. Nope. Smoke city. My wife and I liked it.

      @@PMGK I made this again with less salt (half) and it was still salty. I didn't pay attention that soy sauce and wasabi paste are loaded with salt. If you plan on dipping every piece of tuna, cut the salt on the rub substantially.

    It looks beautiful. I wonder why you sear it so quickly and leave so much of it raw? A lot of chefs have a sear of about an 8th of an inch/6mm-ish.
    Yours is practically raw.
    I like the dip as well. Lovely.

      Personal preference and its Sushi Grade Tuna, so it doesn't really matter.

    I just got really good results from KROGER'S steaks ... at our Kroger they just pull them out and put them in the deli container anyway. I think the frozen and thawed steaks were very good ... and cooked to the same level. I had always made myself look for sushi grade and I saw a batch on special so we got 3 small steaks which made 2 6oz portions ..... SO NOW I AM NOT SCARED TO USE THE FROZEN STEAKS ...

      Frozen is much better when eating fish raw or seared. Deep freezing kills the parasites that might otherwise be killed by cooking throughly. Always use deep frozen when preparing fish in this way.

    I felt I needed to add cooking spray to the pan. Also I would mention not to add to much salt and add black sesame seed to the dry rub. My fist attempt did not look as good as yours but was very tasty. Thanks

      If you're adding "too much" salt, your using the wrong kind. I specifically said to use Kosher Salt because table salt is 3X more potent. Adding sesame seeds is an entirely different recipe altogether and should include sugar, cinnamon and five spice powder.

    Hi Poor Man, yesterday I prepared this delicious plate, but something was wrong. Might be I didn't understand how to put the Kosher salt, Pepper and Paprika. I rubbed the tuna with this mix, before the sesames seeds. I cooked 8 seconds per side. But it remained very salty. I know what was wrong. The vinaigrette was delicious. Thx you very much. I felt in love with your tiny whisk :) Hug

      Unfortunately the same thing happened to me. You should never dip a tuna steak in a pile of salt and pepper. All you need to do is sprinkle a little salt and pepper on each side. Also, don’t turn your stove to max as you can burn your frying pan like I almost did.

    MUST READ:
    - his exact ingredients and recipe are on his website in the description
    - MAKE SURE to use KOSHER salt, no other type. If you only have sea salt or table salt, cut the amount of salt in half
    - black pepper in this amount can be spicy for some, so either use less or a different type of pepper
    - with less salt and pepper, if you still want an even coverage of the fish, add some black and white sesame seeds to the rub
    - you can replace the wasabi paste with mustard, although it does change the flavor a bit (good for kids who can’t eat spicy at all)
    - if you would like it cooked any more than what you see in the video, only do about 18 seconds on each side, no more than 25 or it’s a different meal. The ingredients were meant for this style of sear, red inside is GOOD!
    - this meal goes great with a veggie source; salad, sautéed veggies, whatever
    - the dip balances the rub. DONT be afraid to soak your bite.. it’s delicious
    - sensitive fire alarms will go off, just turn your oven fan on and pray for the best
    - don’t forget to dry the fish and rub it with olive oil (bonus points if you use lemon infused...)
    - garlic in the sauce is good if you’re a garlic junkie like me... proceed with caution
    - IMPORTANT: if you don’t like how it turned out, try to make mental notes of how you prepared it and what tasted good or bad about it to you. This is so that you can improve on your prep, cook, ingredients and technique later. I found black pepper was too spicy so I subbed in some peppercorn medley. I liked some garlic mustard instead of wasabi paste, I didn’t use only KOSHER salt the first time, I didn’t rub the fish well, I like my seared a bit longer, etc. DONT GIVE UP!! This is an incredibly good meal for macro and micro nutrients as well as super tasty and not that expensive (especially for fish).

      TRIPLE B REVIEWZ i just ate it at around 20 seconds per side. It was just frozen grocery store ahi tuna. Do you think its safe to eat?

      Tyler Dean depends. With tuna I usually defrost at least over night in a fridge and then let it sit for 20-30 mins out of fridge to get to room temp before cooking. Either way, make sure it’s “sushi-grade” or “sushi-quality” and preferably “wild caught”. These labels should be on the packaging as they are good things and companies like to flaunt that the fish is sushi grade but look carefully to see if it was or ask the store or look the company up online. 20 seconds each side should be more than enough to be safe to eat if it was sushi grade and defrosted properly. Wait a few days and you’ll be able to tell, even if it wasn’t sushi grade or wasn’t defrosted correctly there isn’t a 100% chance you even get sick depending on if there was any bacteria/your stomachs natural acidity and your immune system. Crossing my fingers for ya! 🤞

    This sounds as good as all your other recipes. I have just one question. Is it because you sear for such a short time that the pepper does not burn and become bitter?

      Yes! And be sure to use Kosher Salt. Table salt will ruin it and make it WAY too salty.

    I really like the video and the recipe is delicious. I use yellow fin tuna and could a bit longer since it is not sushi-grade. I've made a few times, but I neglected to cover the fish with olive oil first, used a mix of sea salt and kosher salt, and I made sure every inch of the fish was covered in the dry rub. It made for an amazing meal, but too peppery and salty. I am going to make the appropriate adjustments the next time Thanks so much.

      Yeah you've got to be careful. Season it the same way you would a thick steak, no less and no more. And use Sea salt or Kosher, not both and just add to your taste.

    We made the ahi tuna the exact same way you did! It was amazing! Next time we will put less pepper because it was a little too spicy. Amazing recipe though! Also I was wondering, did the tuna come out a little more pink than red for you? Since I really can't tell by the video.
