Chef, may I recommend a wonderful pepper mill? It's the Unicorn Magnum pepper mill. I use it at home, and it's the best! It requires much fewer cranks to get the same amount of pepper., and it's surprisingly easy to turn. Looks nice too!

Unfortunately, most (if not all?) of us western countries have really shitty eggs, so there is a significant risk of salmonella in recipes that require raw (or undercooked) egg.
Katie - That one in 10,000-100,000 chance is pretty dire. :-) Keep in mind it also matters how the cook treats the egg and how cheap they insist on purchasing them. Even then, most people who run across a bad egg just have, at worst, a mildly unpleasant bowel movement. It's still recommended, though, (even in many other countries) that small children, the elderly and others with possibly deficient immune systems avoid all raw foods.
It's more of a culture shock and lack of fresh eggs that can be eaten raw. I personally don't mind my eggs a wee raw so long as the whites are cooked to the point they don't make me think of boogers, blegh

Japan does not any issues with salmonella eggs. The chickens are raised differently and the quality of the eggs are excellent. We in the U.S. do have a salmonella danger. You will notice that the egg yolks in the U.S. are paler in color to those in Jpn.
A runny omelet is the best! During a visit to Japan I experienced many new ways to eat eggs and this is one of my favorites alongside tamagoyaki. I suppose one could say that I have a better appreciation for an egg and how much you can do with it!

I make this using a italen base cause with a japense twist. The family loved it, eve if I was the only one who ate it with the egg. A good tip for those who don't like the ketsup is to sprinkle some shreaded cheese of your choice over the egg before it completely settles cooking!
That looked really yummy! LOVE EGGS in any forms & shapes!! Especially when they are "hanjuku"! Omurice just brings back my childhood memory... Also love your doggy! She or he is so well behaved! The only thing I was not too crazy about was the sounds of voice & accent of the narrator... I think the voice of a female - native English speaker would match nicer for your video. I grew up drinking raw eggs in orange juice every morning before I did my run and I never once got sick from it! This is half cooked. My parents used to feed us as one of our first foods as a baby soft cooked eggs and butter and not one of us died! People need to calm down!

Well there ARE places in the world where consuming raw egg is indeed unsafe. The US is one of them.
I just hope that the people who whine about raw eggs are as diligent in hand washing and getting vaccinations as they are with the raw eggs.
