    Great thoughts and discussion from everyone. 30% of our calories can come from fats. We can pick and choose a variety of fats to fulfill our fat needs per day. Out of this we do have a a small allowance for Saturated fats such as ghee, coconut oils, meat, cheese etc which is recommended at ~7%- 10% of calorie intake. It does not have to be totally avoided. If you wish to include ghee or coconut oil in your foods, you can surely use it, its your choice, but just be aware of the portions.
    Also, oils are always a mix of mono, poly and saturated fats, the portion varies from oil to oil, so we cannot selectively avoid one type, so the big picture lies again in limiting the portions size each day, so we don't get excess of any one type.
    Finally, remember oils only make up one part of our fat intake, so we have to leave room for other sources of fat from curd, meat, milk, bakes goods, etc. Each ones calorie needs will differ from this based on height, age and current weight] Moderation and portion control will strike a balance.     Superb video sir. In old days, fried items were done only occasionally. Once at time of diwali etc. Our ancestors were intelligent and stayed healthy till thier lifetime. But now days, vadas in teashops, even at home we do fried items often. Hav to change🤷‍♀️

    She is wrong about Coconut oil. People in Kerala, India use coconut oil for food, body and hair. They are the healthiest folks in India ! Coconut oil contains short chain fatty acids as Valeric acid that are easily digested and healthier than unsaturated oils with long chain fatty acids and also has a higher smoke point than many other oils mentioned. Please keep up with current research and not old text books.

      How come she approves of Canola oil in the “good” list and pushes ghee into the “bad” list! Dr. Pal…please incorporate Ayurveda into your segments and make health more hollistic! Afterall we are Indians and should know the basics of our country’s century old science of Ayurveda.

      Extra virgin olive oil has higher smoke point!!! Ghee’s smoke point is even higher than oils!!! Please read your facts properly 🙏 dont spread wrong messages.

      Absolutely right ! Coconut oil is the best for cooking ( time tested since Millennium in south India ) . Olive oil never grew in India , just simply have what your ancestors had ! )
      Ghee is another perfect cooking ingredient. She is absolutely wrong about ghee . She is just propagating western narratives to boost sales of MNCs !

    You have to get non GMO organic oils and cold pressed and not bleached, deodorized or refined like most of the so called good oils you mentioned, you have a great way to go in your knowledge of the real stuff which is usually traditional

      These so called good oils are not good in fact for you. She definitely has to research the oils and reevaluate it. Coconut oil and butter are in fact good for you in the right amount.

    Sad to see polyunsaturated oils being promoted. They are the ones which will get oxidised easily and cause all the damage. 😟😟 And we need to distinguish between large fluffy LDL Cholesterol (which is really good for us) and the small dense LDL Cholesterol(which are bad for us)

      Hi Vinayagamoorthi, good catch with the types of LDL, I was not able to cover the large fluffy LDL and the smaller LDL cholesterol. That will take another 30 min video, hopefully in another video 😁 if there is a lot of demand on that topic.
      I mainly wanted to focus on the “amount of oil” first, because the amount of oil can turn a good oil in to a bad oil because of excess use. Time permitting will cove in depth later.

      @@srisakthiramanathanrdldn2339 Thank you Ma'am. I have been following Keto diet and one meal a day for the last 6 years. I take as much Butter, Ghee and coconut oil as I like. No limits. These good fats become damaging only when the carb intake is high. I am not even talking about bad fats.

      You are right...the PUFA's or in other words the omega'6's easily undergo oxidation even when exposed to light and heat. It's best to get the polyunsaturated fats from whole nuts and seeds in small quantities to get a good balance of omega 6's and 3's

    Dr. Pal, there has been lot of discussion on oils for a long time. But, as I understand, dieticians are encouraging any oil that isn't refined, and
    Ghee, butter, and coconut oil are being a green as long as they are based on your traditional practices and as long as they are home made.
    I see a different view point here
    Can you elaborate ?

      Hi Periaswami, thanks for watching. You can use a variety of oils for cooking , what ever the type of oil you choose to use , mainly pay attention to the total quantity/ amount of oil used daily for overall health.

    Thanks, Dr Pal. I struggle with my fasting window. A couple of months ago I was diagnosed with gallstones and sludge. Ick! Since then I have Totally changed what I eat and lost ten pounds. It's a good start and I will master the fasting window one of these days. These informative videos are extremely helpful. Your work is really appreciated.

    What a programme sir., very happy to see a programme where people thinking in tamil and expressing in american accent. This is what my professor always says.go in depth like american and come out with tamil. The lady doc looks very much from my next door and i definatly follow what she says as she know american system but since grewn up in tamil style hope she must be authority .great programme and keep it up sir., btw i always say to my gastro doctor,i eat poriyal and kootu and rarely I eat salad which is not our system.my tamil doctor who studied only veg salad in the books suddenly will change to tamil system like pal did.,hats of you doc.,

    Hello Dr. Pal! Very good Information! I don't fry foods, just my eggs. I dont really eat meat 99 % of the time. I've learned from you that an egg is protein! I'm eating more veggies sauteed in alittle of olive oil. It is delicious! I've realized I do fast for 10-12 hrs. I'm going to focus more. I realized that veggies are essential for your body.     Dr. Pal, I usually enjoy your videos, but this episode is spreading misinformation. Extra virgin olive oil has much better oxidative stability. Coconut oil has medium chain triglycerides which is absorbed differently. Dietary saturated fat does not increase LDL (this is old lipid theory). Also canola and other seed oils cause inflammation though they are unsaturated fats. The oils which are actually good to use in moderation are ghee, avocado oil, sesame oil (not idhayam) and coconut oil

    This dietitian has half knowledge , when everyone now says traditional fats like ghee butter coconut oil are good she says they are bad. Sunflower oil the worst.

      This is what happens when they are blinded by the so called latest research (manipulated by industries). Coconut oil is the most comparable to mother's milk. And guess what, mother's milk is the only nutrition on which all kids grow up on.
      They are just demonising things that don't fit their narrative. Coconut oil, ghee butter are all good. Its great if these doctors just stick to things that they understand. Nutrition is not one of them!
      Not to mention the crazily fake accent the dietician has. Westernisation is truly powerful!

    For people who have dairy and paneer daily as part of protein intake please talk about it in relation to fats per day as well. Like how much paneer per day

      Yes we only spoke about one type of fat , which is oils. Paneer, milk , cheese, yogurt etc also contain fat and that with make up the remaining part of the fat allowance. As for the amounts , will see if we can add that info later. Thanks

    My sincere appreciation to your medical advice. Generally I observed your advice goes for Non vegetarians on a broad spectrum..Its fine butsince I am a pure vegetarian (palakkad iyer) 65 years, needed some confirmations...
    My food is on a peacemeal type with intrvals and small portions..be it begining the day with Almond,Walnuts,Raisins,dates,figs soaked with a 150 ml hot milk on wakibg up before breakfast/lunch/tea with just 2 vitamarie biscuits dinner. with green salads..and a Fish oil cspsule to end the day with warm water post dinner. Wakeup
    @ 7soaked nuts/milk
    Walking / physio workouts.
    @8 breakfast & fruit say small banana/pears/apple/coffee 150 ml
    @11 a coffee 150ml
    @ 1 lunch rice sambhar non oily podithuval Curd rice (no pickles..Gerd precaution)
    4 pm Tea with some 3 biscuits or farsan (max 50 gms)
    Long evening walking
    6 pm Fruits any either/or Papaya.oranges,chickoo.grapes.
    7.30 Dinner A single Dosa with sambhar & curd rice with uruga ( just a speck taking care of Gerd)
    Fish liver oil one capsule at 8 pm..end...Kindly suggest if its fine as I am fine till now with no ailments at 65 by tye grace of God only had a SCIATICA surgery in 2019( micro disecktomy ) but perfect and fine working on my posture all the time.

    Hi Dr. Pal, you are truly a Pal. I’m learning so much from you you are exactly how a doctor should be. Thank God for you! Thanks for bringing along your friend and please convey my thanks to her. I had no idea how much oil li has been using. After watching this video l was able to reduce to 10 teaspoons per person. I tried with 5 teaspoons but my family was super unhappy. To discourage worse TV dinners and other processed food I gave in a bit and landed at 10 teaspoons. I know :( . I have long ways to go. Once you know you simply can’t pour oil into food you serve your dear and near ones . Can you please talk about salt next? How many teaspoons per person per day? Grateful to you doc!

    Thank you for this video clip. We use coconut oil, olive oil, sesame seed oil, butter and ghee in cooking.
    If we are cooking for 2 people how much oil should we use?
    Cooking oil for frying egg, how many spoons without egg sticking to the frying pan?
    It is good you are discussing this, we have to live a healthy life and eat food!! ?
    What is the benefit in mixing butter and oil for cooking?

      I am glad hat you are using a variety of oils through your your day. To answer your questions- when cooking for 2 people, for 1 dish you can use 2 tsp of oil. That way each of you will get 1 tsp oil from it. Now you will have many dishes in the day, so keep count to approximately use 5 tsp per day. If you exceed it on some days it’s totally fine.
      Egg fry can use any of the oils you mentioned above because it does not require a super high smoke point like chicken 65 or muruku. So the above oils temperature will hold up. Use just 1/2 - 1 tsp oil per omelette or bull-eye style egg fry.

    I grew up where coconut oil and sesame oil were used for cooking, the only two oil available in Sri Lanka.
    In UK, coconut oil is like butter in room temperature, I spread it on toast. good taste and good for health, how may tea spoon, I use a knife. Only in UK, since 1965 I came to know about different oils. Olive oil, I use it on rice and curry like ghee. As I am 75, I will continue to to use all these oils.

      Hi Mr Bala, I also grew up in a place with lot of coconut and sesame oil use as well - Nagercoil [it is by the southern coast of India]. You don't have to completely avoid coconut oil, whats important is to limit the overall quantity of oil. Portion is important.

    Ghee and coconut oil are not the same as palm oil.
    In fact, they have health properties, and they change my life.
    Better to get saturated fats from those sources, then from meat and processed foods.

      Yeah virgin is extracting oil from fresh coconut. So they get less during extraction.. so costly

      Yes, pick any oil that has a high smoke point above 425 F/218 C to prevent the oil from breaking down and creating free radicals. Also remember not to re-use fried oil for anything else. Therefore this will automatically limit the number of times you fry overall !

      You can skip using any oil but you need to have fat in your diet. It can come from dairy, nuts,avocado, seeds or non veg sources like fatty fish,eggs or meat.Otherwise fat soluble vitamins will not obsorbed.

      Cooking oil is only source of fat. All your foods (dairy products, chicken, fish, meat, some fruits/veggies) has fat in it. But, practically avoiding cooking oil may not be possible.

    Thank you Doctor, that was a very good session. But you didn't say anything about using refined as opposed to cold pressed oils. Are you saying it's ok to use the mono and poly saturated oils like mustard, olive and groundnut even if they are refined? I've read (research) that only coconut oil and ghee can withstand high temperatures while cooking, the rest are dangerous as they produce free radicals in the body?

    Thank you Dr Pal and SriSakthi for an informative session. I have a question, though refined oils withstand high smoking point, , they are all highly processed and for processing , chemicals are used which cause inflammatory issues. Cold pressed or expeller pressed oils do not have these chemicals and they are not processed . Since refined oils only can withstand high smoking point , (though chemicals are used for refining process) you still recommend these oils ( like canola oil, sunflower oil, safflower oil, Corn Oil...etc ) Due to their low smoking point you recommend to not to use Ghee, Butter, Coconut oil, Sesame oil, Extra Virgin Olive Oil , Avocado oil for frying right? But they can be used for things like Seasoning, salad dressing , right? Could u share your thoughts on this, @SriSakthi Ramanathan?
    I agree with amount of oils to get 50 g of fat from Oils if not we can compensate by taking the fats from different sources. Thank u!

      Vegetable oil is ok to use, it contains a mix of MUFAS and PUFAS. Main thing is to use less oil for your dishes.

      Well, I know it’s hard to believe right ?and don’t get me wrong coconut oil is not totally bad. The amount you use can make it good or bad…..I grew up in Nagercoil where coconut oil is used a lot and I love coconut oil. My origin is from Karaikudi, so we use coconut oil in a lot of dishes too. You don’t have to avoid it completely, you just have to limit the intake. Watch out the other sources of fats other than oils as well. That’s the take home message.
      I would like to add more info about coconut oil. But I have to get a little technical here and take you back to your biochem class from 10 th standard. Coconut oil gets a lot of push and hype because it has something called “ MCFA” which stands for “medium chain fatty acids”. Not all MCFAs are the same. Usually MCFAs that have 8 or 10 Carbons in its structure are burned off by the body easily without getting deposited in tissue. But in coconut oil 50% of its MCFA have 12 carbons. So it behaves less like the shorter MCFA and acts more like the other long chain fats. So it does not have the exact benefits of the easily digested medium chain fats. But since coconut oil has more saturated fat , it is best to limit the intake. You don’t have to stop it altogether 😊

    She is taking about Ancel Keys study on heart health which proven wrong and funded by vegetable oil companies in USA 1960, vegetable oil making companies making oils literally from waste products like soyabean oil, Rice bran oil and all in name of polyunsaturated fat. It incorrect to say coconut oil bad because of saturated fat, it's now proven that saturated fat is more stable than polyunsaturated fat aka vegetable oils. Polyunsaturated fat is highly oxidative and very sensitive to heat and light. Mostly of the oils we use in India is polyunsaturated. With extraction using heat and chemicals are already Rancid they are highly inflammatory in body.
    The only safer oils are wood press coconut oil, extra virgin olive oil and grass fed A2 cow ghee.

    These numbers were determined years ago based on extrapolated data and are currently being challenged by the latest scientific research and clinical trials . Most plant oils contain a dominant amount of what are called unsaturated fats and most of the latest studies now are showing that these are definitely not as harmful as saturated fats which are mostly derived from animal fats including dairy and red meat based products. Many of the findings show that simple carbs present in sugar, white flour, white rice and processed foods are more of a concern compared to plant based oils.

    Hello Dr and Friends - just to share with you my current change in diet .
    Last February 3rd , I stopped eating Chapathi and brown rice and I do 20 to 30 minutes of indoor biking everyday . I lost 8 pounds so far . I had 3 cheating day during this one month and I ate only 4 chapathi and two cup of Briyani on different days.
    My diet now :- Oat cereal, veggie soup ( in a slow cooker), veggie salad with nuts and chea , boiled white egg, egg white omelette , peanuts ( boiled and fried in air-fryer) , chicken and fish on weekend. Ofcourse koffee 😊
    This video helps me to understand more on my intake . Thank you both of you and keep doing it .👍💪

      Yes Sowmya, it is best to throw away the oil used for frying. I know its hard to do. So if you reduce the times you fry, then you wont feel as bad to throw away less oil.

    Very useful video sir, But still i have one doubt .. if coconut oil is unhealthy why it is consider as a superfood. Many nutritionist even doctors advice to eat coconut as a meal or snack. Pls explain sir. Because im using cold pressed coconut oil in my daily routine.

      Hi Jaya, yes it’s confusing for the public. I will try my best to explain to you. But I might have to get a little technical and take you back to your biochem class from 10 th standard😁. But only if you go into deep research article you will find this info. So in short, as of now authentic large population research does not support consuming a lot of saturated fats to be healthy, so limit your coconut oil intake to 1-2 tsp per day and rest should come from mono or poly unsaturated fats. You don’t have to stop coconut oil altogether, just set a small allowance for your self and stick to it. I grew up in Nagercoil, so I also enjoy coconut oil but in small quantities.

    Dr. Pal, I have a doubt..
    I am using heavy whipping cream instead of oil in all my daily cooking ( 1 tbsp = 50 cal),tadka, sambar, shallow fry, dosas, etc etc..
    But the cooking time is little more than oil cooking..
    I just wanted to is this a good option to use for daily cooking..

    Good message. I want to understand and learn whether the frozen food looses its nutritional value and if so, how quickly we need to finish the frozen foods. I freeze few homemade south indian gravy and curries for upto 3 weeks. Its tasted the same but I am concerned about its quality. I am a latest mon with 2 older kids. Being a working woman and cooking 3 meals every single day I can not avoid freezing some food to save time. Your reply will greatly help me.

      Yes, I love ghee roast too. So limit 1 ghee roast per fat. That way you are limiting the saturated fat from ghee. It’s all about portion and moderation.

    You made your sincere effort in weight loss by this video. I feel perseverance & patience is required in this weight loss effort on our part. Moreover what accumulated so far in stomach region has to be burnt before seeing results. But I am sure it will work as happened in my case

    Dr Pal and Dr Srisakthi, thank you souch for the details. I was surprised and disappointed to hear about the extra virgin olive oil as almost every celebrity chef cooks with EVOO. Now we know that is not a good option , I am going to avoid cooking with EVOO.
    Couple of questions - how about the vegetable oil? Is it safer to cook with?
    How about the olive oil spray or the non stick spray? Is it safe to cook with or I should avoid using those ?
