you obviously don't work in the industry. Brides and groom can be sloppy with how THEY cut their cake to eat but when you're serving you better make sure you're professional. Wedding cakes are expensive AF and a lot goes into making it. Cutting it precisely and cleanly is not only good for presentation but also makes sure that the right amount is given to all the guests. How a cake is cut and presented by the kitchen speaks volume on how these workers are trained.
This is how I learned to cut round cakes. However, I now cut them as if they were square cakes and to me it’s easier versus having to cut that circle. It’s also beneficial if you’re trying to cut smaller pieces.

I hate cutting the cake with onlookers. I wish I always had a place to wheel the cake into and just get it done. But you don't always have that convenience when catering! I find every baker has different methods of assembly, too. It's a little crazy when you first begin, and you've got an audience. I keep several knives in hot water nearby to avoid the crumb issue, with damp towel over my wrist. It's an art. LOL.

When you cut the circle in the smaller layers, you need to put the cake on a revolving cake stand so you can spin the cake, not the knife.... and get it nice and even.

Cake =$$$ No nothing is “thrown away.” It’s cut in slices similar in size and devoured just as quickly as the outer circle. There are other methods than the circle in a circle method. I favor Ron Ben Iisreal’s method.
You can't just hack a rough circle into a wedding cake or use serrated knifes crumbs everywhere!! Christ if I sliced cake like that when I worked in nurseries I would have felt embarrassed and they eat with their hands! Definitely gonna cut my brothers wedding cake myself after watching this!

You can't wipe your knife 300 times and wow if you have 10,000 guest wedding. You can only accomplish this, with the cake being real if you have a preheated box keeping knives warm and ready to cut. With as many knives as cake slices. It would take 2 hours or more to cut the cake as you vision. This just isn't possible at a wedding. I advise a fake cake made for looks. Then a cake pre cut for each guest.. You can have all time needed to wipe your knife & stick it in hot water then cut all the pieces for each guest. This is not possible any other way.. I really hope you are kidding & joking around. If not you would have guest leaving as people are still being served lol.. Really??? 300 guest not 25 You would need about 300 preheated knifes. I cringe when i watch this video! The way the cake is being cut with incorrect and blunt knives. Not to mention that the blade is not even wiped between cuts leaving the icing looking sloppy. The presentation of the individual plates to the guests would feel more like a 6 year old's birthday party rather than an elegant wedding. Sorry to say, but if I saw you cutting my expensive wedding cake like that and serving my guests morsels that look like it was picked up from the floor, I would immediatly flip my lid and demand a venue refund!

And as you can see, it’s for 300 people and they showed 3 people working on it already. If you had cake for 10,000 people, there would be a metric butt ton of people cutting the cake. And the point is not that wiping the knife would make perfect smooth slices, but it would make the cuts less sloppy and the end result would be better.
This is nice, BUT I'll be cutting and serving the entire cake at the cake table while everyone is watching me so I don't have the luxury of taking the cake to another room for disassembly. In the old days, we removed the top tier and set it aside for the mother of the bride to freeze, then served from all tiers on the back side of the cake first so the front would remain "pretty" while cutting and serving. Then we'd work our way around the top tier, then the lower tiers. We would serve the center of each lower tier as a last resort simply because they lack adequate frosting and are unattractive. Yeah, its cake, and tastes the same, but its still ugly, naked cake.
The groom's cake was horribly cut. It's not even, they should have used a small bowl to dent a line for cutting. Imagine some of the guest eating that cake, the first half is smaller than the latter half, someone would hold a grudge.

We don't care about the crumbs but they should wipe the knife between each cuts or it'll look sloppy. (Also that blunt butter knife is no tool for cutting cakes).
I've never once worked in a kitchen, but if I did I'd stand over them and ask them if they're feeding a bunch of blind rabbits. Very unprofessionally done. They should be cutting even slices and at least wiping the knives now and then, and maybe trying to make a neat circle instead of hacking into it with no concern for what it looks like. But what do I know?

Wedding cake slices are much smaller cuts. Each slice is $2.50-3.00 per slice to cut, and when you have hundreds of people to serve it adds up.
Where are you buying a wedding cake at $3.00 per slice. In 1982 I sold cake at near that price. But, sadly, no longer.
