    This method is brilliant!! Thank you for sharing!! The traditional way with the circles is so sloppy and you get small squatty pieces. These slices are so elegant and really display and give credit to the beautiful layers inside.

    Thank you for the tutorial. What is the typical cake cutting and serving fee? I know there is a charge but I can't find videos that discuss the matter. It's work to disassemble, cut slices, wash all the hardware and decorations, serve the cake and clean all the dishes that get used. Because all of that gets done behind a closed door in the kitchen area, no one really sees that it is indeed a performed service.

    Beautiful demonstration. PLEASE know and learn NEVER to use latex gloves! I have a severe latex allergy and eating cake served by someone wearing latex can and will send me to the emergency room! It is a more common allergy than you think! Please switch to latex free gloves when dealing with the public. They are the purple or blue gloves or use clear vinyl. Thanks!

      There are PLENTY Of latex-free gloves that are white. I use them all the time.

      @@sharonathanasiou2932 I am a nurse…I know latex gloves when I see them. Nitrile gloves are usually purple or blue…more importantly, I can tell from medical experience these …meaning latex, have too much stretchability to them. Yes, there are beige ones that are available, but the stretching and snapping doesn’t exist like these do.

      Fondant icings have a thin layer of buttercream put on before the fondant.

      Diana Martinez. It's exactly the same as the rest of the cake. It would be wrapped quite well and then frozen. It actually comes out beautiful.

      drill a small hole in the bottom of the board slightly smaller than the support. then when the support is inserted it is very tight and holds it still

    The camera man should have been closer to the cake and Ben-Israel should have been looking into camera. Camera person should have adjusted for this.

    I'm confused about the comment of how Satin Ice complements the cake & buttercream, no-one actually eats fondant that often do they? I tried & it was disgusting! Mainly for decoration right?

      Depends on the fondant like anything else. I make a marshmallow fondant and it is loved by all that eat it!

    I would like to note that if you have a friend make your cake, they are NOT required to cut and serve it, they made the cake their job is done. Oh and I like the way he cuts the cake but I hate outside piece too much carmelization

    I doubt that a cake that uses thin icing on a buttercream undercoat will keep for 1 year! You are far more likely to get food poisoning or have to spit out the first mouthful after it defrosts as you will find the butter has gone rancid and bacteria and mould will have generated toxins on the soggy inside! If you want a cake to last a whole year then you have to use fruitcake which is steeped in spirits eg brandy (as the alcohol in the soaked fruit and added to the warm cake after its baked act as a preservative) and you will have to use jam/syrup, marzipan and icing to ensure the cake has an air tight coat to stop air, bacteria and fungus/ mould spores getting into the cake to make it go off. Nothing to stop you from having sponge cakes to serve at the wedding but the top tier if you want to keep for the first anniversary must be fruitcake.

      Couples freeze their tightly wrapped top layer to thaw and eat on the anniversary.

      @@mskellycupcake Even if you 'tightly' wrap a sponge cake it will NOT keep for a YEAR. Go to your local supermarket and look at the freeze ratings on the frozen sponge cakes - at most they will be ok for 6 months...and these ones will be sealed in mass production factories where the environment is kept clean and sealed in air tight plastic, then a box and frozen immediately - not put on display for hours in a wedding reception under hot lights with numerous sweaty people dancing around to contaminate the cake with airborne bacteria.
      Alcohol in the cake is the essential ingredient that acts to stop bacteria feeding on the sugars and secreting toxins. That's why fruit cakes and christmas pudding are laced heavily and thoroughly with brandy, rum, whiskey and other high proof spirits. Of course if you don't believe me do go ahead and give your loved ones 1 year old defrosted sponge cake and see how much they will love you.

    This is beautiful but realistically caterers cannot cut a cake like that they would never be able to serve a 150 people like that.

      I have seen the cakes like this for large wedding crowds used for the bride and groom to take their traditional first bite to feed each other…all the while, the staff is in the back cutting a matching flavor sheet cake. It saves time with large crowds.

    I make wedding cakes and party cakes. PLEASE, PLEASE, PLEASE STOP using Latex gloves!!! I am highly allergic to latex to the point I need EMT’s to come give me epinephrine and O2...I always have to check what kind of gloves cooks are wearing. If I had eaten this cake, his latex gloves were on the top and bottom. I would be in big trouble!
    I love slicing and serving my multi layer, multi tiered cakes like this. Presentation is great and more slices per cake.
