Just a note: brown sugar is not less processed than white sugar -- brown sugar IS white sugar, to which molasses has been added. Raw sugar is less processed than white, but not as tasty as brown. This said, thank you for an interesting recipe.
Bubble tea are overrated, I don't know what's so fun about chewing jelly while drinking a tea. It neither adds to the taste nor is a nice feeling. The tea and the available flavors are nice

I was actually very surprised how easy it is. The bobas are good to stay in the fridge for a day or so only though.

What type of milk do you use?
Normal cow milk is used in traditional recipes. But I can’t see why you can’t use other milk or plant based alternatives.
