    We used to buy rolls on Wednesday's for 15 cents each loved them. We need to go back to that world and cook homemade food in schools.

      I a family consumer science teacher in Virginia, The system ( us gov) has the cafe. cut down to 4 employees at my school. They do not have the manpower to cook.

    Mt grandmother was a lunch lady in the 60's and 70's. She gave me a recipe very much like this when I got married. I don't get to make them very often but they always come out wonderfully.

      Light Dinner Rolls
      Ingredients
      2 pkgs yeast
      ½ Cup sugar
      1 tsp salt
      2 cups luke-warm water
      1 egg
      5 cups flour
      3 Tbsp melted shortening or butter

      Cooking Instructions:
      In a large bowl (glass works best), combine water, yeast, and sugar. Add melted shortening (or butter) and the rest of the ingredients, slowly.
      Let stand, covered with a light towel, until doubled
      Punch down and divide into dinner sized rolls (about 1 inch by 2 inch rolls)
      Let rise again
      Bake at 350*F for 15-20 minutes
      yields about 2 dozen rolls

    I made 3 dozen of your rolls on Christmas Eve for Christmas dinner. They were gobbled up and everyone had the joy of our delicious from scratch lunches of the 70’s and 80’s.

      We went to a very small Catholic school and didn’t have a cafeteria. We did have hamburger day on Thursday! I can still smell those burgers cooking around 10am. We had our change ready = .40 cents! Nothing compares to those Thursday burgers 🍔 Thanks to all the moms who volunteered their time to give us a special lunch all those years! I attended school there from 1959 to 1967. 💒

    I have fond memories of the smell of these rolls coming down the hall into our class room. Could hardly wait for lunch!! The smell is has never left me. Thankyou for feeding all us kids for all those years and a big Thankyou to all the Lucnh Ladies❤

      Miss Lori sure does soothe the soul. It’s her faith filled spirit. I also crochet and knit prayer projects for anyone I see needs cheering, or something warm.     Thank you so much for scaling down and posting this recipe! Everyone my age ('bout 40) fondly remembers "school rolls," served with a little pat of butter on a sliver of cardboard. Y'all lunch ladies were some of the nicest people in the world. To this day, the idea of feeding a lot of people well seems like one of the greatest expressions of love and caring. I'm going to try out this recipe this week. Thanks again and God bless!

    Yummy!!! Made these for my family this week and it brought me back to standing in the lunch room as a little kid helping the lunch ladies butter the rolls. We used to be able to help in the kitchen back then. Times have changed but the love those ladies put into our meals will forever be a part of me.       @@WhippoorwillHoller I came here to see if there were any recent comments or replies because I have a question. I am a broken down old fat man and not a baker, lol. But why not put the sugar in the yeast mixture and the salt in the flour? I had always heard that salt doesn't act well with the yeast but sugar feeds it. Just wondering, and wondering what would happen if you did switch them around. Thank you and I love all of your videos. You are a beautiful lady with a wonderful soul.

    I was a “school secretary” for about 22 years and it was a sad day when they came and ripped the kitchens out and started serving junk food in plastic trays because it was “healthier”. Truth is, school food is big business and a money maker for school districts in CA. Probably. The same everywhere. The lunch ladies were always loved by everyone☺️

      You can compare lunches today in this country with others and it's very sad. There are children today that have never had a home cooked meal.

      Oh, so true. Lunches have gottenbad here in Texas. My little nephew gets such junk. Fake meat burger patty on whole wheat bun, the soggiest and grossest "naked sweet potato fries" I've ever seen. And they are to choose a fruit...which is usually a few apple or orange slices OR they can choose a cheap fruit juice that's fill of high fructose corn syrup. Most choose that "juice". How is that a healthy meal? It's insane. You can go on the website and look at the lunch choices and none are much better. My sister packs his lunch. On top of being gross, they want almost $3/ day for that mess.

    Went to school in the 50's and 60's the food was cooked from scratch I too can remember hamburger day they were the best !! And the rolls sooo good our children needs that kind of food today they would eat it instead of throwing it away.. Thank you for the recipe 💕

    That's how my Mama made them. My Dad worked in the lunch kitchen. They made the most incredible bread, rolls and the hotdog buns were out of this world ! Thanks for bringing back such great memories!❣

    I spent the last 3 months of 3rd grade, and the last 5 months of 4th grade in Abilene, Texas. The lunch ladies there made fresh rolls and I have never forgotten how wonderful they were. I was a picky kid, so most school cafeterias were a nightmare for me, but that Abilene school made up for all the others! ( 1963 and 64, so you can see what an impassion they made.)

    Hi Lori, Oh my goodness!!! Yes, lunch lady rolls...brought me back to my school days!! What a wonderful job you had!! Children were fed so much better back then. Wonderful home cooked food. Yes, it’s very sad that things are not home cooked in school cafeterias anymore. 😢😢😢 oh well..who knows...maybe it will come back some day!!! 😀😀😀 Love how you share a bit of food history. And you are spot on. My mother’s family in Italy was doing things exactly as you said back at the turn of the 19th/20th century...bring their dough to a community oven!!     My great grandmother always had fried bread for us children to have between meals. And I carried that thur for my children and their friends. Every child thur their teens knew they had a place to go for food. I'm my life that has been one of the things I have done that has given me wonderful adults today. Who still has a place in their heart. It's a wonderful thing to know there's adults out there that will remember you until they are gone. I remember my lunch ladies from 1st grade, wonderful women and they made sure the children that was most in need received a little extra. Because until they returned the next day would be the only food they received. I was blessed to have a dad that provided for my sister and I. But, those ladies had children that had never forgotten them and I know that for sure.

    I loved working at the school cafeteria back in the day because the health department had strict rules If we had leftovers that were not used on the line we 6 girls could take them home. I had three growing boys it was such a dependable job and bless during those hard days as a single Mom sweet memories Thanks for the video.     Hi Lori, I’m 62 years old and when I was in junior high school I loved these lunch lady hot rolls they had a slit cut down the center of each roll with a good pat of butter tucked inside what an awesome memory those were the best rolls ever thank you and all the lunch ladies for all their love and hard work.😃

    I went to school in the 60s, and the homemade yeast rolls were, and to this day, my favorite thing! After lunch we could get ice cream for a nickel. If they had extra rolls, we could buy a roll for a nickle. I would always buy a roll with my ice cream money. When I went from elementary school to junior high, I was heart broken to find that the cafeteria did not make rolls. Thank you for this, I can’t wait to try this recipe.

    Oh my gosh, your grand-daughter is beautiful. Aren’t grandkids the best blessing from God? It is like an angelic gift and love that we feel about our grandchildren. I have two, a boy and a girl. I’m hoping for a third. Still waiting, Their dad says he wants to buy a bigger house first. I hope he gets to steppin soon.

    Love your teaching style. I have very limited baking experience, but I am able to follow your video instructions. Even though I learn slowly and have a learning disability, your videos are like the school teachers I had in high school who specialize in kids with learning challenges. One of my favorite teachers was Mrs. Williams. You are like her because she was very nice and has been a great teacher. Thank you for your inspiration.

    My sweet Mom in law was a lunch room lady, too. When I married her son, she let me go through all those lunchroom recipes. Oh, that meant so much to me. I love her so much. She and my Mom are in heaven watching over us now. Thank you for sharing this wonderful recipe and bringing back so many great memories. I really enjoy your show. I've learned so much from you and Danny. Maybe yall will do a show on how to garden without harsh chemicals. I'd love that!

    I've been making bread for 40 years and I have now made these twice. I will be my go to for making rolls. They turn out beautifully every time but I still haven't gotten the knack for making them the right size yet. Mine are coming out too large. I will get there!

    My girls go to a private school and all the food and rolls are handmade, all the food is absolutely delicious but the rolls are out of this world! Nothing but respect for them, they work so hard everyday to feed our babies

    Lunchroom ladies back in the 70s and 80s always made the best food! Sloppy joes, pizza, burgers, fries, tostadas. I can still taste the chocolate/peanut butter squares. I can still taste the rolls. I haven't had carrot raisin salad since. Memories

    You have brought back very pleasant memories of my childhood in the 60s and 70s. The rolls were always the best. Thank you. The first time I had cooked onion and hamburger with a beef or white gravy over mashed 'tators was at school. (It was not called SOS at school. laughing...) Eating at the school cafeteria was a joy and I adored all of the cooks. They were such nice people. Thank you again.

    Great recipe and technique. Made rolls tonight everyone loved them. Due to the 105 temps in Houston, I didn't want to fire up my oven. I put the rolls in a cast iron skillet and cooked them on the gas grill outside. Another skill learned!

    Oh, yes, I remember the hot rolls. We would get two, too. My mom's first job outside the family was in the lunch room when I was in the 5th grade. She was the roll cook. She brought the recipe home to us and started doing them for our family. Oh, man. I still have that recipe. I love baking bread, too. Rolls, loaves, cinnamon rolls, tortillas, biscuits. Nothing better than homemade bread.

      @@mDiago6200 This recipe is the old style. My mom was a lunch lady back in 1960. So no telling how long the lunch room used this same recipe. It was reduced from 20 Pounds of flour. School House Rolls: 2 cups scalded milk, cooled to baby bottle test. Add 2 pkgs yeast and let it proof. Melt 1 cup butter (1/2 for brushing, 1/2 for rolls). 4 1/2 cups flour, 2 tsp salt. Mix dry ingredients. Add the milky yeast and 1/2 cup butter. Stir till well mixed. Pour onto floured surface and knead just a few minutes. Add more flour as needed to make stiff dough. Pat out into your buttered pan and cut into the dough to the size rolls you want. (a 9 x 13 pan will give you 12 rolls). Cover with cloth and let rise 1 1/2 hours. Heat oven to 400* bake about 20 minutes. Brush remaining butter over the hot rolls. These are not as sweet as some. The only sugar comes from the milk. But you could add 1/3 cup of sugar or honey to the batter if you prefer. These are pretty simple and easy, only rising the one time and cutting them in the pan, but they will reward you with a time honored hot roll flavor.

    You might want to check the brushes on your KitchenAid mixer. My mom replaced hers and ran like new. She made cakes for a living and she gave her KitchenAid a real workout. Now I've got a question for the lunch lady, you know back in the day they used to serve a sloppy joes oh, and I have tried and tried to find a good recipe first sloppy joes like they made it school. If you have a good recipe, why don't you make some sloppy joes and show us how to do it. I just found your channel I've subscribed and I love it. Thanks for sharing

      Suggestion. I make it by browning ground beef and onions, drain, stir in mustard and ketchup. Heat through. Try it.

    In the 1960's in Kuwait we used to have school cafeteria that makes meal for students free of charge in house. The food was fresh, healthy & smells so good. Unfortunely after few years the government policy had changed to close those cafeterias which affect the some students who could not afford bringing one meal and snack every day. Thank you for bringing lovely memories for me. I am now 62 years old and I love making bread, cookies, caked and pies for my family. Love you lori. God bless you ♥️

    Lunch Lady Hot Rolls
    1 1/2 cup warm water
    1 pkg. active yeast (2 1/4 tsp.)
    1/3 cup sugar (*plus 1/2 tsp. sugar for yeast)
    2 tbsp. melted butter
    1 beaten egg
    1/2 tsp. salt
    1/8 cup milk
    5 cups all-purpose flour
    2 tbsp. shortening
    Proof yeast: Mix warm water, active yeast, and
    *extra 1/2 tsp. sugar, proof for 5 mins.

    My Kitchenaid mixer is probably over 35 years old and still going strong. They are good mixers. I love mine. I also bought a larger lift bowl one, but I like my tilt head better. I also have a large bread making ceramic bowl I’ve had for many, many years. I used to make homemade French bread in it. I love your videos. Beings back a lot of good memories. My Mother used to make wonderful yeast rolls. Thank you for your great videos. Making me hungry!

    Ms Lori.. I made these rolls and my family asks for them all the time. So I decided to get up early this morning and make enough to freeze for a month. That way I can pull out what I need when I need them. I enjoy baking when every one is still sleeping. It is so relaxing. Just wanted to thank you for sharing this recipe. Teaching me how to make bread. My husband does also. He said that I have been making a lot of different things that I haven't in the past. I told him I had been watching your channel.       I was a lunch lady. The cinnamon rolls are just the recipe for rolls ( dough) then you melt butter and brush it over the rolled out dough and mix sugar and cinnamon and sprinkle over the butter. (I like to sprinke raisins too)..roll, cut and bake😊 oh and when they are cooling mix powered sugar and milk and Vanilla to desired consistency and pour over buns..the pioneer woman also puts a couple tablespoons of brewed coffee on her sugar glaze for cinnamon buns, that gives it extra kick, yum!

    I have had my Kitchen Aid for 38 years...and just a few weeks ago, it went down. Started to miss speeds and not beat...I couldn't bear the thought of replacing this beloved mixer that was given to me by my Mom!! I went on UA-cam - found what seems to be the problem and how to fix it. I purchased a part from Amazon for about $11. I plan to fix it and hope to have many more years of use!! I will be subscribing to your site...just came across it - you look like me!...I just made peach butter, I am a fan of tamales, (my roots!!)....I still work - High School!!! (sadly our Cafeteria Staff is not allowed to make or serve anything this delicious anymore) ...it is kismet that I found your site...like a recent comment maker, I am now binge watching. Will let you know if my repair worked !

    Way back in the day, (late 1950's) in 5th and 6th grade I was a cafeteria helper, I loved it. Cooks actually cooked, and food was delicious. My Mom pinched rolls just like you.

    Hell I've been watching you for days now. And I had to let you know. How much kids love them rolls. We didn't know what we were going to have for lunch. But when you lovely ladies made them yeast rolls. Everyone could smell them down the halls. And it made everyone so happy. You were greatly appreciated even though I'm sure you didn't get all the recognition you deserved. Thank you for all your hard work.

    Enjoyed much. And yes, thank you to all the lunch ladies. My brother and I were fortunate to have school cafeteria lunches. We still reminisce over the hot rolls. I learned from my mother in law how to make hot rolls and the same pinch method. You are the only other person I’ve ever seen do it the way she taught me. It is hard on your hands with arthritis but doable when making small batches. Thank you

    I have been trying different roll recipes, attempting to find one that tastes like the store-bought rolls my sister loves. I made your recipe today and called my sister over to do a taste test. These rolls turned out incredible. The taste and texture are spot on. We all loved them. I believe my search for the perfect roll is over. I loved hand kneading the dough and I'll pat myself on the back for doing an awesome job of pinching those rolls out, thanks to your instructions. Miss Lori, you're the best!

    I spent years hunting in antique stores for a good mixing bowl like that it's a little taller but I love it. I think of all the times it was used before I got to mix and prepare meals 💕

    Yup.lunch lady rolls. I made them for years for kids at school. Was so sad to have the menus change and lunch was not the the same. Sweet of you to share.

    One of my favorite memories from school was the rolls. My mama didn't make bread, but she made cornbread and biscuits, so the rolls at school were a treat for us.

    School lunch rolls are the best! Can’t wait to try, I also had the best red velvet cake I’ve ever eaten in a school cafeteria. It was in a sheet pan and I have never had a cake that was that “velvety “...I could eat about five of those rolls and a piece of that cake right now! Yum you’ve made me so hungry!

      Try adding 1/8 cup more of your butter, oil it will be very soft & moist!

    Hello Lori, I love to watch you, you bring back so much memories. I too am a lunch lady I worked in a school cafeteria in child nutrition for 23 yrs. with my sick days I had 25 years in when I retired in 2016. I hated to retire but because of some health issues I did. I loved my job. My school was from pre-k to 8th grade we feed over 1000 kids for lunch and for breakfast 300 to 400 kids. In the early 20's they moved 6,7,8 grades to the middle school. I was the baker, I fixed all from scratch the rolls, biscuits, cinnamon rolls, Moravian sugar cake, pizza crust. It was hard work, but I loved it. When I first started working the deliver guys would put up our groceries, and about 15 yrs before I retired we had to start putting up our own groceries. That was hard cause some of the boxes was 60 to 80 pounds. I have lost my school yeast roll recipe, an I would love if you would share yours with me. I think the one we had would make 150 to 200 rolls.Not sure now I have forgotten. I love to watch and love love your house and kitchen will continue to watch. Thanks Donna Taylor

    That's the way my grandmother always made her rolls by pinching the dough also. Thanks for sharing and reminding me of grandmother's pinching. Her rolls were the best.

    Yes! I am 61yrs old and still remember the good lunches we had at school! Fresh dinner rolls and fresh big fluffy tasty cinnamon rolls. The best beans and cornbread on Thursdays. Fabulous turkey and dressing and all of those kind of meals. Fresh cobbler too! Those were the good ole days. Thank you. That was probably before your time though! I know that you were the perfect lunch lady. Thank you again.

    Thank you dear Lori! Hard to believe my children who are in their 40's never experienced the love of our homemade delicious, "Lunchroom Ladies' " meals at school! In 1972 when we moved to East Wenatchee, WA from Spokane, WA they did not even have a "Hot Lunch" Program and all the kitchens sat unused. Every one had to brown bag it the rest of my school years. My favorite when young was, Pigs In A Blanket Day with the yummy homemade dough!

    I have that exact same bread bowl. I live in Kentucky and we used to go to Tennessee often, that's where I found my bowl. Down a little country back road, a little old man with a long white beard and bib ovetalls sold it to me right on his front porch. I love it so much, it's my favorite. I've had it for about 40 years now and hope I have it 40 more. It's old like me but it's still beautiful.

    Hi there, I'm 64 and when I was in 4th and 5th grade and on up, we helped served lunch in the lunchroom, we either had two rolls or a square of cornbread, I remember having navy beans and rice a lot. This was Gulfport, MS. I love your channel, thank you so much.

    Question please, when you start your mixer, do your rely on the mixer to pull in the dough that's needed. Mine formed a dough ball put did not incorporate all the flour. I did pull it in but my dough had parts that were stiff and some tender when I was pinching. Mine are baking now.will edit later and let you know how they made it. OH MY GOSH......they are wonderful.....I have tried and tried this is the first time they have turned out and tasted like I wanted., which is great. Thank you so much and love from Pea Ridge in lower Alabama. I wish you were here to eat one.

    As a kid, I got to meet the Lunch Ladies and the Custodians. My favorite Lunch Lady was Mrs. Eli. Always so kind and always willing to lend an ear and give advice when I needed it.

    Thank you for this recipe! It is just like I remember from school! I've tried several recipes online and some came close but yours is "spot on"! I loved Thanksgiving and Christmas, they would serve rolls with our holiday meal! they were also great with spaghetti too!

    I grew up in the 50s and 60s. We had the most wonderful lunch ladies. I loved the hot rolls and cinnamon rolls, but the thing I loved the most was their raisin bars. I would really enjoy finding that recipe. Thanks for sharing.

      My mon was a cook at a motel restaurant and she made Icebox rolls.They made large batches to last several days in the fridge.
      She would make them at home for us.sometimes for a snack she would Make us cinnamon rolls.

    Oh. My. Lanta!!! I LOVED Wednesday’s for cinnamon rolls!! Do you remember when I was teaching and I’d come to the cafeteria on cinnamon roll morning and y’all would give me TWO big ol cinnamon rolls??? Mmmmm mmmmm I can still taste them!! My babies loved them too lol!! I loved the hot rolls too! Things just ain’t what they used to be!😏
