Its better to add the cocoa powder to the saucepan with just enough milk to create a paste. Then whisk in the rest of the milk, turn on the burner and procede. Cocoa powder is hydrophobic, that’s why it clumps in liquid and is difficult to incorporate, even with a whisk. Creating a paste and thinning that with the rest of your liquid overcomes that property. Cinnamon is also hydrophobic and should be added with the cocoa powder if using.

Mmmm, this brings back fond memories: when we arrived in France in '92, there was a little bar in Langeais, run by two sisters who had grown up working there with their father. It was like going back in a time capsule, sitting in this dark-paneled room watching the two white-haired, aproned mamies serve their clients. In a copper pan, they melted baker's chocolate in the milk individually for each cup, the best I've ever had in a café. A few years later they retired, and it's now part of a superette. * sigh *
I'll have to have a cup when it gets cold, with my 70% Ecuador chocolate from Lidl. Thanks, and happy, safe holidays to you.

    Recipe for one:
    1 ounce chocolate
    1 cup milk
Little less than 1 tbsp cocoa powder
    Spoonful of sugar
    Vanilla extract
Directions: Whisk the cocoa powder with the milk, and add the sugar. When the milk is on a low simmer, add the chocolate. Whisk until the chocolate is melted, for around 5 minutes. Serve.

Tip: In a small bowl, mix half a tbsp of corn starch or corn flour and a dash of milk. When mixed, add it into the hot chocolate, it makes it thicker 😋

I had a hankering for hot chocolate (not cocoa, lol) and I have a tried and true hot chocolate recipe but came to the internet for something new. Out of all the ones I scoured I knew I just had to try yours when I came across it. I just made it and it was just what I needed. Not much different from my own except the maple syrup and that really gave me the fall vibes I was going for even three years later. TFS! It was fantastic!
