First off- Awesome channel ...
My wife ordered some Boon sauce after watching this show and it triumphantly arrived today. This delicious elixir was made by a wizard disguised as a pastry chef - no lie.
We had it with some pizza and just couldn't wait to sing its praises- so so good. I'm thinking some baby bok Choy and noodles is next up; Maybe even tonight because we can't wait to have it again. 18 dollars is a steal for this heavenly chili oil. Hope this is helpful for any similar cult members out there..! YUMMY times from Massachusetts .

Honestly $60 isnt bad considering it looks like there's at least a truffle in there.
The taste of truffle usually disappears within 72 hours of being picked so the truffle smell is actually artificial, it might have at one point contained truffle but as soon as you open the bottle it's gone.

@@gregoriobenni9961 there's very little Truffle cultivation in the USA, but the olive oil in this video is on the high end. Cheap olive oil is everywhere in the USA
@@pjuster2 I mean, you don't really cultivate truffle, you can plant particular trees and hope it grows but I don't really know if that would be the proper name, I usually buy extra virgin olive oil for 5 € in the shop, maybe that's not the fanciest thing in the world but I don't think any Italian would pay more than 10 € for olive oil, we are kinda spoiled when it comes to food
Oil fact:
You can't use any oil to cook any cuisine. Olive oil can't take the heat needed to cook East Asian cuisin, which uses high flame to cook.
Also, if you want to cook with Mustard seed oil you need to heat it in a high flame to dilute it, as it is very dense liquid.
have u heard of extra virgin Greek olive oil my dear? it has the best tolerance for heat from all the oils in the world...
@@peosforos13 actually, avocado oil has the highest smoke point, which is 520°F.
And extra virgin olive oil has lower smoke point than light olive oil(in colour not in calories). So if you want cook something in medium-high heat, it's better to use light olive oil than extra virgin olive oil. You can use it to stir fry or bake in the oven.
But if you wish to deep fry anything it's better to use avocado, canola or sunflower oil.

Adam is exactly correct! Vegetable oils, especially highly processed ones like CANOLA oil are absolutely terrible for humans. The nutritional value is decimated and the Omega6 to Omega3 ratio is horrendous.
The vegetable oil industry's marketing and manipulation of public health opinion/policy are responsible for the "common knowledge" idea that animal fats are unhealthy and vegetable oils are healthy.

Don’t know about u guys but the best olive oils I have tried was from Spain, Tunisia, Middle East and unfiltered oil from Italy. Italian olive oil is not the only oil on earth. U want to look for pure stay away from mixed oils sometimes u will see expensive oils but they are a mix from Spain, Greece, Italy those are a no no. Look for thick oil with a green tint.
Man, the ancient Greeks started making olive oil back in 4000 BC (!) and by the late minoan period (2000 BC) ,its was essential for every ancient greek family and trees were being cultivated all over Greece but especially in Crete.From there, other nations found out that a delicious oil could be made from olives,and because the countries by the Mediterranean were FULL of olive trees , olive oil production started in countries like Italy,spain and not so much in south france. Also ,not only the Greeks were basically the founders of olive oil, but it has been proven that the Greek soil is better for olive trees and that Greek olive oil not only is the tastiest and but also the purest. That’s why I think it’s a pity that Greece wasn’t even mentioned in this episode.
Greece, north africa, the levant, they used olive oil not just for food but also for light.
In islam the olive tree is called "the blessed tree" as every single part of it can be used

I think expiration means it's unsafe to eat versus rancid means it just starts to taste bad...not really sure if that's what she meant though
the words are sorta interchangeable but i think she's mostly correct, when things are past their expire date they become unsafe for consumption, but rancid on the other hand means olive oil will turn sour and while you can cook with it, it will taste horrible and probably smell horrible too.
the flavour goes off its original taste profile, not necessarily to worse
I think it oxidises but there's nothing else happening (like bacteria or fungi growth which would start breaking down the product)

Just received my batch #19 bottle of Boon sauce! Watching this again and seeing the care they put into each batch and the amazing flavor I experienced! Dang I'm hooked its incredible! I just added it to my queso for my chips and queso snack and it was fire!!! Feels like a great oil for scrambled eggs too! Get it now its totally worth the $18!!!
It was nice seeing an episode where anyone anywhere could actually potentially buy one of the products.
I think a fun episode to do is grilled cheese sandwiches! There's a lot of different variations like croque monsieur and can add a lot of different veggies and meats to it. :)

Coming from an olive oil sommelier (yup there’s such a thing!) I’m so happy to see EVOO featured! Extra Virgin Olive Oil is so underrated. Amazing to see you guys tasting it properly as well!
I have a possibly strange question, but my old boss (I worked in a restaurant) told me EVOO becomes a carcinogen (idk if that's the spelling) when heated to hot. So it surprised me that the people from EXEAU put the oil in a hot pan, I'm wondering if I'm wrong now and you seem like the person who knows if I am! :)
@@gertjan3329 such a great question! all oils have a temperature where the oil starts 'smoking', thus called a smoke point. You def want to avoid cooking beyond the smoke point. Smoke points vary, for example, Safflower oil has a high smoke point of around 500F|256C, and EVOO is around 375F|190C. That's why it makes sense to deep fry food in certain oils and not others. The biggest misconception is not cooking with EVOO, as a pan on medium heat probably reads around 330F|165C, which is lower than EVOO's smoke point. It's totally safe to use EVOO to cook with. The beauty of EVOO is in its distinct taste though, a high quality EVOO can really elevate a dish, so I personally reserve EVOOs for the finishing touch, on pizza, pasta, salads, and to drizzle on desserts. Hope that helps!

I love the attention to detail that this show has, down to putting the guys laptops in the right places so it looks like they are looking at each other on the spilt screen shot. They’ve really made thus show work in a lock down world.
Best thing to do with olive oil. Put some olive oil in a pan, put sliced italian bread loaf in the pan to fry and top with salt and pepper. Dont let it burn, turn when light brown. Enjoy this how it is or add fresh cold cut to it

Farmers in Greece sell extra virgin olive oil for like 2,5-3€ per liter, these "Italian oils" price markups are unbelievable (btw most oils with Italian label are actually imported from other countries like Greece, Tunisia etc)

Watching the olive harvest was beautiful and bittersweet, my best friends family lost all their olive trees to a wild fire just two weeks before the harvest this year. Decades of cultivation, gone.
It was very nice to see the full process, from tree to bottle, you could really see the passion they put into it.
My Boon sauce arrived a little bit ago and I'm impressed! The first thing I ate it with was Popeye's chicken sandwich and DAMN that elevated it to the next level. I mixed a bit with packaged tuna and brown rice for dinner (it's just one of those days) and that made my seemingly boring meal into a different monster. I'm gonna have it with noodles sometime. I may even just carry the jar around, lol

I'd like to see some worth it episodes for different cuisines. Like trying Mexican or Korean or Pakistani food at three different price points.
You mean some more, they have done Korean food and different Mexican-related foods.
Adam is correct. The change from cooking with fat (perfectly healthy) to 'seed' oils like canola, grapeseed, safflower, peanut and sunflower oil was economical and political. Seed oils are the worst thing to cook with. It causes serious inflammation and oxidizes at lower temperatures. Extra virgin olive oil, avocado oil and coconut oil are the best oils to cook with but go with good grass-fed butter instead.
Literally the next worth it episode: $1 water vs $100 water

Yes, it's called 'tempering' the oil when they hot infuse flavors from spices into ghee, which is later added to the food.
Steven is really showing off his chemical engineering knowledge here. Things dry because water evaporates from it. Oil paints don't dry because there's no-to-little water inside the paint. Their components react with oxygen via oxidation-reduction reactions. Nice job, Steven. ^.^
Personally, the initial sauce with chili seasoning is the best recommendation to combine with a slice of cucumber, which is really perfect and my favourite combo for a light appetizer.

Hi I am an egg tempera painter, here to discuss the egg paint! Yes egg dries, very very quickly in fact. If you use a paint made of just egg and pigment you have to move superfast. If you do an egg oil emulsion like discussed in the oil fact, it slows it down considerably and makes it act more like (what we think of as) regular oil paint. The egg in either recipe will oxidize over the first six months and develop a different patina than it began with, and becomes very durable. Think about your egg yolks on a plate if you forgot to rinse it right away.
Oh man I bought some local olive oil at a farmers market in croatia and the taste between that one and the one we usually get at home was worlds apart. It was incredible.
