  • Today we're making the most delicious and easy Tuscan white bean soup. It's loaded with roasted garlic and rosemary flavor and is simmered until creamy. I hope you enjoy this easy soup recipe!

    INGREDIENTS WITH GRAM AMOUNTS
    ¼ (54 grams) cup extra virgin olive oil
    4 (112 grams) ounces pancetta - diced
    1 large onion - diced
    4 ribs celery - diced
    3 medium carrots - diced
    ¼ teaspoon crushed red pepper flakes
    1 pound (454 grams) dried cannellini beans soaked overnight, or 3 16-ounce cans
    6 cups (1440 grams) low sodium chicken stock plus more for thinning
    1 head garlic roasted
    3 sprigs rosemary
    1 small Parmigiano Reggiano rind (optional)
    1 large bay leaf
    salt and pepper to taste

    You can leave the beans whole or lightly mash them with a wooden spoon. Or you can blend it smoothly. Like I always say, make it your own! The thumbnail has a thyme sprig but I did use rosemary for the recipe. Just ran out of rosemary when I shot the photos. The written recipe is always linked in the description (it's the little "arrow" on mobile and a "show more" on desktop).       I can't stop watching your channel. It's how I decide what I want to eat for the day!
      I LOVE making white bean soups, but I cannot find dried cannellini beans anywhere and they're so expensive online. Is there something special about the taste of cannellini vs. other big white beans? Why doesn't your daughter ever taste test?

    I was rolling on the floor laughing when your son said the soup is okay it's good but it's not the best soup you ever made but all through the end of the video he can't put the spoon down he can't stop eating it that was so funny to me so that tells me the soup was a 10 LOL

      There's nothing unreasonable about that. Try a Portuguese white bean and kale soup. Toss some Linguica in (or Chorizo if you can't get Linguica) for extra flavor. Phenomenal soup for the cold winter days.

    I made this last night. My value to the household has gone up considerably. A really tasy recipe. I used two heads of garlic and was able to get a fresh garden sprig of rosemary. A freshly baked Italian loaf and this soup on our first chilly night of the fall. Perfect!

    Delicious idea.. it's pretty cool here in Florida I already made a 5 gallon pot of chili to take to the aid workers and the homeless in the aftermath of the hurricane. Now I'm going to make an additional 5 gallons of your delicious bean soup.

    Definitely a winner in my book. And this is another example of a tasty meal that doesn't cost an arm and a leg, something we're all concerned about these days. And don't forget to roast extra garlic to spread on some nice crusty bread to go with the soup!

    A really good substitute for pancetta (if you're a vegetarian) is roasted cauliflower. First cut out the stem in the middle and cut it into quarters. Drizzle the core and top of the floret with good olive oil and dust with a mix of coriander, granulated garlic, onion powder, salt, pepper and bay leaf. Roast in the oven, uncovered with the garlic clove at the same temp until the top is a dark golden brown, and then chop into cubes. Also you can do the same thing with your vegetables and then boil to make a great vegetable stock.

    I made this with pinto beans, canned minced garlic, Italian sausage, and dried rosemary. It still came out amazing. I'm on my second bowl.

    I always appreciate you adding suggestions for customizing your recipes. I’m by no means a professional chef, just trying to cook something nice for my family. You always mention substitutions for higher-end ingredients, or as in this video mashing the beans for those of us without immersion blenders…I really appreciate that!     Hi Jim, I have to tell you about this recipe. I made it yesterday using the same ingredients you used all the way down to the fresh herbs and roasting the garlic. This is the BEST soup I have ever made and it's thanks to you. Outstanding flavor and what a difference fresh herbs make. I wasn't really sold on the difference, always preferring dried. But tasting this soup, I was totally blown away. Great job, and thank you so much for sharing. I know you encourage us to make it the way we like it, but when making something for the first time I like to follow the recipe closely, then change up anything the next time I make it. This one will remain unchanged!!! Its perfect. 😊

      I made this soup today with a slight variation and it’s absolutely delicious. I followed the directions for the most part, but since I wanted a thicker soup, I added a little pastina, and for added brightness also added spinach at the end. I wish we could post photos here, because it’s truly scrumptious.

    I am British in the UK, I made this soup three days ago OMG I loved it !! My Son visited today and I send him home with a large portion of it as he loves fresh tasty food, I will definitely make again !! I had to use smoked bacon though as I couldn't get any pancetta but it was still yummy. Thanks 👯👯👯

    Hi James, I am so glad you have the slider to make this for one or two people on the website. I am single, and don't want to eat bean soup for 5 days in a row. I don't mind it for three dinners in a row and one lunch, but then it starts to get a little off. Using the slider helps me halve the ingredients to make it more manageable. I really appreciate that. I love bean soup, any soup almost, so I am printing off the recipe for my binder and am going to make it next on the list. While I have been cooking for over 55 years I am grateful for new takes on soup and other chicken dishes, which you make so wonderfully. I LOVE your spaghetti with sherry sauce. YUM!!     I've enjoyed this many times in Tuscany. From Pisa, Viareggio, Florence etc they have slight differences, some add sausage etc but they all taste super yummy. This has made me realise I am overdue for a trip to Italy. Love it.

    I can almost smell it! It looks so good and once I get some cannelloni beans, it goes on the menu for the week. Perfectly timed for the weather we're having in my corner of nowhere, too. My son makes a fabulous peasant loaf that will go great with it.

    I made this yesterday and today we ate some and all I can say is OMG!!! This is so good. I added extra garlic because we love it and when you roast it it tames down the harshness of garlic (Not that I mind) because my husband (even though he is Italian) likes less garlic and I too am Italian and love it without restriction. Try this and it will be in your rotation of yummy soups. This is a keeper and I am sharing this and pinning it

    From the chopping, showing and explaining ingredients and size of pit...you are very precise and I love it! I appreciate the 2 small bay leaves to 1 large also because no one else gets into detail that way and I always am thinking that as I add bay leaves to a recipe. Thanks for this!

    I make them exactly the same way. I chop the stems and put in the stuffing. I cook on top of the stove in a big covered pot.

    This is awesome! I would've given anything, while raising my three boys, to have them love something that I cooked, as much as your son loved this soup. He said that it wasn't quite as good as your Italian Wedding Soup, but he sure kept eating it! Lovely family!!

    Yum! I love to add Italian kale or chard to bean soup. I made bean stew two nights ago and used organic cannellini beans. They were awesome and it was quick, super easy. I had some jalapeno smoked Texas kielbasa that I diced as my meat. I have started grating onion and fresh tomato to make a quick, light sauce. Again fast, easy, lighter than a Sunday sauce.
