I just made this. I had to omit the celery and substituted pesto for the herbs. Super smooth and satisfying on this cold winter day! This is my new favourite soup.

Great video, but I like some beans in my soup to tell that it's bean soup. Puree some but not all of them.

What is the point of waiting to add the last cup of chicken broth?. You've already created the friction with the broth to make it smooth. Just curious
Probably to adjust texture: you can always add more, but can't take away.
I would think reserving some of the broth would be to thin it out if it gets too thick. Initially adding it is to combine the ingredients. He says afterward you could add more if it gets too thick in the cooking process. Similar to making pasta sauces loosen up and combine by adding starchy pasta water

I like the soup, but i don't like the capers quite that crunchy, 2-3 minutes nuked is enough for me, & you are right as canneloni beans are best, i'll even use chick peas/garbanzo beans, nice job chef.
“Don’t worry about a perfect dice”. No problem there! I couldn’t get a perfect dice if I tried. 😂. My family is used to rustic dishes. I tell them that is how the best food tastes. But cool recipes. I like puréed soups and a bean soup sounds great. I like the caper trick in the microwave. One question, where is the bacon?
no bacon here, but that would be a great addition! you can even just microwave the bacon while the soup is bubbling away
@@gitsini agreed with the bacon. I might try rendering some bacon and then use the fat to cook the aromatics to add smokiness. Can’t wait to try this recipe. Bean soup sounds awesome!!

5 min in a microwave is idiotic. I just tried it and 45 sec in the capers exploded and now I have a giant mess.
I was just thinking why microwave them, can’t you just do it on the stove and make less of a mess?..... you confirmed that.
What a pain! Patting the capers dry really well is key.
