Hi Kevin. Boy oh boy, you and I send ourselves flowers and splurge on the best olive oil for our B-Days! Its ALL good :-) That soup is perfect for this frigid New England weather. My Fox must enjoy coming home to a set table and a comforting meal. My career was corporate and most days I didn't take the time to eat. To come home to a wonderful meal at the end of the day, doesn't get any better than that! ~ Diane
I cannot believe I missed this video or at least giving you a thumbs up. Making this exact soup today but adding 1 lb of spicy Italian sausage cooking until the sausage is brown, then sweated the mirepoix and also keeping the bean liquid. Will serve with toasted cheese topped foccacia and Chardonnay. Can’t wait to see your next video. Hugs from the Pyllips Levine home!
I didn't know you could freeze celery. I always end up with more than I need and it goes bad. I will now dice it and freeze it. Thank you for enlightening me!
I looked up your web site on my cell phone, and was able to order your first cookbook. You are AMAZINGLY AWESOMELY blessed with many wonderful talents ❤️
I eat a mug of veggie type clear soup nearly every day during WI winters. Thank you for this wonderful soup recipe....with beans, nutritious & economical.
Hi Kevin I made this with veg stock and my home grown beans. Deelish. We had a heavy snow fall last night in Scotland . So lovely soup, warming and comforting. Love the channel. Many thanks. 😊🍜
What a wonderful comfort food for a cold day!👨🍳😋💕🥂 Thank you Kevin for another great easy doable recipe for all of us out here who need great ideas for a Hearty meal on a winters day. Looks delicious!
Hi, Kevin - In Italian the onion/carrot/celery trio is "sofrito." Love your videos ... great recipes beautifully demonstrated and explained ... love listening to you!
Kevin, what a wonderful soup!!! I believe I would make this soup on a very cold day for myself!!! Unforunatly I do not have a Mr. Fox to fix this delicious soup for!!! Thank you for sharing this fantastic recipe with us!!!!
Oh no, another simply delicious recipe, I am starving but its midnight, so I will have to wait till tomorrow, thankyou so much, just live all your videos, you are so talented xx
All your recipes are the best! A bowl of this nutritious and comforting soup, sounds just the thing for these brutally cold days. Making it tonight! Thanks! Love all your videos 💕
This looks absolutely amazing! And so simple to make. I need to buy a few items but I am definitely making this. I am so happy to have discovered your channel. You might just turn me back into a woman who cooks!
I'm compelled to keep adding more comments! I note that you like to freeze chopped onion, celery, etc. I am keen on freezing cooked rice and pulses, obviously the pulses are soaked and simmered until just soft but not shedding their skins. I have frozen cannelini, haricot, black-dyed beans, lentils and chick peas. I have a handy plastic rice cooker which will steam it in the microwave. I then bag them up in assorted size bags.
Tuscan Minestrone and Ribolitta are favorites of mine, but I don't get around to making them often as they take a tad more time and ingredients than this soup. This soup also looks lighter, minus the pancetta and cabbage, etc, but still delicious. I'm excited to try it, as it looks delicious and quicker to make. Bella!
Thanks for sharing this recipe, Kevin! I make something similar...the greens add a wonderful texture and flavor. I like to put a small amount of cooked rice in the bottom of each bowl and ladle the soup over it. It makes a complete protein. I use Better Than Bouillon veggie flavor for my stock but they make all flavors.
Apparently in the Blue Zone diet beans are one of the best foods you can eat for your health. I grow my own beans so looking forward to trying this soup. Love your channel. Many thanks Kevin great recipes 🍲
kevin where did you get that lovely blue pot and what brand is it --i have a purple lodge that i just love!! great soup and i make a different version of it --i usually just "wing" it!! love your channel as always!!!:)
@Kevin Lee Jacobs I LOVE le cruset.pots, but at 83, they are too heavy for me when empty, and sadly, impossible for me when full...had to give them away....
Lovely soup, closely related to minestrone. Because, Kevin, you seem like quirky snippets of information, do you know the origin of the word posh? Well, it is an acronym of "port out, starboard home" which was coined by British workers and soldiers, of all ranks, but particularly the administrators, employed by the British Raj in India. The port and starboard refer to the best side of the ship to have your cabin on voyages to and from India.

So "posh" is an acronym. Fascinating!
Mirequa in Italian is called “sofritto,
Mirepoix is onions, celery and carrots. Spanish sofritos primarily consist of garlic, bell peppers, onions, and tomatoes, cooked slowly in olive oil.
They call : Soffritto.
