A few years ago we were invited to an Italian wedding and they served a soup very similar to this. If I'm not mistaken, they'd used chicken instead of turkey. I only found out by listening to people commenting. However, it was really delicious and hearty as I'm sure your soup is too. Cheers.

Because wedding soup is a wrong translation of the Italian word "maritata" that means marriage, the perfect marriage of vegetables and meat, Americans prepare this soup with meatballs, Italians with real meat, sausages, pork ribs, pork skin, beef, chicken and it's not served during a wedding, it's a peasant recipe.
I love making Italian Wedding Soup every winter season. Ever since I heard of it, I always use acini de pepe. I make my meatballs with ground chicken with milk for moisture. Smaller size meatballs do take longer to form, but they are better suited for soup than larger meatballs. Keeping your hands wet sounds like a good way to avoid having meatballs stick to them. With sodium-free Herb-Ox chicken granules, spinach, and Parmesan cheese, it is my favorite soup. Your video will make it even better so thanks for downloading it.

My best friend lives in chicago, so iv'e visited there for over 25 yrs,,,she cant boil an egg! at 3 of her homes, she's been unable to tell me how to turn her oven on ...luckily, everyone else in her family are really good cooks..i was very pleased to be asked to cook this soup for a post wedding day hangover dinner the day after her nieice's wedding...for about 25 of us!..we all just needed bread & soup! ..very similar to yours, except her niece told me to wet the meatball mix with grated apple..she makes turkey burgers with grated apple too..my frieind has a couple of grandchildren now, same age as your kids, who are really interested in cooking & ive pointed then to your videos!
Sir, I believe this is the first recipe I’ve ever encountered where I’m going to follow it to a tee. I’m a pretty good cook so when I’m looking for recipes they generally serve as inspiration rather than blueprints. I’m 40 and have been cooking for three decades as I started young. This very well may be the first recipe I’ve ever encountered and thought “yup, I’m doing all of that.” I am including my abuelitas recipes. It looks delicious sir.
Fall has arrived and I will now be making a triple batch of this soup using beef and pork for the 3rd time. I make my own chicken broth first, then prepare the recipe per the instructions and pressure can. What a wonderful recipe. Once done, I have enough Italian Wedding Soup to last me the winter. This soup and some homemade bread makes for an absolutely wonderful meal.

I made this last night for Sunday dinner and it was the best soup I’ve ever had hands down. You would think 60 meatballs would last a long time…that’s a negative. Those are so good you won’t be able to stop eating them.
I found out if you put a wet paper towel by your onion when you are dicing it or grating it, it will help stop your eyes from burning. It worked for me and my daughter ! 😄 And I really love your recipes ! 😊
And if you can't find acini de pepin you can substitute Israeli cous cous, it's very tiny round pasta and very similar. Thanks for making these videos, I'm addicted to watching them. Have been binge watching the soup ones tonight and am definitely making one of them tomorrow!
Nice to see grating onion being advocated for here. I started using grated for both meatballs and hamburger patties. Frankly it kinda sucks shaping a patty only to have it crack due to a big wedge of onion. The grated texture lets the onion kinda melt in and add its flavour but without the obstruction

When mixing meatloaf, meat patties, or meatballs, a good way to foster tenderness is to mix all the bread, seasonings, eggs, milk and so forth - everything but the ground meat - first. (Chefs call this sort of mixture a panade.) THEN mix in the ground meat. This way you’re combining the seasonings/mix-ins thoroughly, then lightly mixing in the meat. This helps keep the meatballs or meatloaf from getting tough.
So excited to try this! I can’t eat leafy greens so I’ve always had to avoid getting Italian wedding soup at restaurants, but I’ll add more carrots and celery and do the rest of it the same…except adding that rind of pecorino sitting in my fridge right now too and using some homemade turkey broth I’ve got in my freezer!! 😊 Thanks for the great recipe!

One trick I've found that works well with making spinach taste even better is to add a bit of some flavorful vinegar, such as champagne or sherry vinegar or cider vinegar. Sometimes spinach is a bit alkaline and can leave a chalky feel on the teeth. The acidity of the vinegar neutralizes some of that alkalinity, which then lets the more subtle flavors of the spinach come through. For the quantity of spinach you used, about a tablespoon of vinegar mixed in with the spinach ahead of adding it to the soup may help.
Whole Foods makes a mild Italian chicken sausage that has the perfect seasonings and flavor for these meatballs. I use it and just add breadcrumbs, the cheese, and the other things, with a little extra salt.
Nice Italian Wedding soup. I don't usually make this but I do make meatball soup which is similar. Definitely escarole,onion, parseley, celery and garlic and olive oil. I get hungry watching ... Maybe I'll try the turkey..

Excellent soup! I added garlic (why is there no garlic???) Added a parm rind while it simmered, and cooked my pasta al dente outside the soup and added it a just before we ate with extra parsley .
I usually flip them after the first 15 min. Not sure if it makes a difference but i always do it. You can always let them simmer in whatever sauce/gravy you're making to finish
What? No taste tester? LOL I love this soup. I usually get mine out of a can and it's actually pretty dang good, but I prefer scratch made everything, so I'm going to have to try this!

First, love the channel! It is a misconception though that the vegetable ingredients you listed are more "healthy" than lets say pork or veal. Strictly speaking, the inverse is true. When it comes to nutrient density (vitamins, minerals and trace elements), you get MOST of the nutritious value from the meat and the broth, the vegetables and grains are just "filler" with SOME additional nutrition provided.
My BIL gave me a tip on how to protect .my eyes when I was working with onions - Hold a slice of bread between my lips, sticking out. I thought he was pranking me. When I was alone, so no one could see how STUPID I looked, I tried it. IT WORKS!!!!!! I'm guessing the bread blocks the lemon juice
The Better than Bullion stock you used..it sells for almost $6 for an 8oz jar. I’m just making sure I understood you correctly I’m not hating or anything..you bought 10 jars of that and spent $60 on just the stock? Or am I misunderstanding?
What I mean is an 8 ounce jar makes like 60 or so cups of stock. It's ways less expensive than buying those boxes of stock in the store. Hope that makes sense.

I use a small ice cream scoop to make perfect size meatballs for wedding soup. It’s amazing tool for that.

What kind of bread crumbs do you use?
I switch between seasoned and non seasoned. When I have old bread I often dry it out in the oven then pulse it with a food processor.
