    Ingredients:
    Soy Sauce - 4tbsp
    Sesame Oil - 1 tbsp
    Oyster sauce - 2 tbsp
    Dark Soy Sauce - 2 tbsp
    White Pepper - a dash
    Chicken
    Garlic - 2 cloves
    Ginger - 25gm
    Chicken Bouillon- a pinch
    Salt - A pinch
    Corn starch - 1 ½ tsp
    Rice - 2 cups
    Water - 2 cups
    Salted Fish - 1 piece

    I have done this for a quite long time as my one pot meal in the rice cooker. But I put the chicken together with the rice and cook them both together. The oil I will put it when all the water has been absorbed to get the char on the rice at the bottom because oil will float if you mix it with water. If you didn’t manage to get the char in your rice cooker. You can put the rice in the wok/pan for a few minutes to get the crispy rice just like we get in the clay pot.

    saya dah try, guna pressure cooker, bila nasi dah nk masak, tukar mode ke stir fry, lpstu biar dia masak smpai jadi kerak2 garing....mmg extra kick! ala2 clyapot.

    I made this yesterday. It was a hit with the family. Simple and flavourful. I made it in the normal, whistling pressure cooker and it turned out good. Memang sedap, lah. 👍🏻 Thank you for sharing this recipe, Chef. 🙏🏻

    Putting a bit of soya sauce, dark soya sauce, and sugar before boiling the rice gives a more flavorful finish. Choosing the right type of rice is also a game changer cos you don’t want to end up with mushy rice. 😅

    Hi Chef! Thanks for the recipe! Will give it a try. Used to just cook the rice then plop the chicken in when the rice almost done. Its just since i like crispy chicken exterior I usually scoop out the chicken once done and finish it in an airfryer/oven. will definitely give this a try as I never had it with the ikan masin / salted fish before :D

    Can you make a video on how to buy dark soy sauce and light soy sauce? (Because there are varieties of soy sauces in the market 😢).. And I think I am one of those fellas that only knows how to buy kicap manis and kicap masin 🤣

      i think it's pretty straightforward. dark soy sauce will be labeled as kicap pekat (without 'manis' in the name), and light soy sauce is labeled as kicap cair. i've never seen anything else confusing yet. in my household we usually use camel brand for both (halal). maggi also have kicap pekat i think.

    I perfer fried garlic oil on rice. You forget to add in the ginger juice. Traditionally, this is a Chinese dish. Red chinese sauce is compulsory and fresh shitake mushroom is good too. These rice goes well with lotus pork ribs & peanut soup, braise soft chicken legs in sauce, 1 vegetable dish (choy sum or iceberg lettuce) blanc with oyster sauce and fried garlic on top.

    Dulu aku niaga mee buatan muslim di pasar borong Ipoh. Berkawan dgn seorg pak cik oku.. dia ni x la warak sgt, solat pun tidak rasanya...
    Tapi di pernah cerita bahwa dia pernah cari kerja masa bujang2, ketika itu masih belum potong kaki...
    Cari punya cari terjumpa kilang kicap cina (brand tersohor ipoh mali...), cari pekerja..
    Dia mintak kerja situ, Alhamdulillah, dpt.
    Keesokan hari nya dtg la dia kerja..
    Tugas pertama ialah kacau soya yg diperam. Ibu kpd kicap...
    Punyalah besar 'kolah' peram, dia bertanya mcm mana nak kacau....??
    Si apek seluar pendek pun tunjuk la caranya..
    Dia masuk dlm kolah tu, raduk sambil guna kayu mcm pendayung sampan. Raduk sampai semua rata dan sebati.... 😂
    Sejak drpd hari itu, pak cik tu dah tak lg sentuh kicap2 buatan cina yg sblm ini beliau begitu suka...
    *Dlm kolah tu pun dia ada jumpa tulang2 haiwan. Khinzir punya kot...?
    Nota: bagi peminat kicap Cina, selamat terus menikmati kicap2 kesayangan anda itu....!

    quick question! for the 2 cups rice - is it the rice cup sized cup? and 2 cups water is it also the rice cup sized cup? or is it the normal sized measurement 1 cup sized cup? (sorry if it's a silly question! x.x)

      Hey Sarah!! You can use either. If you’re using the rice cup for rice then follow the 2 cups lvl in your rice cooker. If you’re using any other cup then use the same cup for water :) . It’s a 1:1 ratio. But in claypot chicken rice you can put a bit less water coz chicken has a lot of moisture and plus got the sauce we put over after.

    i would like to share to you guys how to get the nice charred rice at the bottom when using the pressure cooker for this. After the cooking is done and you have stirred in with the sauce and chicken, put it back on the pressure cooker and set it on bake or sauce thickening mode for a good few minutes and viola! You get some charred rice bits at the bottom and also the rice is not so moist at the same time. Hope this helps :)

      Honestly for rice wine, I don’t know any good replacement. Some people say grape juice but honestly it doesn’t even resemble anywhere close. So personally I would omit, because I wouldn’t want to alter the taste just because I can’t use wine

    Claypot Rice without the Claypot wont be Claypot Rice would it?
    It is a one-pot rice at best. it will be delicious, no doubts, but missing the unique flavour imparted from Claypots, and also the crispy crust at the bottom.

    I thought this recipe is for those who don't own a claypot so it's so convenient for us that have rice cooker....BUT....Apu! Now we can't do this also as we don't have a pressure cooker that have a 'fried rice' function!🤨....back to square one! better buy a claypot, much cheaper than a pressure cooker with a fried rice function! 🤣

    Claypot rice is Chinese, more specifically Cantonese. This is just Chinese chicken and rice. Without the claypot, you could do it in a saucepan for the same effect. Not a rice cooker…

    I would not add corn flour. over rated ingredient used in many dishes. it gives a starchy texture which is a cheatsheet ingredient.
