    Macros 1 Mcmuffin: 390 calories, 29C, 16F, 35P
    Ingredients 8 Servings:
    8 eggs
    200g cottage cheese
    40g gochujang
    600g extra lean ground meat (Beef or turkey)
    8 English muffins
    8 slices American cheese
    Salt, black pepper
    2tsp each garlic powder, onion powder, paprika
    Directions:
    Add to a blender eggs, gochujang, cottage cheese, and black pepper and blend on high for 30 seconds. Distribute eggs into 2 containers (I used 12x18cm or 5x7inch) and bake at 200°C or 400°F for 17-20 minutes.
    Add ground meat to a bowl and add onion powder, garlic powder, paprika, salt, and black pepper and mix until combined. Form 75g meatballs out of the meat until you get 8 balls.
    Place 8 muffins on a baking sheet. As soon as the eggs are done remove them from the oven and place the muffins under the broiler for 2 minutes to get some color.
    Cut eggs into 8 equal-sized rectangles and add them on top of the muffins. Add 1 slice of American cheese to every egg muffin.
    Add oil to a pan on medium heat and add 4 meatballs and press them flat. Fry for 2 minutes, then flip and fry for another 2 minutes. Remove the meat from the pan and place it on top of the muffins. Repeat with the other 4 meatballs.
    Let the 8 muffins cool down and then place them in zip lock bags. Store them in the fridge for 3-5 days or in the freezer for up to months.
    When defrosting, place 1 McMuffin directly from the freezer on a plate and microwave slowly at medium heat for 5 minutes until ready.

    Just made these. I massively recommend not including the bread when freezing. Just toast a fresh one while the other bit is re-heating.

    I got your cookbook and this was the first thing we decided to make last night. They are very good. My wife says they are one of her new favorites.     Made these a few days ago and been having them for breakfast each morning. Absolutely fantastic. Some personal tips:
    I made mine with 2% Turkey, they taste great but I think some sriracha mayo makes up for the blander meat choice, excited to try beef eventually
    If you only have dishes that are too big for the eggs, shape the egg mixture into it's own patty or you end up with overhanging egg
    Put a paper towel underneath them when microwaving as they have some moisture in the bottom in my experience

    I make something similar using a muffin top silicone tray. Perfect size and you don’t have to cut them. They just pop out in perfect circles.

    These look really good, but I'm trying to cut out breads. I will try the same ingredients, but just cook the meat as crumbled mincemeat and add it to the eggs, add the cheese in shreds, and bake it in muffin molds. High Protein Egg Bites!

      Do a egg mixture like you would make to scramble. Grease/spray a muffin pan. Poor your eggs 3/4 to top. Add peppers, onions, bacon, cheese, etc.. What ever you like. Bake for 25 min @ 350. I put two on a keto tortilla wrap with my favorite salsa for breakfast or lunch. Excellent. They keep well for days and heat up way better than you would expect!

    Great video! I've been making a similar breakfast sandwich, but with added egg whites for more protein. Instead of mayo I used lite laughing cow cheese which adds a nice creamy flavor, and instead of american cheese a low-fat cheddar slice - doesn't melt as well, but tastes better than the processed american cheese.

      Just remember that you can only eat so much protein in one meal (30 ish grams). otherwise it's just a waste. Spread it out.

    If you put a dash of water before putting the lid on they will cook much faster and be hella juicy.

    I have to try this. Thanks for sharing! Oh, for calorie counters a McDonald’s egg McMuffin only has 300 calories so mixing egg whites with whole eggs and using lean ham in place of the sausage will save you 100 calories. But this recipe looks awesome for taste so I’m going his way 😂

    Pro tip: when you add lots of cottage cheese to eggs like this, throw in a bit of nutritional yeast, it helps add back some of that cheesy eggy flavor that gets diluted by the cottage cheese 👌

    Thanks for the recipe. I made them - they are good, but honestly, they’re such a dense protein hit I feel like they sit in your stomach for the rest of the day. I struggle to get my other meals in because I just don’t feel like eating! Maybe good for some people but I’ll stick with something lighter for breakfast I think.

      Honestly that’s kinda the point of protein and 35 is kinda low for a meal…45 or 50 is better per meal x 4 meals a day.

      @@VengeanceFalls I think it’s hard to get that in with real food in a way that feels good. I’m not into woo but to a point you do have to listen to your body - if your gut can take 4x meals containing 50g of protein a day, all power to you. I use Huel because it’s got a good amount of fibre in; I can get what need protein-wise in a day without packing my bowels solid and my “real” meals can be a little more natural in their macros.

    Really like your recipes, but I have been wondering. Where do I get lean ground beef in Germany? Couldn't find any at grocery stores like Rewe and Aldi and I have no butcher in town.

    These made me think of this one product in the freezer isle of the one shop near me, but everything is raw and you're supposed to put them into a waffle iron while they are still frozen. I assume that is so that they are crisper once they are done, but I have not tried them.

      To be fair it only takes 10 minutes start to finish to make these fresh. For the extra time the flavour is worth it to make it fresh.

    Tipp für die Deutschen Zuschauer:
    Miracel Whip mit Joghurt hat pro 100ml nur 108kcal.
    Hatte das auch einmal aus Interesse überprüft und 100ml entsprechend ungefähr 100g. Sind also sogar nur 72kcal pro 100g. Leichter wird Mayo glaube ich nicht mehr. ❤

    Can you do a test? Can you reinvent a low calorie corn tortilla? I've been looking for recipes on how to make from scratch a low calorie corn tortilla. All macros are fine for mr, I just want low calorie tortilla.

    I love this idea, Felu, and look forward to making it. But in the past year or so, American cheese has started tasting kind of oily to me (and I'm an American...lol). If I switch from American cheese to slices of cheddar cheese, would that change the dietary numbers too much?

    I would add mustard or horseradish, seems pretty dry. Sadly no muffins available around me... Theyre easy to make but that becomes a lot of work with the rest of the recipe.

    I make my own version, but with less pans - try this: Chicago Metallic 44305 Mini Cake Muffin Pan. I have two of these, so eggs (with veggies and cheese) into one pan, sausage in second pan. I toast the muffins each morning, as I don't like them getting soggy when everything else defrosts.

    The only part of this I think needs to be prepped is the egg. The sausage cooks very quickly from frozen and IF YOUR version still takes 5 minutes microwave time then fresh would be better. Form the sausage patties and separate with wax paper. Mix eggs and bake on a large sheet pan. Cut and stack with wax paper, like the sausage. Now when you want one pop the muffin in the toaster, and an egg square plus a sausage patty in a nonstick pan. 2 minutes a side is all it takes if the sausage is thinly formed. The muffin will be toasted first, add lite mayo and cheese, then an egg and a sausage. Wipe out the pan with a paper kitchen towel and you're done in 5 minutes. In basically the same time as reheating a rubbery, freezer burnt sandwich you have a perfect fresh one. The recipe is solid though.😊

      Only if we're assuming you always have muffins (and if you say you can put them in the freezer well then you basically have the entire burger already there), want the hassle of cooking and dishes, and that it will equal the same amount of time.

      Or you could do the prep to save having to wash pans every time, wrap the muffins in foil and use an air fryer instead of the microwave. Then you get the time saving of meal prep with more edible food

      ​@@callumcochrane7759 DAyum I have an air fryer but no microwave - so foil works like this aye? mine is like 140-200c degrees celcius, any suggestions for what heat i should throw it on to defrost a mcmuffin ?

      @@mikebasketball11 i'd probably cook in the foil at 180 for 5-6 mins then 2-3 more opened up to get the muffin a little crispy

    How do I eat these. No way it’s so little calories. I swear these things are 600cal at the 711 or fast food place. Is the extra 300csl from the bacon and pork? I need to make these asap

      Most things in restaurant are filled with butter and oil. That is where all the calories are coming from
