Sorry about the transmission issue Ben. Looks like you made good progress and a used replacement will be the best option for now. Hopefully they give you a nice warranty.
Not as easy as it seems, especially on transmissions. Also finding documentation on how to do it properly would be pretty hard seeing that the car is less than 1 year old and the dealer still probably has any structural and major mechanical repair documentation on lock down. Also they said that the solenoids were about $4,000 and a used transmission that's know to be good could be bought for about $6,000 so they opted to buy used rather than hoping it's just the solenoids and risk wasting $4,000.
I wonder if you have the Tremec dual clutch transmission? Problems with the shift solenoids ... maybe try moving them to see if you can narrow the bad solenoid. Easier to replace the solenoids that to crack that open and rebuild. CHECK for metal in the pan and filter if it is a planetary gear issue or spacers that came apart and is in the gears. EITHER WAY GOOD LUCK GUYS! Huge job ahead of you.
I have a Volkswagen with dual clutch transmission. On them yuo can do a reset of the transmission and then it will do an adaptation on the clutches and how those engage. You shold check if there is something similar on GM's. The symptoms look similar.

IMO the rear suspension and brakes, everything should come out, just like a front wheel drive car is assembled.....

That Tremec transmission isn't a new design, I am not sure what else they came in, but you can see on the front of it there is a adaptor plate installed to make it match up to the corvette. Tremec is typically a pretty good transmission brand
It seems to me as though the person driving it is pressing both pedals alternately. That is quite weird. I could imagine that you eventually found the solution to that problem. It's time to continue watching this video.
This video is proof that you need to only buy C8s that were made after 7/23, you can find the build date on the sticker inside the drivers door. The C8s made after that date have a case made by a new vendor plus it has some changes and updates. Larger oil pan that helps to keep the fluid near the pickup. and a raised oil plug that adds two more quarts, no more over filling from above.

Guess it is most often "debris," but changing the trans fluid at 7,500 is recommended and about 4% of the 2021s were effected, although apparently, it goes beyond that.
You maybe able to sell the broken transmission just list what it is doing and maybe someone needs the casing of the transmission or other parts from it. List it for like 2 or 3 grand as for parts or repair.
Check the wheel speed sensors if equipped. if you have traction control and one is bad it can give symptoms of a bad trans.
OBD reader would have flagged a bad wheel speed sensor
