    Ay my parents never bought us Mcdonald, "don't eat trash" "why you eating that?" she made us homemade lunch until the last day of high school...this habit was hard to break so now I made my own lunches.

    I'm 62, and trying after a lifetime of bad eating patterns to change them. I now have MS and other diseases, all of them autoimmune. I hope it isn't too late to find my way back toward a semblace of health. I still have a lot to do to give it a serious go. Thank you for helping me realize.

      Just reduce your carbs.., not necessarily keto, as high carb foods are all lacking nutrient density. Don't cook the bejeezers out of your veggies, as the doctor notes in her video, and add beans. Thus doctor raves about the healthiness of eating beans and lentils. You can learn online about presoaking before cooking to reduce the lectins which make them more digestible, too.

    My favorite daily “break-fast” is kale, half of a frozen lemon, cilantro, chia seeds, splash of apple cider vinegar, scoop of coconut oil, and water. Sometimes adding other green veg. Didn’t take long to LOVE this flavor combo. I don’t like to add berries, but I love to blend them for a dessert sorbet.

    Happy you mention beets! I've been a "lab rat" for studies in vascular research for many studies and beets and watermelon with rind have made a big difference for me. (I have HFpEF PH but doing fine)

    Tip about zucchini, japanese egg plant and sweet potato etc.......slice and then microwave the zucchini for 1- minutes under a bowl on a plate. microwave sliced chard for 30 seconds the same way. Puncture the courgette/eggplant with a ford and microwave for two -three minutes..... microwave the sweet potatoe whole or peeled and sliced. More energy efficient, quicker and the bowl and plate retain the moisture essentially steaming the veg. You are a blessing in our lives, I hope this is useful to you.     You covered a lot info in this presentation! I've been changing my diet over the last few years, it's not something you do quickly but have to be aware of when choosing food. Make the healthy choice. Prevention is the key and diet/exercise makes a big difference. Veggies are expensive and some people just don't have a choice. I've been supplementing my food by creating a garden in my backyard. I had to improve the soil over the years but now I can grow things like: chard, kale, beets, figs, etc. Some greens produce over the summer (and berries) and give you a continuous supply of greens. It's a fun hobby too.

    Can you speak about oxalates? I have seen conflicting information about it. I like a lot of food with oxalates like lambs quarters, kale spinach etc…..

    Even though I have had SLE for a long time I have never experienced organ failure, alhamdulillah. I think this is because my mom always focused our family diet on cruciferous vegetables and carotinoids when I was growing up. My disease self-limits, so even when it starts to affect major organs and systems, it doesn't get very far. Food is truly medicine!

    A long time friend of mine refused to eat anything green.Her diet consisted of refined carbs and meat.She wouldn't even eat an apple. She didn't exercise.She gained a lot of weight.
    She developed Hypothyroidism and then later on Rhematoid Arthritis.She recently had a massive stroke and had to learn to walk again.She also recently had a double lung transplant.She is 65 years old.I tried to encourage her to eat healthier but she would get annoyed. Life style and food choices matter.We don't want to spend our retirement dealing with serious health issues. We want to be able to enjoy ourselves at that time.

    Don't understand the mustard seed (powder?) -- the picture shows seed, not powder -- that you should "throw in a pinch of mustard seed powder" -- throw it into where? But "don't cook that myrosinase" ??? Could you clarify what you mean in the couple of lines around the 5th minute of the video? You've got me all excited about the prospect of getting the most out of dinosaur kale, so I really want to understand what to do (with mustard) when it comes to cooking the kale. Do you have it co-mingling with the cut kale in the half hour it sits on the counter before cooking? You have already got me to eating the kale, and I love it. Thanks so much. Just please spell out the operation from cutting the kale to cooking it. Would be much appreciated.

    Another great video!! I love cauliflower & all the other vegetables you talked about. My favorite is the purple cauliflower it has a sweeter taste especially roasted with a sprinkle of nutritional yeast. Agree about the zucchini has to be roasted with nutritional yeast & onion powder.

    Of all the advocates for a healthy diet that I have listened to on UA-cam, this doctor/biochemist is easily the most scientifically well informed and detailed in her analysis and advice. Unfortunately, my understanding falls far short of hers and I find myself struggling to understand her conceptually. What to do? Don’t change the content but adjust the format. Break up the material into chapters and provide a summary of the salient points at the end. This would give the viewer an overview and allow the advice to be digested (as it were) a bit at a time. In the meantime, a huge vote of thanks!

    This may be a bit of a weird comment but I liked you standing up in this video. I was able to pay attention the whole time. You always generously give an amazing wealth of great information but I have a hard time staying alert the whole time in your other videos. The only difference I can ascertain here is that you are standing and also gave some more personal anecdotes I could connect with. Not sure if that's helpful but just in case you have others who respond the same way i thought I'd mention it.

    One minor point. While pumpkin seeds are relatively high in magnesium, sunflower seeds are significantly higher; and yes, you can buy organic, raw, unsalted, sunflower seeds.
    I eat both sunflower snd pumpkin daily.

      Raw Pumpkin seeds are like eating twigs. Suggestions? I’m going to try baking a little like 350 for 10-15 minutes to see if it helps.

    I grate my cauliflower together with broccoli and sayote, with chopped onion season with fish sauce, black pepper and powder onion for flavor then make a fluerry using wheat flour and rye flour. Cook it like pancake using olive oil or avocado oil. This is my carbs with veggies.

    I normally cook kale with a little boiling water for just a few seconds.
    should I eat raw?
    I used to have eczema and severe hayfever for 40 years until pandemic in 2020. Then I start eating blue berries, rasberry and apple with oatmeal for breakfast, and one/two of the cruciferous vegetables for dinner but cut down alcohol intake. The results are significant.
    I am now living with free eczema and hayfever.

    I think it's important to understand both sides of the health discussion. How else can you choose to improve your health without all the facts, and prevention of potential health issues, which if left, can cause much more serious problems
    Thank you for educating us on both aspects of health, from good to worse scenarios. Helps us understand our bodies better.
    Your explanation makes much more sense as Ì have gone to dieticians and not been successful with their approach to insulin resistance and weight loss.
    I had some really caring doctors in past but Drs visits are limited so being proactive is important.
    Really appreciate your way of explaining the facts and no nonsense explanation and guidance to proceed with a win win approach to healing my gut issues.

    Just subscribe- you convinced me Doc, i need to loose 15 lbs, eat mainly veggies and 1/2 c of meat, not be able to achieve, I don’t eat sugar, purple brown rice once a week, potatoes once a week, 2 tortillas once a week, help please

    Depending where you live (most of the US I think) growing raspberries at home is pretty easy, those and blueberries I think more people should grow
