  • You must have eaten brinjal vegetable, bharta and bhajiya. Today we are baking brinjal for you and serving it with two of the most consumed cheeses and eggs. If you want, you can also eat it with the prepared sauce, then make the recipe and enjoy it to the fullest.

    Ingredients Quantity
    Eggplant 2 no
    Oil 1 tsp
    Salt to taste
    Turmeric powder ½ tsp
    Red chilli powder 1 tsp
    Oil 1 tbsp
    Oil 1½ tbsp
    Ginger chopped 1 tbsp
    Garlic chopped 1 ½ tbsp
    Green chilli chopped 4 no
    Onion chopped 1 no
    Red chilli sauce 2 tbsp
    Tomato ketchup 2 tbsp
    Soya sauce 1 tbsp
    Black pepper crushed 1 tsp
    Black salt ½ tsp
    Chaat masala 1 tsp
    Salt to taste
    Spring onion chopped 1 tbsp
    Oil 1 tsp
    Oil 1 tsp
    Spring onion chopped for sprinkle
    Chesses grated 2 tbsp
    Spring onion chopped for garnish
    Egg 2 no
    Spring onion chopped for garnish
    Method :-
    1. Take a brinjal and cut it into one by two pieces and make a slash on the top of the brinjal.
    2. Preheat the oven and pour some oil in the tray.
    3. Now place the brinjal in the tray. Sprinkle salt, turmeric powder, red chilli powder, oil on top and rub it well.
    4. Now put the brinjal in the oven and cook at 220°C for 15 minutes.
    5. Now place the kadai on medium flame and heat oil. Add chopped ginger, chopped garlic, chopped green chilli and sauté for 2 minutes.
    6. Add chopped onion, red chilli sauce, tomato ketchup, soya sauce, crushed black pepper, black salt, chaat masala, salt and mix well.
    7. Now add chopped spring onion mix well and switch off the flame.
    8. Now let's take out the brinjal from oven and prick in the brinjal with the help of a fork to check.
    9. Now pour oil on top and spread hot sauce all around. Then add some oil and chopped spring onion on top.
    10. Now cook for 5 minutes in oven.
    11. Now take out the brinjal and add grated cheese on top of two brinjal.
    12. Cook for 1 minute in oven and garnish with chopped spring onion.
    13. Break the egg in a bowl and beat it well. Pour the beaten egg over leftover the brinjal.
    14. Now add sauce on top and cook for 2 minutes in oven.
    15. Add sauce and chopped spring onion in serving plate.
    16. Now remove extra cooked egg from tray and cook 2 minutes more brinjal in oven.
    17. Add leftover egg on top of brinjal and serve hot 2 ways of brinjal.
