- Kithul is a vavaluable tree that has been useful to Sri Lankans since ancient times.It is also known as "Jaggery Palm" in English.Kithul flour and Kithul palm syrup both are used to prepare many foods.
Kithul treacle and jaggery are very sweety.They were the main sweeteners of our ancestors.In this video,I will prepare some delicious foods using Kithul treacle and jaggery.
Also,there are many health benefits of Kithul treacle,jaggery and Kithul palm syrup.Eating Kithul treacle and jaggery controls Cholesterol level in the body.It helps to reduce bad Cholesterol (LDL) and increase good Cholesterol.There is a misconception that eating Kithul treacle and jaggery is cause to diabetes.Kithul treacle and jaggery do not cause diabetes and are at the 35th level of Glycemic index.Also Kithul palm syrup can demount heavy metals such as Arsenic and Cadmium in our body.It is a rich source of antioxidants that slow aging process and prevent cancers.
Some of the Kithul treacle and jaggery in the market have added sugar.A pure Kithul treacle bottle weighs about 1.5 Kgs.I think these two factors will help you to choose quality Kithul treacle and jaggery in the market.

කිතුල් කියන්නේ අතීතයේ ඉදන්ම ශ්‍රීලාංකිකයන්ට ඉතා ප්‍රයෝජනවත් වූ වටිනා ශාකයක්.කිතුල් කඳෙන් ලබාගන්න කිතුල් පිටි වගේම කිතුල් මල් මැදීමෙන් ලබාන්නා තෙල්දියද බොහෝ ආහාර වලට යොදාගන්නා අමුද්‍රව්‍යන් දෙකක් හැටියට හදුන්වන්න පුලුවන්.
තෙල්දිය වලින් නිපදවන කිතුල් පැණි,හකුරු වල රස ගැන නම් නොදන්න කෙනෙක් නැතිව ඇති.සීනී භාවිතා නොකරපු අපේ මුතුන්මිත්තන්ගේ ප්‍රධාන පැණි රසකාරකය වුනේ කිතුල් පැණි හා හකුරුයි.කිතුල් හකුරු හා පැණි භාවිතයට ගෙන සෑදූ රසවත් ආහාර කිහිපයක්ම ඔයාලට මේ නිර්මාණය තුළ දැකගන්න පුලුවන් වේවි.
මේ තරම් රසවත් කිතුල් පැණි,හකුරු හා තෙල්දිය වල පෝෂණ ගුණයත් රස තරම් ම ඉහළයි.කිතුල් පැණි,හකුරු ආහාරයට ගැනීමෙන් ශරීරයේ කොලෙස්ටරෝල් මට්ටම සුදුසු ආකාරයට පාලනය වෙනවා.එය ශරීරයේ අහිතකර කොලෙස්ටරෝල් මට්ටම අඩු කිරීමටත් හිතකර කොලෙස්ටරෝල් මට්ටම වැඩි කිරීමටත් දායක වෙනවා.ඒ වගේම බොහෝ දෙනෙක් හිතනවා කිතුල් පැණි,හකුරු ආහාරයට ගැනීම දියවැඩියාවට අතවැනීමක් කියලා.ඒක වැරදි මතයක්.යම් ආහාරයක් මගින් දියවැඩියාව උත්සන්න කරනවාද යන්න තීරණය කරන්නේ එම ආහාරයේ ග්ලයිසීමික් අගය (Glycemic index) මගින්.අපි භාවිතා කරන සීනි වල මේ අගය 70 ක් පමණ වුනත් කිතුල් පැණි හා හකුරු වල එය 35 ක් තරම් අඩු අගයක් වෙනවා.එම නිසා කිතුල් පැණි,හකුරු ආහාරයට ගැනීම දියවැඩියා රෝගයට හේතුවක් නොවන බවත්,දියවැඩියා රෝගය පාලනය කරන අයද මධ්‍යස්ථ වශයෙන් මේවා ආහාරයට ගැනීම වරදක් නොවන බවත්,දියවැඩියා සංගමය විසින් ප්‍රකාශ කර තිබෙනවා.ඒ වගේම කිතුල් තෙල්දිය වලද ශරීරයට ඇතුල්වන ආසනික්,කැඩ්මියම් වැනි බැරලෝහ ශරීරයට හානියක් නොවන සේ බැහැර කිරීමේ හැකියාව තියෙනවා.වයසට යාමේ වේගය අඩු කිරීමට හා පිළිකා නැසීමට හේතුවන ප්‍රතිඔක්සිකාරකද තෙල්දිය තුළ අඩංගු වෙනවා.
මේ වගේ පෝෂණ ගුණ රාශියක් කිතුල් පැණි,හකුරු හා තෙල්දිය වල තිබුනත් අද වෙළදපොළේ අලෙවි වන සමහර කිතුල් පැණි,හකුරු වලට සීනි එක්කර ඒවා බාල කර තිබෙනවා.නමුත් හොදම ගුණාත්මකභාවයෙන් සෑදූ කිතුල් පැණි බෝතලයක් කිලෝග්‍රෑම් 1.5 ට ආසන්න බරකින් යුක්ත වෙනවා.ඒ වගේම සීනි නොයෙදූ හකුරු සීනි යෙදූ හකුරු වලට වඩා තරමක් මෘදු ගතියකින් යුතු වෙනවා.ඒ කාරණා දෙක ඔබට වෙළදපොළේදී ඔබට ගුණාත්මක පැණි හා හකුරු තෝරා ගැනීමට යම් තරමකින් උදව් වෙයි කියලා මම හිතනවා.
ඒ වගේම බොහෝ දෙනෙක් කිතුල් මල් මදින ක්‍රියාවලිය දැකලා නැති නිසාම අපි හිතුවා මේ නිර්මාණය හරහා ඒ දසුන් පෙළකුත් අපේ ආදරණීය යාලුවන්ට සමීප කරන්න.අපේ ඒ උත්සහය සාර්ථකද කියලා කමෙන්ට් එකකින් කියලා යන්න අමතක කරන්න එපා.

This is also a type of sugar palm. We call it Kithul in Sri Lanka (you can google this name to find more about it). You can find kithul in Cambodia too but I guess not common. In Sri Lanka, we have three main types of palm sugar; Kithul, Coconut, Palmyra.
