- Join Chris Morocco in the Bon Appétit Test Kitchen as he makes grilled brisket with peanut salsa. Normally, you associate brisket with long, slow cooking-maybe on a winter afternoon-but we’re making a case for throwing it on the grill. Freezing the brisket makes it easier to slice it against the grain, which nullifies its naturally ropy texture and exposes more surface area to the flavorful marinade.

I dont know how he did it, but Chris is my favorite ba cook. His humour is slaying yet sophisticated, he shines with intelligence and precision but still messes up from time to time, he knows everything about food, flavors and cooking, he is cute without intending to and he seems like a really good friend and colleague - i will never forget how he stood by claires side through the starburst disaster 😂 and his last name is just awesome 👌

I love how they leave in the little mishaps and things that traditionally would be cut, it makes it feel so much more genuine and you connect better to the chefs

I just love it when the BA crew/production staff are just goofing around and having fun 😭 this episode was filled with so much laughter and playful vibes (i love the jump cuts especially: *chris cooking* -> *chris throwing shade and the ba crew having fun* -> *chris explaining the recipe* -> *chris gossiping and just talking with his other co-workers*)
When he started talking about the allicin I had flashbacks to Brad's two-part epoxy monologues
Chris could explain anything and I will follow him with conviction. Just a great explainer of the base sciences and then the upper level reasoning behind it all, just great to listen to. He's also really precise about measurements and technique so we can follow at home! Love ya Chris!
