Carla Makes Pork Shoulder Steaks | From the Test Kitchen | Bon Appétit
Вставка
- Опубліковано 18 чер 2019
- Join Carla Music in the Bon Appétit Test Kitchen as she makes pork shoulder steaks. The centerpiece of Korean barbecue is the meat, but it doesn't have to be steak. Keep an eye on the edge of the meat where it touches the grill: When it’s browned, turn the pork over.

ABOUT BON APPÉTIT
Bon Appétit is a highly opinionated food brand that wants everyone to love cooking and eating as much as we do. We believe in seasonal produce, properly salted pasta water, and developing recipes that anyone can make at home. - Навчання та стиль
You guys should make a day in the life of a Bon Appétit Chef! I’m really curious to see how a typical work day is like, recipe research, development, video planning, meetings, lunch break, etc. I think it would be really cool to watch!!
I would love it! I'm so curious about how it all works! I'd even love just a tour of the kitchen.
They did one for Claire for another magazine's youtube channel?
@babs bruno Sorry I'm two months late, but you should listen to BA's podcast! In the second half of episode 230: Chopsticks Can Do More Than You Might Think, Gaby talks about what being a test kitchen manager entails!
it seems like everyone was just standing around acting busy but actually just waiting to get in on the steak
me too if i see meat
Pork stake, a grill, wait for it
Chris was having a religious experience right then and there. :D
*Chirs
he didn't even mind that it wasn't tempered
The gospel music ending! These editors make the show every time
BA is my religion and test kitchen is my church

@@sh0mmY Would you also happen to know the other tracks that BA uses a lot? (e.g. the It's Alive theme, the Making Perfect soundtrack)
@@PaulIsTheKillingestOnYT Nope, sorry. You could probably tweet Matt the editor for at least the it's alive theme

As a Korean person growing up eating this type of food, I think they really nailed down this recipe in terms of using traditional Korean flavors and getting it right.
I also love the end part because Korean food is meant to be communal and meant to be shared and I think BA caught that vibe really well 💕
andrew5629 as another Korean person I agree! The whole spread was super accurate and looked amazing, and seeing everyone love it is so nice. The korean pride is unreal haha
Same here. I make this at home but my marinade uses gojujjang, garlic (a crap ton), ginger, honey, and some Sprite or 7Up and get the pork shoulder sliced thin. Placed in a creaming hot cast iron skillet.
We have our own recipes for this cut of meat. It was reserved for poor people but influencers like this make a source of protein and fat unaffordable for poor people. This is cruelty.
J K ?
@@johnyang5305 He thinks that Korean food is somehow luxury. Pork shoulder is still pretty much the cheapest cut unless you go into offal territory. I wonder what he would say about classic French "sweetbreads" (brined thymus and pancreas).
You know the recipe is gonna be good when Chris and Carla are just making noises.
@@jackceder5252This whole video should have a parental warning. ;)
BA ASMR. Yummy noises lol
Would watch 5 min of just Carla and Chris eating and making appreciative noises.
Hey cole!
@@harperellenburg Hey Harper!!!!
I love the fact that the editor is basically commenting on the videos in real time now
just like It's Alive now is for everyone in the Test Kitchen.
is this a confirmed vinny sighting? bagged and tagged?
@@ifatreefalse Who?
Matt Hunziker. He's the editor of these videos. Vinny used to be a camera guy but he's moved on to greener (or at least different) pastures now.
@@ifatreefalse it says there that matt is the editor of it's alive. vinny is just the camera guy
The ending where Carla shares with Chris and then everyone shares the rest is exactly what Korean food is all about. I love it!
And Cajun food
Brad never got a taste.
When Mamma Carla cooks something, look at all the people who show up in the background hoping to be offered a bite. It's like going to church.
That first 40 seconds was pure delight
You know you watch a lot of Bon Appétit when you recognize and can name almost everyone in the background of the video. 😆
What’s the name of curly haired girl
It shows you have good taste.
Brad Power right?!!!
I thought there would be a comment box for Adam Rapaport’s background cameo!!
Chris: uhmhm mmmm mmhm...
Me: Excellent point. Chris is always right.
Let's take the first 30 seconds and loop them for 10 hours.
Waiting for this.
If they gave us 50 minutes of pizza discussion, I have hope we'll get this too
I'm on it.
HAHA I literally went back just to watch it over
Yes!
If anyone’s on the fence about Carla’s book- I bought it and then bought one for every college grad in the family this year. It’s beautiful and practical and fun- everyone can learn from it.
11:34 when the church music comes in, you know it's good 😂😂😂
Carla: "Today we're going to burn things on the grill"
Priya: "I'm going to call my family"
Claire: "I hate my life right now"
Molly: "this needs parm and some pep"
Brad: "release the allicin"
Chris:"I've tested 67 versions of this recipe to perfect it"
@@philaeew4866 go to your room, mary.
Andy: **makes face**
😂😂😂
Carla: gets to go to Italy and 5 different cities to talk to master chefs.
Claire: gets to walk down the street to talk to some chefs.
Priya: gets to facetime her dad.
We finally met the editor of It's Alive!!!!! You're the real MVP!! 😩🎉🎊🎉🎊🙌🏼👏🏼
12:12 For those who missed him.
He is the man 😃😃
His name is Matt Hunziker. 😁
He's been in a couple other videos too, but yeah, this is his biggest appearance so far.
Isn't he the second editor?
Brad should go to Korea... One of the best places in the world for fermentation related foods and Korean food deserves more widespread recognition.
8:22 Thankful Carla is doing this brouhaha. Please keep doing this brouhaha.
Literally as a Korean im always so skeptical of chefs cooking korean food, but Carla, damn. GURL NOT A DAY GOES BY THAT YOU DONT AMAZE ME. KEEP DOING YOU BOOBOO. ILY. YASSSS TO THE WAY YOU SAY SSAM AND DWAENJANG AND HOW U MADE THAT SSAM.
BA: Carla Ma...
Me: **click**
BA: Pork Shoulder...
Me: I said **CLICK**
Oh my gosh I'm fangirling over the editor to It's Alive
he looks familiar
YES!!! HUNZI is lowkey hot 🔥🔥🔥
Matt!!!! Our big boi!
Patrick Quezon low key? He’s crazy hot! He needs to show up more.
@@1Cortexiphan hahaha i was trying to temper my feelings. His IG also doesn't show a lot of his face, too, so anytime he shows up in videos I'm like 😳😳😳
For any non-Koreans out there interested in the recipe, you can also find pre-sliced pork shoulder steaks in many Korean supermarkets and butcher shops!
Chris fell in love with that ssam. He didn't even hesitate to ask for a second helping.
When Chris Morocco has no words to describe the RELIGIOUS experience he has with a food, you know it’s a GOOD FOOD
I'm still boggling that he didn't smell it first.
Chris isn’t making his classic assessment statements, it’s so good he is just savoring it. Love it. Pork shoulder it’s one of the cuts in spam hee hee
Chris getting getting washed over by a straight-up spiritual experience on camera is now my go-to mood lifter clip. Things just got real up in the BA test kitchen.
that end part was so cute and very accurate to the communal culture of korean cuisine, good job BA!
7:16 Jesus christ, are we gonna need crowd-funding to get Andy some new shirts?
He rips them on purpose, those are new shirts.
That's his style, I was confused too at first.
Also, is it just me or is Gaby stealing artwork in the background?
I love Gaby, we need to see more of her
It's the summer, he needs the extra air flow
I don't know what the editors are paid, but its not enough.
That organ bit has me in tears. Thanks again.
*in interview*
“So what makes you want to work for Bon Appétit?”
Me: 12:00
As an avid fan of this channel and a korean, i cannot be any happier to see this recipe, especially since it is so spot on with the ingredients. And that last touch with people sharing and mingling, thats the korean spirt!
I'm a vegan, but i'll watch Carla cook just about anything
Dunno why you wouldn't want to watch someone cook something simply because you don't eat it. I don't eat fish but the method of preparing fish is usually very interesting to watch regardless.
@@enchantedgames6589 i guess not everyone is necessarily super into watching others cook dishes they can't eat. I however, watch it more for the flavour combinations. I would obviously never eat pork, but im thinking about making this recipe with tofu instead!
Kat - Would you watch her shoot a bear and then cook it?
@@katherine2489 Saaame. I know exactly what you mean. And sometimes I learn things that can apply to what I eat. Like that marinade with some firm tofu or seitan...
Yep - I'm exactly the same! Thinking something seitan-based would work with this. I find BA really relaxing as well.
I love how she gave credit when credit was due, BUT most of all I love how she had fun with it and for real talked about and did end up sharing it cause that is such a key thing with just food culture globally.
I’ve never seen that many people just loiter around in the background 🤣🤣 they were dying to try!!
The way this video ended is just...so happy and satisfying
I demand a whole series of Carla and Chris eating food and going "mmm'" and then describing them using one to two words.
FOOD is LOVE , And will ALWAYS DRAW a CROWD !!!!.... Don't you just LOVE IT !!!!.... Thank you CARLA ....
Love this. Worked for Rachel as my first kitchen job as 18 yr old kid and she taught me so much!!
Love!!! Everything- From the recipe, to the editing, to the camaraderie, to the content! So obsessed with BA!!!
Love This channel and the whole BA team!
Ok two things,
First, that was the best ending in a while. Second, thank you for acknowledging the stand mixer on the floor.
I love that you're crediting the roots of your recipes/techniques!
This is awesome! I cant believe that I'm only seeing this video now. I'm so happy that Korean food is being enjoyed and cooked by more and more people all over the world! I think its so sweet when people bite into the wraps because it's not the way I'm used to, but to each their own!
St. Louisians are 0% surprised about pork steaks, we grow up on those B) So good
i saw pork steak and clicked
You know it's good when you just had this two nights ago...at home...with a load of perilla leaves and water parsley...with an aged ssamjang sauce...that your mum, the Korean Goddess of Sauce made...
On a separate note, I just have to praise Carla because she always knows what's up. Sometimes people forget about the sesame oil and salt sauce when a ssam party is mentioned, but it is SO important. SO IMPORTANT. Also the part where Carla takes off the end of the stalk(?) reminds me of my mum. Get the perilla leaves, people, I promise it's worth the effort to find them.
Carla is my favourite BA chef. I could listen to her talk all day and she seems to (be able to) have a good rapport with everyone.
I'll say it again.
Carla is hilarious, she NEEDS her own late-night talk show.
Correction: Actually I need this.
Literally every single aspect of this video was such a delight, I can’t wait to try this recipe 😍
WHOA - Chris took a bite without smelling it first??!! **gasp!** :D
Was sitting there smelling it being cooked. No need.
This is pretty spot on and I'm saying this as Korean so proud to see Korean food in my favorite youtube channel Actually you can just and anything you want in your ssam like rice
Also I would like to have some raw garlic in the sauce too!!! Thank you Carla for this amazing video!!!!
It's so satisfying watching people eat
Also, love that BA repped perilla leaves 9:40 !! It has a very minty flavor that might be weird at first but goes absolutely amazingly with barbeque. You guys should try using perilla oil instead of sesame as well.
Can we please have Chris and Carla make something together!
Andy: I had pasta today
Also Andy: Rice and everything on mine thanks
I noticed that too! He had two spoonfull of rice! 🍚 😂 🍚
thank you carla for your service
I love her attitude and her in depth explanations
OMG EDITOR OF IT'S ALIVE?! All hail but also hail the freakin video editor of it's alive
Fantastic editing. Ending was hilarious.
This was one of the cutest video ever, the ending was so heartwarming!
The ending was so good! I loved the sped up eating thing, the gospel music, and the tommy cameo!
I live for Andy At the END LMAO man is just trying to eat 12:19
I like how he was trying to sneak in and out trying to get a bite.
Don't socialize in front of the food! Give people access, it's so rude.
i'm waiting for BA to invite Maangchi
Carla and Maangchi back to back cooking would be the best BA ever produced
@@CaffeinatedCoffee15 she doesn't need to go back to back with her, she's a Korean food expert.
@@givememore4free I know. But I want Carla to be the one following the instructions while Maangchi teaches.
How has this not happened already? They are both in New York and Brad has a show about fermentation! Korean food is all about fermentation.
This is easily one of the simplest yet best dishes I've ever done in my life. Thanks BA and Carla!
Made this Tonight! So unbelievably good!
I think we need a GoFundMe for Andy to get some shirts that aren't filled with holes!
I'm making a competing GoFundMe to buy Andy shirts which are so full of holes he's practically shirtless
Pro shirtless Andy. 👏FAN👏SERVICE👏
He's taken off his top before on It's Alive (I think it was It's Alive, Brad was definitely the cook for that day). It's not what you think though.
@@knightgem8234 lolol I remember one episode where Brad is making something in the test kitchen and he's like Any can you help me out ??
Andy : takes off top instantly like superman or something hahaha :)
HAHA! (CUE SPIRITUAL ORGAN MUSIC) That's gotta be one of the funnier parts of any BA video. I watch them at work and my co-workers all laugh and smile when I randomly bust a belly laugh in the middle of the day. Maybe put the camera/editor's name in the descriptions too. BA vid's have a culture of their own that I love.
I've been making these for a while now. They're so great on the grill, really surprising in flavor, and they absorb whatever marinades or sauces you can toss at them. Great recipe here.
IDK what I liked better. Seeing Carla cooking it, or seeing everyone eating it! 😋😍😊
I'm just waiting for Chris to say something like "OOH MAMA" when he approves.
Lol... Secure your own before assisting others 😂. True words to live by.
This video just made me so happy, the ending especially. I love seeing the food made, enjoyed the way it should be.
Thank you it looks delicious
YOU GOTTA EAT IT IN ONE BITE GUYS. THAT IS LITERALLY THE ONLY RULE OF SSAM.
“Take ‘em to church” music really hit the spot
Omg I love Carla so much
these videos are so well structured and edited, wow!
Great vid,
I was thinking maybe bon appetit needs a Jamaican or Carribbean cook, since there's not much of that in the channel!
I agree.
I'd love to see this
Agreed more diversity needed
11:12 The words "Raw garlic" were said and Brad "Alicin" Leone IMMEDIATELY looked over. I'm dying over here
Carla is adorable, so full of joy and she is such a great cook, love u Carla Music
Yes. The BA Kitchen is magical.
When you’re from St. Louis and never knew that other people didn’t barbecue pork steaks
I am so glad Carla pronounced Gochujang and Deonjang right. Technically the sauce is called Ssamjang. You can buy it mixed already and add the other ingredients. It is especially good with pork belly wraps.
Yess, honestly the highlight of my day! A new BA video!
Love the video so much!!
Sees title: Come on give me some Morocco in the back.
Video starts: 🤩🤩🤩🤩🤩
Me: sips on ramen noodles*
IM SO JEALOUS
OMG I am literally eating my ramen right now lololol
I got my tonsils taken out a week ago, and I’ve been struggling since I can’t eat any food! I’ve been watching all of bon appétit’s videos... I literally mean ALL videos. So thank you for making all the great videos that help my recovery go by a little quicker! Love you BA!
Love love love the recipe! ❤️❤️❤️
The best ssam is eaten in one bite. 한입만!
You can sub in a sweet soju for the sake, easily. I've even heard of some using makgeolli in their marinade, but that's tough to find where I'm at.
What I love about this is that my step sisters husband is Korean and we eat at there home all the time, and we eat this a lot, and it never gets old, so many things you can do with sauces its just so good.
That freaking looks amazing.
Shout out to the video producers and editors for this amazingly seasoned and lively video!
Andy can feign offense at our thirst all he wants, but he knows exactly what he's doing in that ripped T-shirt.
Watching those two eat was the best part of my day
Wow I need to try this! Looks heavenly, everyone else loved it too haha great job Carla as always!
this is the earliest ive ever been
My FIL is always bringing me gigantic pork butts from the base exchange and I usually just slow roast them on the grill for chopped sandwiches. The next one is getting sliced up for this recipe. I'll report back soon. I bet Maangchi would love this! ❤️💕
This looks amazing.
Carla with her hair up is A SUMMER MOOD. what a doll
