    The recipe for sourdough!
    First day,
    Mix 10 gr T65 flour, 10ml water and 3g honey
    Second day,
    Add 20g T65 flour, 20ml water and 5g honey
    Third day,
    Add 50 g of flour and 50 ml of water
    Fourth day,
    Add 90 gr T65 flour, 90 ml water
    Fifth day,
    You have about 340 g of sourdough
    Keep 20 gr of “Chef Levain” and start again on the second day.
    And so on.....
    Ingredients for a bread of 800 gr:
    150 gr of sourdough
    500 gr of T65 soft wheat flour
    10 gr of salt
    between 320 and 350 ml of water
