INGREDIENTS WITH GRAM AMOUNTS (Gram amounts are estimates)
Ingredients
1 pound (454g) ditalini or tubetti
½ cup (120g) extra virgin olive oil
1 large onion - diced
½ teaspoon crushed red pepper flakes
1 6-ounce (180g) can tomato paste
4 cups (960g) water - plus more as needed
1 teaspoon kosher salt - plus more to taste
12 ounces (354g) frozen peas
¾ cup (90g) Pecorino Romano - grated

my mom used to make peas and pasta just like this when i was a little kid. i hated it cuz it was so difficult to pick out the peas and eat only the pasta. Now, if I see peas and pasta on a menu, you better know I'm ordering it!
This was a rare 10 and I agree. There is nothing more comforting than this dish and I really do prefer this red sauce version over the white though they are both great. Definitely some mixed feelings about James. On one hand, he has really started to develop a very reliable palate for us viewers. On the other hand, watching him grow up so quickly is making me feel old :(

A little trick that I do when i open those cans of tomato paste is I open both sides of it. It never leaks because it's so thick and allows you to use the bottom to push all the paste through instead of needing to use a spoon.
When I used to work at a restaurant, I would make big batches of sauce with big cans of tomato paste, I found if you poked two or three holes in the bottom of the can with the can opener and open the other side, you could shake the can swiftly once and all the paste would come out at once. It was rare I needed to use a spatula to get the rest out.
I've started buying tomato paste in the squeeze tubes. It's so much easier than using canned. You squeeze out only what you need and save the rest for another day.

Yes, this dish was a 10. As a fellow Italin American living in Florida and formerly from LI NY. This dish turned out great ! I just made one change. I used 1 cup of low sodium Chicken Stock and 3 cups of water. This one goes into my cookbook bible.
I also used chicken stock and I added a couple of anchovies when cooking the sauce - a secret weapon! I didn't need to use any salt and the anchovies add a richness of flavor without any fishy flavor whatsoever.
Yes that's true with the chicken stock. Try it with chick peas instead of peas too. Yum. I keep College Inn handy.

Sure, this looks fun and easy to throw together (and possibly more than the sum of its parts), but honestly, the REAL reason I want to make this, is the sublime look of satisfaction on a father's face from making food his kid really loves. And I don't even have any kids.... Priceless!

This recipe was originally on great depression cooking years ago. It was a channel where a 94 year old woman named Clara made meals from her living in the great depression. She was a sweet lady and she passed but her channel was a well spring of knowledge and wisdom

Wow that's the first 10 I've seen. I was thinking, once again, how well that would sit on a piece of garlic bread with no problem. This will be a great camping dish. No boiling necessary.

Cut both ends off the tomato paste can. Take the top lid off and push paste through from the bottom. 💜

I made this the other night - 10/10, easy. One of the easiest meals I've made in a long time, and didn't even need to bother looking at recipe, as it's so few ingredients and is so easy! Heat up the oil, chop the onion, throw that in...cook for a while, throw in the red pepper flakes and then tomato paste, cook for bit more, add a bunch of water, bring to boil, add pasta, add peas, cook until pasta's done, adding water as necessary. Grate cheese over-top until feels right. And that's literally it. SO EASY and SO DELICIOUS.
One note of caution - don't be stupid/reckless like me. Decided to microplane my romano over the pan at the end, was definitely rushing and definitely ended up shaving a bit of my finger off at end! Thankfully no blood ended up in dish and I'm ok. But yeah, those microplanes don't mess.
ANYWAY. This was a fantastic recipe, agree that you don't need garlic as I feel that would mess with the perfect balance of flavors you have here. Can't wait to eat my leftovers!!

How is this SO GOOD?! I’ve made it a few times now and every time it’s delicious, and it’s so easy and has minimal ingredients. It’s magic I swear.
This looks awesome! I remember going to the market during 2020 and there was NO pasta, beans, staple ingredients, etc. So glad things are available now, even though they cost a lot more.

I have a suggestion! As in eastern europe we eat pea stews a lot, try adding some (or a lot!) of dill next time!
Sometimes it's just that addition of the unexpected that really makes a dish. My Italian landlady used to add peas to scrambled eggs. Peas in eggs...who does that? Well, she did and it was delicious! This dish looks right up my alley. I love tomato paste so when I saw you add the whole can, I smiled. Here's another simple and budget friendly recipe I'll be trying. Thank you!

I made this yesterday. It was the first pasta I have allowed myself in 2 years of keto living. Boy was it worth waiting for. Creamy, almost like risotto, I also added a few leftover San Marzano tomatoes and some Passata to the broth. It took a lot longer to cook with the DiCicco pasta, but again, no problem! The results were amazing! Especially with a generous amount of black pepper and Pecorino. Frying the paste is a game changer. Thanks so much for this wonderful recipe!

This it the closest thing I've ever seen to my grandmother's pasta con piselli. Her version includes bite sized versions of the traditional beef/veal/pork sunday meatballs. Much appreciated.

I've been watching your videos for a while now and I had to jump into the comments to say thank you. My Nonna was an Italian immigrant and I grew up on her cooking. I miss it so much. Your Sunday Sauce recipe is almost identical to hers (she used neckbones and rib tips). I made it for my mother and she cried because it brought back so many memories. That's how close it is. I grew up eating pasta peas at least once a week. This is EXACTLY how she made it, I just wanted to jump on here and say thank you for bringing these recipes to everyone. Very grateful for that and I'll be making this later this week so my kids can experience it as well. Keep up the amazing work.

James mentioned that you previously added left over ground beef. I am making this today and I have a small piece of leftover ham that I am going to dice and add to it. I'm also going to take your word and resist the urge to add garlic. Here's a tip. Use a lid after you add the pasta and pes and it will go much faster

One thing I really appreciate about this channel is how accessible the recipes are. I now live in the Caribbean, so frankly a lot of recipe for Italian showcased by others channels just don’t work for me. But here I’m reminded of so many dishes I can make with my limited ingredients, even when I have to make minor substitutions here and there.

This has always been a family fav of ours. When my son was little he came in the door, took a good whiff of the dish while I was cooking it and said....ahhhh, the smell of joy. So almost 20 yrs later we dont call this pasta w peas. It is always called "the smell of joy." So simple but so delicious. Your son described it perfectly!

I just made this. It’s very good, easy and fast to make. I used Parmesan because I don’t like pecorino. A lot of the flavor of the dish comes from the cheese so make sure you buy a cheese that you like the taste of. I used a “middle” tasting Parmesan that isn’t so strong it overwhelms the dish.
My mom used to make this dish when I was a kid, I didn't like peas....her favorite thing to say was "give peas a chance" :)

I like when James gives those little side opinions, such as what is the point of just one tablespoon of tomato paste, just use the whole 6 oz can. I often thought the same thing, now I'm going to use the whole can.
Made this! As someone that cooks with a lot of spices and ingredients, I had a feeling this simple dish may pack a punch and it did!! My partner also loved it. Since it's just us two, I took the pasta off when it had a crunch to it which was perfect because it was al dente for our leftovers all week. Also enjoyed the fun shape!

I started prepping this recipe and discovered I was out of onion. I rehydrated a cup of onion flakes in olive oil and continued with the recipe. Obviously, the onion is a major ingredient, but in the end, this turned out pretty good. Next time, I’m going to use a walla walla sweet onion. Thanks for the recipe.

I have recently added you to my top five favorite UA-cam chefs to use recipes from. Thank you for posting them. Of the two I have tried so far you are 100% a crowd pleaser.
I make my pasta faggioli like this, all in one pot. But I grew up having "peas n' bast" made with elbows cooked separately, and I still make it that way 65 + years later! My "pasta fazool" is very creamy and this dish I make soupier. Another difference is I use fresh tomatoes in season or canned whole tomatoes and add the peas in at the last minute so they're still bright green when serving. Leftovers the next day are wonderful too and more closely resemble your dish first day. Absolutely only onions!
