Gotta say, this is one of the most homely cooking channels i've stumbled across. You're spilling all of nona's secrets and its grand. Cheers mate
"Homely" in its best, original meaning.
When ever I do something like this there's usually some egg and bread crumbs left over. I mix them together to make a patty, give it a quick fry, and top with sauce. "Egg-and-breadcrumb burger" -- good for breakfast, snack, whatever.

My grand father used to do that too but he would also add what ever meat,cheese, and vegetables he had laying around. Usually they ended up with diced red onion , mozzarella, salami and pepperoni. He would make them small like half the size of ur palm and one was more then enough.
We made a little loaf and baked it. Mom called it a “boobeta” but I don’t know if that was a real word or not.
My mother does that when makin cutlet it’s called bread patty it the best when the cutlet runs out 😂😂🇮🇹🇮🇹
My Italian Grandmother did the same thing!

There was this amazing Italian place in south Florida back in the late 2000s that my older brother and I used to visit together. They did amazing subs, they were big, and they were (for our income at that time) expensive. I was all about eggplant parm, my brother was chicken parm, and the staff were cool enough to accommodate us when we made a custom order for one half to be eggplant and the other half to be chicken. This let the two of us eat a really good meal (free bread at the table too, as always) for about 20 dollars total, tax and tip. One day, by accident, the kitchen got the wrong idea about our order. The result was a sub that was both eggplant and chicken parm the whole way through. Being good sports and not picky eaters, we didn't send it back or complain. We simply discovered that the combination of the two was better than either alone. This video gave me some nice nostalgia back to that time. Thanks for the video!

I grew up with my mom making chicken/eggplant combo Parmesan. But it’d be an entire rectangle casserole dish. Best thing ever. It’s the number one dish we’ve always requested to be made.

Born and raised in the NY metro area and recently moved away. This channel reminds me of all the delicious Italian-American cuisine from my childhood (and I'm not even Italian!) I made this chicken parm (and used the leftovers for a delicious chicken parm wedge the next day) and it feels like I'm right back home. In South Florida, there was a place called Vito's that called this heavenly mix "the Siciliano". I had to get it! It is hard to find this in most restaurants. There was one in Knoxville, oddly enough too that did it. They were family run, thankfully! Both places also had ricotta in there too. Cheese upon cheese! LOL I just can't get over the beautiful eggplants you continually use! Thank you James for recognizing perfection!

Wow, you were very lucky to have a Grandma who made a ton of Eggplant parma! One of my favorite all time dishes! I grew up with German dishes..and I adore all things Italian!

I am just launching my relationship with eggplant. Loved seeing you handle (slice, drain, dip, fry) this vegetable with such comfort and familiarity. Eggplant is a terrific vehicle to serve up all those wonderful Italian flavors. Happily my Mr. thinks it tastes just fine too.

Jim, do your neighbors just happen to drop by around mealtime? That's what used to happen when my mom cooked pasta. We didn't have AC in my childhood, so on warm days we'd fling the windows and doors wide open. My brother was friends with his classmate "B" who lived next door. B would get a whiff of my mom's sauce and invent some pretext to wander over. He'd say, "Gee, Mrs. R, whatever you're cooking sure smells good," and of course my mom would invite him to join us. The funniest part was, B's family had dinner at 5:30pm sharp every night, while we usually ate around 7:00pm, and B would put away TWO dinners with no problem!
I love that you include and interact with your children, it's so important, they will remember the rest of there lives.
Coming from an Italian/American family, this is right up my alley. Your food always reminds me of growing up and eating at my nana’s house. Love it.

I remember my mother cutting them up from top to bottom to get circles and put them in a colander overnight. To this day…I have never eaten eggplant parm that I enjoyed because the eggplant was too soggy. I just subscribed and look forward to seeing all your cooking videos!!

I have made chicken parm. I have made eggplant parm. I never would have thought of layering them together into a beautiful lasagna type structure. That looks like enough food for at least six people. I hope everyone was hungry!

Man I've been making a few of your recipes lately and my Italian family loves all the classic flavors. So many little tweaks and changes you can make and so much flavor. Made this recipe for my girlfriend's birthday. She said she doesn't like eggplant, now she can't get enough.
My Misen chef's knife is by far the best that I've ever owned. But, be careful when washing and drying it because it's extremely sharp. In the middle of making shrimp scampi when I first got it, I let the blade just graze my thumb and the next thing I saw was blood everywhere.

My grandmother is turning in her grave! You have to bread crumb the eggplant too. In fact, she had to make extra breaded eggplant because it was too delicious not to eat it before it made it's way into the parmesan. The combination of crunchy breading and soft creamy eggplant - I'm getting emotional.

I tried this recipe last night and I cannot rave about it enough. I like that the ingredients and prep is all organized at the beginning of the video because I had work and shopping to do prior to cooking. I always look forward to your wife and son's review as they are spot on with my taste too. This was definitely amazing so much so that I saved some for lunch and dinner again!
