Can u do more recipes like this please. Recipes that r very inexpensive but delicious. Idk what it is like in Oz, but here in the states alot of us are having trouble affording the food we r used to...cuz of the insain inflation...and it is getting worse by the day. So I know alot of us would love to see more food, like this one, that is delicious but very affordable. Thxs brother
Italien food is often cheap and easy to make. If people say that good food needs to be very expensive, they're lying or haven't learned how to cook properly. You will find lots of other cheap recipes like Cacio e Pepe or Aglio e Olio. A normal tomato sauce only needs cherry tomatoes (or canned tomatoes), garlic, basil, olive oil, pepper and salt. If you add more it will only taste worse. You will find lots of recipes on Vincenzos website.

L'hai spiegato perfettamente. Purtroppo la menta non è così facile da trovare qui in Puglia, ma il basilico va bene. Senza il "twist" purtroppo ma delizioso comunque. Il consiglio più importante è quello di "risottare" la pasta.

I like the recipe very much! Simple ingredients that are affordable even for a small budget. A vegetarian dish that makes it easy to avoid meat. Mint goes perfectly with it. But the real super ingredient for peas -> freshly mortared fennel seed!! This potentiates the pea taste into another dimension.
We had this growing up...but we had it with macaroni, not shells, and frozen peas. But grandma didn't use herbs... Just salt and lots of black Pepper. This is how my grandpa liked it.

I grew up on this dish and love it. My mother would sometimes make it with pancetta and a half cup of chicken broth. I never had it with mint. I will cook it this week. I don't know how I missed this video for so long. Bravo Vincenzo!
My mother used parsley, and it was cooked in one pot. First the onion, peas, parsley extra virgin olive oil and water. When the onion was soft she would add the raw pasta and serve when pasta was ready. And no cheese. I'll have to try it this way and with basil. Wonderful variation of the same dish. xx
@@nancyhagstrom4672 People ate that a lot in the depression. All in one pot. Cook everything up, add water to the pot, then the pasta. I heard people would turn off the burner when it came to a boil, cover and let it cook on its own heat to save gas.

Came back to this recipe, as I have home grown peas for the very first time ❤ I just picked a few the other day, to test them and blanched them in boiling water for a few minutes, then finished with salt and butter... omg, it was like I had never actually had real peas in my life! They were amazing! So obviously looking for a recipe for them to shine and whats better than pasta? 😎
Hello Vincenzo, as one of your fans, watched this video with interest because I used to make it often for my family. Never used this form of pasta before but will certainly try because it blends so nicely with the peas. I know you are not much of a fan of fresh garlic, but I promise you Vincenzo this is one dish where it REALLY adds to the flavour of the dish. You don't need a lot, just 1 clove chopped and added after onions. Once the pasta, pasta water and cheese is added.....Mmmmm!

Mint - hmmmm - sounds interesting and I will definitely try it. In my family, the herb of choice was fresh parsley sprinkled over the top - along with cheese AND pepper pepper pepper - of course!
To keep up the Jamie Oliver thing, he has a recipe for pasta and peas using orechiette and POTATOES - no kidding! As I cant eat cheese - which sadly limits my range of Italian pasta dishes - I think I would just use a bit more oil or add some pancetta or ham.

I have just made this dish for lunch. I found only a few leaves left for use on my dying indoor mint plant, but nevertheless it was a very fine and tasty meal. It should be easy with this dish to "sell" vegetables to children, here as "shells with pearls inside".

There are some vegan cheeses you can use. The flavor isn’t the same but they actually melt easier than dairy cheeses. I’ve also found luck using Garbanzo pasta, as the pasta water also contains proteins that act kinda of like egg white when it comes to thickening the sauce. I can’t taste the difference when it comes to short pastas, but longer ones are more brittle than wheat pasta.
Hello. Can this be made without cheese. Where I live, we have about 4 months per year when we should not eat things that come from animals. It is a religious tradition and it cleans the body. I hoped this is one of the pasta recipes I can add to the list to make in those months. One of them is Aglio e Olio, Eggplant pasta, Broccoli pasta, and I hoped this one, but this has cheese. I'm not sure if this would have any taste without cheese
I saw he responded to someone else asking about this, he said yes you can skip the cheese! I would maybe add lemon to replace the flavor, that's just me. But honestly the mint and enough salt will probably take it pretty far anyway, especially if the peas are good quality and sweet.

I love basil (of course) but for green peas there is nothing better than fresh mint. Or... Thai basil (which has a minty note too). And yes, small conchiglie or orechiette are perfect for this dish so that the peas can snugly fit in the pasta.

I hoped this is one of the pasta recipes I can add to the list to make in those months. One of them is Aglio e Olio, Eggplant pasta, Broccoli pasta, and I hoped this one, but this has cheese. I'm not sure if this would have any taste without cheese
I saw he responded to someone else asking about this, he said yes you can skip the cheese!
I would maybe add lemon to replace the flavor, that's just me. But honestly the mint and enough salt will probably take it pretty far anyway, especially if the peas are good quality and sweet.
What would you think of adding lemon to this?

I love basil (of course) but for green peas there is nothing better than fresh mint. Or... Thai basil (which has a minty note too). And yes, small conchiglie or orechiette are perfect for this dish so that the peas can snugly fit in the pasta.
