    Amazing vid taku! Trust me the halibut filleting never gets old. You are a master at filleting halibut. The ceviche looked unbelievable as always. Absolutely gorgeous presentation with that dish too. That has got to taste amazing.

    Taku, Dude,
    I'm in Southeast Alaska.
    The weather has been absolutely horrid this year.
    I've been watching yours and others youtube channels all winter. Needless to say, I've been really needing to get out and fish my kayak. Anyways, I finally got out on the perfect day. Not too cold, not too windy, sunny and mostly glass calm. I caught several Rockfish of decent size. Hooked into a halibut with medium gear. I got him to the kayak and grabbed the leader, 50# test, and "POP".
    Leader broke and the last thing I saw was a flash of white.
    I don't know exactly how big he was. I'm guessing 30 - 50 lbs.
    I died inside losing my PB of any species. A few minutes passed, I snapped out of it and caught a couple more rockfish.
    That's why it fishin and not called catchin. Anyways, felt I needed confession.

    That could be named "Ceviche Nikei", we have some dishes like that here in Peru and it's actually delicious but I do prefer the traditional peruvian ceviche!! By the way, nice fillet skills!!! A big fan of your work!!

    Taku, this is sorta like a tiradito, a type of ceviche in Peru, popularized by Nikkei (Japanese-Peruvian) cuisine. Usually they would add the citrus into a pepper sauce made with south American pepper varieties in the Capsicum baccatum genus (nearly impossible to find fresh in the US, but you can find as a paste, canned, pickled). But the definition for a proper tiradito is very loose. Oh and the fish isn't marinated for too long, often served right after topping it. I feel like you would make a killer tiradito with like a California Sheephead or striped bass.

    I'm from Florida....I proposed to my wife under a cherry blossom tree at "The Cherry Blossom Festival" in Macon , Georgia. They have the festival every year in March.....you would enjoy it! Would love to see y'all there!

    I could watch u fileting fish all day especially w that beautiful sharp knife 🔪 the respect u have for the fish and how little u actually u don't use because u don't waste food is amazing u are one of my top channels to follow in UA-cam u should definitely meet up w Robert from deer meat for dinner u 2 would do some amazing collaboration and can't imagine the food u 2 could make and he may just take u hunting would be epic

    First off great video , enjoyed it alot. Second you've been working really hard taku between the weekly content and the movie, perhaps just a vacation with just you and jocelyn (sorry if i misspelled) without cameras. Id personally take comfort in knowing both you and her get some nice down time with all the hard work and time you are putting into youtube. Also your intro on the sakura sounded beautiful (possibly good enough for a youtube video if you go back to japan on a certain other channel you have)

    Completely different take on civeche that I make but I'd like to try that. I mostly use striper or shrimp, I cube the fish or shrimp and marinade for a few hours with salt lime and pepper. Drain the juice off and mix in cabbage, cilantro ,cucumber, tomatoes,and jalapeno or serrano all diced up aswell. Mix and serve on tostada shells. I like mine with some hot sauce. Enjoy!

    ive been subscribed to Bokksu for over a year now, and its awesome. i bought other monthly snack box things and they were usually cheap and pretty shitty overall. you can tell bokksu is different and theres always one or two things in each box that are unique to anything ive ever tasted before. that shit is amazing

YET... many are preferred from japan... perhaps my favorite chef upon current internet.. scallops and clams are my favorites... i do love the fish...     It might have been interesting to place the slices of fish on top of a bed of chopped cilantro. That looked glorious though. When the second fish hit I was thinking it had nailed the 12 inch smelt. It never gets old watching someone expertly using a knife.

    As much as I love halibut, I often see 2 many parisites when cleaning them to ever eat it raw without making it a frozen sushi grade first

    I grow a cucumber call Diva that is considered seedless and has a thin skin with no bitterness. I love it in my white guy sushi, and just about everything else I cook. Love your videos Taku.

    I love ceviche and sashimi..... so this seems like the best of both worlds. I might choose a less spicy pepper-- while I like some heat, a jalapeno is certainly closer to my tolerance level.

    Have had something similar in Lima Peru. Quite a bit of asian influence in Perú. Had a plate with uni to accompany.
