One Pot Wonder with chicken and chorizo | My go-to winter dish that's super easy!

  • I love this dish. One pot, delicious chicken and chorizo, and whatever vegetables you have lying around in your fridge. This video has no set recipe, it's more about the technique. You can swap out the chicken for fish or just veggies. Once you have this technique down, the options are endless. Give it a go and let me know what you think.

I absolutely love this guy. I love that he's using ingredients that are found in the average household that look exactly like what I have in my fridge. Wilted Brocollini, Canned goods and the few things we often buy to make a dish at home.

Really appreciate how you show people to make a nice meal with what they already have, you are encouraging people to be okay with not having a recipe but to trust their instinct. That's the way I learned to cook.

You’ve got my vote Andy. I’m such a firm believer in reducing food waste and mixing it up with leftover ingredients. Their’s nothing you can’t achieve with your random ingredients if you’ve got a few pantry essentials. And they don’t cost an arm and a leg either. This is a brilliant video. Thank you

Hi Andy, I've watched lots of your short videos lately, they keep popping up in my feed and I absolutely love them. Thank you for all the love for cooking from scratch and eating well, you put in them.
So here I was looking for one pot meals and there was a familiar face coming up. After 5 minutes into the video I just had to leave a comment. It's so nice watching a cook show where the host tells the audience to check the larder and prepare what they have got. Sounds more like a realistic situation and makes a lot of sense to not let things go to waste. I'm 60 y/o and this is how I was raised, how grandma and mom taught me how to cook - see what you have and make a good meal of it. Well, actually, they didn't really teach me, I learnt by watching, helping and doing things the way they did. Cooking is something that requires all of our senses plus an additional one - knowing how to make ends meet. At present, with the groceries getting more and more expensive, it does make a difference when we make good use of what we've bought.
So, thumbs up for your videos. Please, keep them coming, they are very much appreciated. All the best from the Bavarian alpine region🙋🏻‍♀ Lisa

I have to say, I love the lack of arrogance in these videos. So many cooking channels (many of them by amateur cooks) adopt a style where it feels like the cook is an unquestionable source on everything he (most often a he) says with an absolute knowledge on every matter at hand, and that's just not true for any cook in the world.

50 years ago in a student share house we must have been genius cooks because this is what we did all the time. Remember, we were all not long out of home and had virtually no cooking experience. We threw a bunch of what we had into a pot until it looked promising and tasty (usually fairly heavy with the onions, garlic, carrots and canned tomatoes ) and always cooked some rice to eat it with. The added protein was often canned tuna. We’d pad it out with whatever veg we’d picked up cheap from the local market and throw in some of the oregano growing wild in the back garden and spice it with salt and pepper. My 21 year old son, still at home, makes similar stuff when he cooks for himself but he also uses lots of chilli. He must be a cooking guru as well!

I have been cooking this kind of winter comfort food for years, as Chef Andy says it’s simple, healthy and tasty plus indeed uses up old veg in the fridge. You could also add carrots, celery, eggplant or whatever you have.
In winter I would also serve this possibly with polenta, pasta or even couscous (if I had used cumin, corriander and paprika, or turmeric. If you wanted it more italian/spanish/french than probably you would use herbs like oregano, basil, thyme, rosemary. It’s cooking so versatile.

Also, my family loves sun dried tomatoes, marinated artichoke hearts and black olives added to some creations. I love one pot meals for our camping/RV trips. Canned and fresh veggies plus fresh or thawed chopped or ground meat can provide a variety of meals for a couple or a family when cooking on a camp stove. Clean up is easy. Beautiful video and perspective. After 15 years in professional kitchens, I can attest that covid made me come to terms with my home cooking ability.
    Thanks chef!
