@Stephen Martin Gordon was using chicken stock yeah but beef stock works fine. It's really up to whether you want it to taste like a stew or soup. Beef stock always has a very distinct stew taste that is hard to mask with seasoning. While chicken stock is really easy to hide and absorbs into rice a lot better.

    Recipe: Coconut Meatballs
    Ingredients:
    Onions
    Garlic cloves
    Olive oil
    Salt
    Pepper
    Minced beef
    Dried chili flakes
    Bread crumbs
    Milk
    Coriander seeds
    Cardamom seeds
    Turmeric
    Pinch of cinnamon
    Dried chilies
    Lemongrass
    Fresh ginger
    Chicken stock
    Coconut milk
    Lime zest
    Fresh lime juice
    Instructions:
Heat a pan over medium heat and sweat off finely chopped onions and sliced garlic in a tablespoon of olive oil.
Season the onions with salt, pepper, and dried chili flakes. Cook for about 2 minutes.
In a mixing bowl, combine minced beef, bread crumbs, and milk.
Mix well until you achieve a slightly doughy texture.
Add the seasoned onions, garlic, and chili to the bowl with the beef mixture. Mix thoroughly with your hands.
Shape the meat mixture into golf ball-sized meatballs, ensuring they are tightly packed.
Wipe the pan used for cooking the onions, but do not wash it to retain the flavor.
Heat the pan over medium heat with a touch of olive oil.
Gently place the meatballs in the pan and cook them until browned on all sides.
In a mortar and pestle, crush coriander seeds and cardamom seeds. Add them to the pan with the meatballs.
Add a pinch of turmeric, cinnamon, dried chilies, smashed lemongrass, and thinly sliced ginger to the pan.
Pour in chicken stock and bring it to a boil. Then, add coconut milk to the pan, ensuring it is just underneath the top of the meatballs.
Check the seasoning and adjust if needed.
Simmer the meatballs gently for 8 to 10 minutes until they are cooked through and tender.
Sprinkle lime zest over the meatballs to add a fresh contrast to the richness.
Squeeze fresh lime juice over the meatballs to enhance the flavors.
Serve the meatballs generously with the coconut broth, tilting the pan to ladle a good amount of the broth onto the plate.
Enjoy these delicious coconut meatballs, which have a modern twist on an old-fashioned recipe. They can also be cooked from frozen.
    Shopping List:
    Onions
    Garlic cloves
    Olive oil
    Salt
    Pepper
    Minced beef
    Dried chili flakes
    Bread crumbs
    Milk
    Coriander seeds
    Cardamom seeds
    Turmeric
    Cinnamon
    Dried chilies
    Lemongrass
    Fresh ginger

For those complaining that these recipes aren't simple: it's important to remember that these videos were kinda made for foodies/home cooks, so they're designed under the assumption that the viewer has spices at home, as well as other non-perishable kitchen essentials like breadcrumbs, canned coconut milk, etc. If you're someone who cooks once a month then these recipes will be really expensive because you'll be forced to go out and buy the essentials.

I made a few already lol and the meatball one honestly for any mexican it looks alot like caldo de albondigas which is basically a meatball soup and inside you can put a boiled egg or with rice inside but it's more of a soup because its spicy af and delicious lol

I didn't know how to cook till 50 yrs old. Basically hated cooking. Then came a day I had to do . Watched a GR you tube video. Prepared . The rest is history. Two years gone. Now I think I have mastered cooking. Thanks GR

You're awesome! Would love to take some cooking classes from you someday. Wish I can find some of the ingredients you use. I've been looking for mascarpone for months 😂

0:39 Tablespoon of olive oil - Pours half a bottle in the pan

    • @ivannovak5987
      @ivannovak5987 3 роки тому +13

Yeah, and he also adds, "Table spoon only". Even in other videos when he says, "Drizzle (something) lightly with olive oil" he pours half a bottle on that. But almost every cook uses way too much oil...

      @sortathesame8701 3 роки тому +2

You can’t use too much olive oil! It is so good for you that in Italy they drink a tablespoon or two every day, on top of what they use for cooking!
