haha yeah i thought that was kinda weird. when i think of peanuts, popcorn does not come to my mind. (and vice versa) pretty sure it was all that ghee!

We need more Priya videos! Recently found her and tried to binge her videos but there weren't enough for a full binge.
If you added turmeric powder while sautéing along with chana dal and some cilantro and some extra lemon, it is lemon rice.

That Santa story was the most wholesome thing I’ve heard all year
I remember when I did my first food flip in a hot pan. I was like 15 years old, working as a dishwasher for a guy who was, spoiler alert, a complete a**hole. I had a load of dishes going and all his chefs were busy so he comes back to the little grandma stove in my area and puts on a side of mushrooms on searing high heat. Then like 2 minutes later he shouts back "KID! FLIP THE MUSHROOMS!" I thought, this is my moment to become a chef, so I start looking around and the guy shouts "I DIDN'T TELL YOU TO LOOK AROUND! I SAID 'FLIP----THE----MUSHROOMS!'" "But I don't have a spatula!" "I SAID FLIP THE F**KING MUSHROOMS RIGHT F**KING NOW!" So, I grabbed it and thought back to Food Network and flipped them.
I felt so proud when I didn't come out with third-degree burns.

I feel the key to the pan flip is just to go in with confidence. If you choke even a little bit the chances of flinging your food all over the place go up exponentially. Also having a properly non-stick pan with nice sloped sides helps a lot. I've tried it in a cast iron pan with nearly vertical walls and it's very difficult. In that circumstance you almost have to launch it vertically like flipping a pancake.
Confidence is key, just like with dough.

One way one of the chefs i worked for showed me how to the pan sauteing flip. Was the motion of tilting the pan down then up and back(pull back towards you). So down,up, and back. So it feels like a fluent and natural motion. Basically creating a circle motion. Our bodies likes to create and do fluent motions and thats one thing ive learned and have been taught working in the kitchen. If you pay attention to knife skills as well is fluent and smooth the up and down and back and forwards. And stirring. Its all basically circles in different degrees.

Made this last night - it's outstanding (esp. when I added more lime juice & salt). And, despite Priya's enthusiasm for ghee, I expect it will be almost as good with easily half the amount of ghee. Which I will test soon enough.

I just feel such a kinship with Priya. I'm also the daughter of Indian immigrants raised in Dallas, Texas. I love cooking and my recipes are heavily influenced by my mom's Indian cooking and the Tex-Mex I grew up around. So nice to feel represented 💕
