These pineapple tarts have an ultra buttery, melt-in-the-mouth pastry crumb that gives way to a sweet and tangy, delicious pineapple jam filling. The pastry comes together easily - no creaming needed!
Why these pineapple tarts are so delicious
Ultra buttery! So, if you don’t know it yet, I love buttery, buttery pastry. And this pastry gives you that rich, sweet buttery flavour in every tart!
Tender, melt-in-the-mouth crumb. Biting into these pineapple tarts are going to be like love at first bite. And let me warn you, they’re highly addictive! One of my top goals in this recipe update was to make a shortcrust pastry that’s tender and more melty!
Golden Pineapple Tarts (57pcs recipe)
Ingredients:
For the filling:
312g pineapple jam, store-bought or home cooked
For the pastry dough:
140g Unsalted butter
15g Ghee clarified butter
190g All-purpose flour
1 egg yolk
20g corn starch
20g custard powder
25g milk powder (35g is for extra Milky flavor)
35g icing sugar
1/2 tsp Vanilla essence
1/4 tsp salt
For egg wash:
2 egg yolks
1 tbsp water
1 tsp oil
1 tsp condensed milk

粉皮 9克
黄梨馅 312克
饼皮
190克 中筋面粉
20克 玉米粉
20克 卡士达粉
35克 糖粉
25克 奶粉 (35克奶酥味浓郁)
半茶匙 香草精
1/4茶匙盐
140克 无盐黄油
1 颗蛋黄
15 克 酥油 ghee oil
蛋黄液
蛋黄 2 粒
1 茶匙油
1 茶匙炼乳
1 汤匙 水

可以的(用玉米淀粉代替),只是金球酥的颜色做出来会比较苍白

Yes you can make it 11g to 12g pastry (just add additional 1/3 of the ingredients) , final baking time can extend for another 5 to 8 minutes or until lightly golden 😊

Hi, once completely cooled, store the pineapple tarts in an air-tight container and seal tightly. The tarts will keep well for up to a month in a cool, dry area😊

@@PuppyTheGreat356 if it's from refrigerator Preheat your oven to 350°F (180°C). Place the tarts straight onto the oven's wire rack or a preheated baking tray. Warm the tarts for 5 minutes. Remove the tarts from the oven and serve them immediately 👍

Both is works in this recipe you can use 25 grams or If you like more milky flavor can use 35 grams of milk powder.
Total Baking Time :
Preheated oven
1st bake 160 degree celsius for 15 minutes.
After 2nd layer egg wash 160 degree celsius for 15 minutes or until light golden brown.
