Hello Rachel, I've been passionate about Mexican cuisine for most of my life, I attended SF City College for culinary arts. I've lived in different parts of the country throughout my life. However, I've lived in southern California for most of my life. I was born in Mexicali, Mexico, in the late 70s and moved to the US in 1989. I love mexican food, I love enchiladas, and I make my enchiladas in a traditional way (traditional to the center states of Mexico). When we first moved to the US, we used to have this nice lady as a neighbor. She was originally from Texas, and she used to make a very similar enchiladas sauce to yours. She used to always call me to offer me some of her delicious enchiladas every time she made them. We moved away after about a year, and I never saw or heard about this lovely lady again. Of course, I never had them enchiladas again. I never forgot the taste and smell. I recently came about your video, and I decided to give them a try and voila! It was exactly the taste and smell that I remembered well. Everyone in my family loves them, I,only just started making them about a week ago, and I've already made 3 batches. That's how much I love them! I feel like i found a valuable childhood memory. Thank you so very much! Delicious!!!

She passed a few years back and I can never get her sauce exactly like she had it but now you have helped! I believe your delicious looking sauce is very close to hers. My father worked for "El Chico" restaurant chain for years when I was growing up. He traveled all over Texas and Mexico as far down as Monterrey/Saltillo area. He always said the best enchiladas in all of Mexico were actually in Texas and Northern Mexico and cooked by the Grandmothers in a home kitchen. When the trendy enchiladas started being a 'thing' he would laugh at them. You know the ones, the "spinach tortillas filled with blue goat cheese and sprinkled with macadamia nuts." All that craziness would make him furious. LOL. He would be proud of you for holding down the tradition! He would love your enchiladas I can almost hear him say "¡Well done, Mija!

I’m in Texas too…Houston area!! We went to El Chico often, many time’s on a Friday evening. My uncle Johnny was the manager at one of the locations! I miss those days!! ❤️
@@cindyannefontenot ~ My family is from Dallas, my father began working for El Chico in the 1960's. Abuela Cuellar was still alive then (the matriarch of the business). I went with my father on his business trips a few times to 'drop in' on the restaurants. I remember the Houston one and the San Antonio one. I always will remember the feeling of entering an "El Chico" back in those days. The delicious smell, the low lighting and the COLD air conditioning (in a time when few of us had A.C). Just think, a whole food dynasty was born from a tamale stand just outside the State Fair of Texas gate.

Thanks for sharing some great information! Your cooking reminds me a lot of my grandmother's who was from Mexico. I've done several of your recipes and know if she was still around, she would be proud. I'm like you. I love being in the kitchen and to me it's my favorite place. I love cooking for family and friends and letting them taste real authentic food.
As a Native Texan, I can confirm that this is the correct way to make enchiladas, as well as the proper way to pronounce enchiladas. Do not skip any steps and AFAIAC, the onion is mandatory.

I added some diced mild green chiles to the filling, along with sweet onion, and my husband was utterly silent as he quickly cleaned his plate and made room for seconds. Best enchilada sauce ever! Thank you. I did the filling with black beans, corn, jalapeno pepper and cheese and I substituted vegi broth instead of chicken. Absolutely delicious. I have tried so many different enchilada sauce recipes and yours is the best without question!

This reminded me of my mom's enchiladas...I'm definitely gonna try.. My mom was raised on a farm south of San Antonio and didn't learn about Mexican food til she married my dad..it was my paternal grandmother that taught her and all the ladies at our church ⛪️...that was around the middle 60's...I am now 70, my family have all passed so I occasionally will cook from her recipes I was able to write before she passed...I just love your techniques, a REAL TEACHER ❤️‼️
I have not tried your enchiladas yet but natural experience tells me they are the best on the planet.... I do LOVE your enchilada sauce.... The best kept secret of this recipe is that it is fairly economical because of the ingredients.... rice, beans, a flour tortilla and the most expensive ingredient being cheese.... AWESOME ....

I cooked this today except I used fresh onion and garlic instead of powder. Omitted the bouillon using chicken stock. It was amazing! Frying the tortillas kept them from tearing. Thank you!

So glad I found this recipe for the sauce. We used to have enchiladas every Saturday cooked by Sergio. One day he was just gone and the place was closed. I was under the impression he put peanut butter in his wonderful sauce, but maybe it was the way he cooked it that made it nutty tasting. I can't wait to cook this sauce! You make it look so easy!
@@lavenderlamp no it looked like a chili sauce. This sauce is most like it. I added peanut butter but still missing something. It wasn't spicy at all. I'm going to add vegetable base to it next time. He made everything from scratch. I now make enchiladas once a week and keep playing with it lol. It never tastes bad no matter what I add lol! I have found bone broth is much more flavorful.
My father was in the Army stationed at Ft Bliss. We would go over to Juarez to get genuine Mexican cuisine and to shop. Wonderful food! Best time of my life! Best food of my life! I really miss it there.
I am still stunned how delicious this was/is! I am so full because I kept frying tortillas and cleaning all the sauce off my skillet with them while anticipating the baking dish of amazing smells. I’m rewatching this and I just have to say that we love this recipe and I’ve made the beef enchilada casserole quite a lot. The sauce is so good that my kids and husband love it when I make the sauce and cut the tortillas in wedges and fry them. We use the sauce like a dip. You’re a wonderful instructor.

Growing up in southern California, this is exactly the way I learned to make cheese enchiladas. I always thought Tex-Mex and Cal-Mex were quite different, but at least for this recipe they're the same. They look yummy!
Rachel, the first video I saw of yours was the puffy chicken tacos! We are more beef eaters in this family but I thought “sure I’ll try these”. OMG they were mouthwatering!! My daughter, her friend and I just looked at each other, our mouths full like “what is happening in our mouths right now?” Fast forward to this video…great instructions but the ending is priceless. Watching you eat your own food and loving it just adds another level to your videos!!
My very first cheese enchilada was back in 1972 in San Diego . I was in the Navy. My shipmate took me to a small Mexican eatery downtown. It was so amazingly delicious ! To this day I remember how tasty the sauce was. I’m going to try making the sauce and see if it brings back memory of my first cheese enchilada .

Lovely video. My mother only taught us to make stacked enchiladas. She was raised in Arizona and New Mexico and brought her mom's recipe with her to Canada. Stacked enchiladas add shredded lettuce between the layers. Tortilla, sauce (with hamburger), shredded lettuce, cheese, chopped onions, and repeat. Sometimes they were made into a casserole, but most often individually on Pyrex plates, placed in a 350 oven for 15-20 minutes for individual ones. Children can eat 1 - 2 layers and most adults can eat 3-4 layers. I like mine with a fried egg on top.
Rachel, I’m still in the same Texas town where I was born and raised, and Tex-Mex enchiladas are part of every day life around here. We’re in the Houston area and grew up going to Ninfa’s for the recipes of Mama Ninfa. So good! Your recipes, so far, pick up that vibe and more! I was always a little jealous of my friends who had Tia’s who would make tamales, enchiladas and much more! I’m just so glad they shared. 😁 You are that sweet Tia when you put on your apron and invite us into your kitchen! Feels like we’re right there with you. ❤ My Mom and aunts all cooked together as well and we always had wonderful southern food. The best! Yaaasss! These are my favorite the red enchiladas with cheese and onions. I use cheddar cheese though. Sometimes when I'm craving them and can't wait I wind up making stacked enchiladas and they are just as delicious.
Natural born critic here…I thoroughly enjoy these helpful hints on Mexican cuisine because my mom made ALL the same meals unfortunately I didn’t get Every single recipe but 95% before she quit cooking at age 85…. I’ve ran my own BBQ restaurant and LOVE experimenting and learning secrets ….the only critique is I once learned a Cajun Gumbo recipe and my friend was selling it frozen thru a local grocery store he would ALWAYS boast while we sampled and drooled eating it …saying isn’t that good ? Again these are very close to home authentic recipes passed down so few people actually have been lucky enough to enjoy…people generally watch about 8 to 10 min before clicking off but tighten up the clock resist half to 3/4 of the compliments …(its more a nervous energy simple fix) I’ve trained hundreds of workers to make my recipes in 5 to 10 min increments….also your fan is squeaky….love AL

I'm not a very good cook. I actually made enchiladas yesterday. I added chicken, beans and spinach just so we can use them as meals containing protein. However I used canned sauces and spicy tomatoes sauce. I also used shredded Mexican mix cheese. It looked so good but it was ridiculously salty. I'm so going to use your recipe from now on. Thank you for making it easy for challenged cooks like myself. I can do this!!!!! My husband will love you forever.

I like the way you toasted the chili and added paprika and sugar. You only fried the tortillas on only one side and patted dry extra grease with an napkin. I serve them one plate at a time from the mircowave. My mom use to make the sauce also out of blended beans. Thanks

This is exactly the same way my grandmother made enchiladas, but when she didn't have tomato paste she would use tomato sauce, I still make them like her, except I like the combination of American cheese on the inside and Mexican blend cheese on the top, I find that to be excellent
Every Wednesday most of the 8 different schools I attended in San Antonio, the cafeteria would serve a home-style meal of cheese enchiladas, Mexican (aka Spanish) Rice, refried Pinto beans, and cornbread! Yum!

My father worked for "El Chico" restaurant chain for years when I was growing up. He traveled all over Texas and Mexico as far down as Monterrey/Saltillo area. He always said the best enchiladas in all of Mexico were actually in Texas and Northern Mexico and cooked by the Grandmothers in a home kitchen. When the trendy enchiladas started being a 'thing' he would laugh at them. You know the ones, the "spinach tortillas filled with blue goat cheese and sprinkled with macadamia nuts." All that craziness would make him furious. LOL. He would be proud of you for holding down the tradition! He would love your enchiladas I can almost hear him say "¡Well done, Mija!

I’m in Texas too…Houston area!! We went to El Chico often, many time’s on a Friday evening. My uncle Johnny was the manager at one of the locations! I miss those days!! ❤️
@@cindyannefontenot ~ My family is from Dallas, my father began working for El Chico in the 1960's. Abuela Cuellar was still alive then (the matriarch of the business). I went with my father on his business trips a few times to 'drop in' on the restaurants. I remember the Houston one and the San Antonio one. I always will remember the feeling of entering an "El Chico" back in those days. The delicious smell, the low lighting and the COLD air conditioning (in a time when few of us had A.C). Just think, a whole food dynasty was born from a tamale stand just outside the State Fair of Texas gate.
I've watched a lot of cooking channels on UA-cam, and yours are truly the best in my opinion. I really like how you educate you subscibers as to why things are done a certain way too. Thanks for sharing some great information! Your cooking reminds me a lot of my grandmother's who was from Mexico. I've done several of your recipes and know if she was still around, she would be proud. I'm like you. I love being in the kitchen and to me it's my favorite place. I love cooking for family and friends and letting them taste real authentic food.

As a Native Texan, I can confirm that this is the correct way to make enchiladas, as well as the proper way to pronounce enchiladas. Do not skip any steps and AFAIAC, the onion is mandatory.

My mom was raised on a farm south of San Antonio and didn't learn about Mexican food til she married my dad..it was my paternal grandmother that taught her and all the ladies at our church ⛪️...that was around the middle 60's...I am now 70, my family have all passed so I occasionally will cook from her recipes I was able to write before she passed...I just love your techniques, a REAL TEACHER ❤️‼️
I have not tried your enchiladas yet but natural experience tells me they are the best on the planet.... I do LOVE your enchilada sauce.... The best kept secret of this recipe is that it is fairly economical because of the ingredients.... rice, beans, a flour tortilla and the most expensive ingredient being cheese.... AWESOME ....

I cooked this today except I used fresh onion and garlic instead of powder. Omitted the bouillon using chicken stock. It was amazing! Frying the tortillas kept them from tearing. Thank you!

So glad I found this recipe for the sauce. We used to have enchiladas every Saturday cooked by Sergio. One day he was just gone and the place was closed. I was under the impression he put peanut butter in his wonderful sauce, but maybe it was the way he cooked it that made it nutty tasting. I can't wait to cook this sauce! You make it look so easy!

@@lavenderlamp no it looked like a chili sauce. This sauce is most like it. I added peanut butter but still missing something. It wasn't spicy at all. I'm going to add vegetable base to it next time. He made everything from scratch. I now make enchiladas once a week and keep playing with it lol. It never tastes bad no matter what I add lol! I have found bone broth is much more flavorful.
My father was in the Army stationed at Ft Bliss. We would go over to Juarez to get genuine Mexican cuisine and to shop. Wonderful food! Best time of my life! Best food of my life! I really miss it there.
I am still stunned how delicious this was/is! I am so full because I kept frying tortillas and cleaning all the sauce off my skillet with them while anticipating the baking dish of amazing smells. I’m rewatching this and I just have to say that we love this recipe and I’ve made the beef enchilada casserole quite a lot. The sauce is so good that my kids and husband love it when I make the sauce and cut the tortillas in wedges and fry them. We use the sauce like a dip. You’re a wonderful instructor.

Rachel, the first video I saw of yours was the puffy chicken tacos! We are more beef eaters in this family but I thought “sure I’ll try these”. OMG they were mouthwatering!! My daughter, her friend and I just looked at each other, our mouths full like “what is happening in our mouths right now?”

My very first cheese enchilada was back in 1972 in San Diego . I was in the Navy. My shipmate took me to a small Mexican eatery downtown. It was so amazingly delicious ! To this day I remember how tasty the sauce was. I’m going to try making the sauce and see if it brings back memory of my first cheese enchilada .

Lovely video. My mother only taught us to make stacked enchiladas. She was raised in Arizona and New Mexico and brought her mom's recipe with her to Canada. Stacked enchiladas add shredded lettuce between the layers. Tortilla, sauce (with hamburger), shredded lettuce, cheese, chopped onions, and repeat. Sometimes they were made into a casserole, but most often individually on Pyrex plates, placed in a 350 oven for 15-20 minutes for individual ones. Children can eat 1 - 2 layers and most adults can eat 3-4 layers. I like mine with a fried egg on top.

Natural born critic here…I thoroughly enjoy these helpful hints on Mexican cuisine because my mom made ALL the same meals unfortunately I didn’t get Every single recipe but 95% before she quit cooking at age 85…. I’ve ran my own BBQ restaurant and LOVE experimenting and learning secrets ….the only critique is I once learned a Cajun Gumbo recipe and my friend was selling it frozen thru a local grocery store he would ALWAYS boast while we sampled and drooled eating it …saying isn’t that good ? Again these are very close to home authentic recipes passed down so few people actually have been lucky enough to enjoy…people generally watch about 8 to 10 min before clicking off but tighten up the clock resist half to 3/4 of the compliments …(its more a nervous energy simple fix) I’ve trained hundreds of workers to make my recipes in 5 to 10 min increments….also your fan is squeaky….love AL

I'm not a very good cook. I actually made enchiladas yesterday. I added chicken, beans and spinach just so we can use them as meals containing protein. However I used canned sauces and spicy tomatoes sauce. I also used shredded Mexican mix cheese. It looked so good but it was ridiculously salty.

I like the way you toasted the chili and added paprika and sugar. You only fried the tortillas on only one side and patted dry extra grease with an napkin. I serve them one plate at a time from the mircowave.

This is exactly the same way my grandmother made enchiladas, but when she didn't have tomato paste she would use tomato sauce, I still make them like her, except I like the combination of American cheese on the inside and Mexican blend cheese on the top, I find that to be excellent
