  • ■ If you live in a drier State you might have to use less baking powder and shortening, if you feel them a little hard, then use only 1/4 tsp baking powder and 2 Tbsp shortening...try which works best for you.❤
Tortillas are a sure thing in most Tex-Mex cooking, they are a great accompaniment to almost any dish and are the basis for soft tacos and burritos, and are a must for sopping up. Homeade flour tortillas are superior to store bought, they are rolled with a rolling pin and baked on a comal (flat griddle) one by one. Tortilla techniques can be mastered with practice over time. Five basic ingredients make the best flour tortillas; flour, shortening, baking powder, salt and water, and one of the best tips for making the BEST flour tortillas is to let your dough rest 15 to 45 minutes before rolling. Flour tortillas can be refrigerated for days without little or no loss of flavor.
    INGREDIENTS
    3 C. All Purpose Flour
    1/2 tsp Baking Powder
    1 & 3/4 tsp salt
    3 Tbsp shortening
1 C. hot water (not to burn you)
    ■ Depending on where you live, you might have to make an adjustment with baking powder and shortening if they are a little hard on you...use 1/4 the baking powder istead of 1/2 tsp and 2 Tbsp shortening instead of 3...I adjust between Texas and Ohio. ❤

Rachel.. I was 5 years old when I learned to make masa. By the end of the year, my chore after school was to make 1 dozen tortillas for supper, every day! By age 6 I could spin out tortillas like you do now, and they no longer looked like Texas or Florida! Then I'd go to my grandma's and make two dozen for her about 3x a week I loved it, I learned Mexican cooking very early in life, and it served my own family well when I married and had my own children. I'm 73 now, widowed, but occasionally cook for my precious son in law, that loves Mexican food, especially tortillas, beans , rice, carnes con chili. God is good! Once more a great show! Thank you!.

I once asked my friend how she made her tortillas so soft and delicious. She said, "If you think mine are good you should try my mother's." I asked what was her recipe. She said, " It's the same, but Mom thinks about her children while she cooks."
Rachel, you are lovely. You do cook with love. Thank you.

I'm a 60yo Hispanic male. I once told my mother that I wouldn't het married until I found someone that could make tortillas like her. She laughed and took my hand and led me to the kitchen. She told me that she was going to show me how to make tortillas because I wouldn't find anyone that could make them like her. I never married but you make tortillas like my mother taught me. I may use 2 tsp of baking powder because I like a little more rise in my dough. Great video.

Thanks to Rachel and her videos, I've learned to make my husband's favorite breakfas t , Huevos Rancheros! It took a couple of tries for me, but he says they're wonderful. I watch all her videos and although I'm 74 now I'm ready to keep learning, it's so hard to cook for one person, because it's just me and my little dog. When married I had a husband and children so I cooked in large amounts. Now it's just me unless I can share with someone.

When I was in college, my boyfriend invited me to visit him and his family over spring break. He lived in a town north of Chicago, and his last name was an ordinary American name. So I was surprised when I went into the kitchen and his mother was making tortillas from scratch. I was fascinated since I had never even eaten a tortilla, much less seen how they were made. She told me that she was born in El Paso, Texas, she was bilingual (Spanish and English) and had been making tortillas since she was a child. I wish that I had paid more attention at that time and asked her to teach me more about Mexican cooking. I married her son, but we lived in Georgia and they moved to L.A. so we didn't get to visit again. Thank you for teaching me to make tortillas as authentic as my late mother-in-law would have done.

I did it!!!! I DID IT!!!! I MADE good tortillas! If it were physically possible, I'd do cartwheels!
I tried it yesterday and they were like hockey pucks. Dough looked great till I rolled it out. After MUCH thought about what went wrong, I realized they needed to rest again after I made the balls.
I don't know if it's because I'm in Northern Utah and it is DRY and high altitude. But today, after letting them rest for an hour between steps... I DID IT!!!!
Thank you so much Rachel! This has been a goal of mine for years. I bake bread all the time and just couldn't figure out why I couldn't get these right!
    Yippppeeeeee!!!!!

I find it interesting how so many cultures have created family traditions around bread items. My Granny used to fix biscuits from scratch and when they were fresh out of the oven, she would hand me one filled with a dollop of butter & send me out to play. Fond memories. Thank you for bringing that memory to mind after so many years have passed. Also the little bit if dough you had left that you set aside reminded me of my Granny as well. When she made biscuits, she would have a tiny amount of dough left. She would make a tiny biscuit that she said was just the perfect size for 5yr old me. Gosh, I'm tearing up. Good memories, thank you again. I'm in my 50's & my Granny has long passed, so it's nice to remember those little things that she & I shared. She helped raise me, so we were very close. I love your recipes, just subscribed.

My grandma passed away when I was young after being sick for many years and I was not raised with my mother for many years. I never learned to cook Mexican food till late in life. Coming from a family of terrible Mexican cooks I never learned to cook the food of my culture. I had to learn on my own mostly from fine chefs on You Tube like you who generously share family recipes tips and tricks on how to prepare traditionally and properly real Mexican food. You are doing a service to us all we must not let our culture die and there recipes disappear. Thank you.

Rachel, I enjoyed this recipe with you because I have been making tortillas since before I was ten years old and my elbows went down into a deep bowl. I made them daily for ten people so they stacked high on the table. We were poor so we ate refried beans and tortillas often and never got tired of them even today and I am 78 years old. Your recipe is the closest that I have ever seen to the one that I was given. I freeze mine all the time and they never stick and are always flexible. Nothing cooks tortillas like an iron grill or frying pan. If you use non stick they seem to shrink back to a smaller size whereas the iron pan causes them to stick a little enough to keep them stretched to the right size. I do not like store bought tortillas. And taco stands never have fresh home made tortillas. If you go to Arizona into Walmart they sell tortillas that probably taste just like yours. But here in Florida the tortillarias (places where they cook nothing but tortillas.)cannot compare to one home made tortilla like you make. I love home made tortillas and home made refried beans not canned. We use a sauce with chunks of pork that would melt in your mouth. And we pour it on our beans. My mother was Polish and her recipe for enchiladas was the best. My dad could cook beans and tortillas he was Mexican born in Texas and went about it the right way and loved this country. Enjoyed watching this.

I was really I was too young I think at the time to pay close attention to the details. So thank you because she’s gone now and I miss those wonderful tortillas. Hers were thin and fully cooked, soft, warm and always delicious! I’ve never had anything come close to how good hers tasted. This looks like a great method and I’ll give it a try.
She too would treat us to a sample at the end -sharing the way you demonstrated or making what she called “hard tortillas” for us when she was all done. Those tortillas were cooked a bit longer and cracker like and she served them with warm butter or occasionally with peanut butter and jelly then sent us out to play too. It was just something to make us feel extra special--something we’d always wait for…
Thanks for sharing I’ve enjoyed your videos! I will definitely look for more!

You remind me of my own regret of never learning from my Dad, a butcher by trade. I never learned how to cut up a whole chicken, sharpen a knife or even how to carve a roast or turkey. If I had asked him, he would have been happy to teach me. It's too late once these skilled people are gone. Just sayin'. ✌️

Making them reminds me of a trip I took with a coworker friend 46 years ago to stay with her family in a small town in New Mexico (from Washington). I grew up with my grandmother making tortillas and they were the best. I learned recently from my aunt who lived with my grandmother that YOU CAN SAVE PART OF THE DOUGH in cling wrap and then put in a zip lock bag and take out the next day and let get to room temp and make the remainder of the tortillas if you don’t want them all the same day because they are so much better fresh. SHE ALSO SAID YOU CAN FREEZE THE DOUGH AND LET IT DEFROST AND COME TO ROOM TEMP AND MAKE TORTILLAS… I tried the freeze method and it today and it worked great!!!! She said don’t leave the dough too long in the fridge but I think it is great you can do that.

Strange thing, this popped up on my screen as i was just thinking, "How do you make tortillas from scratch?" my husband and i love Mexican food and i have been making a lot of bean and rice burritos using the store bought tortillas. Much like everyone else during these times, I'm trying to figure out how to cut costs and off the top of my head, i figure that 5 pounds of flour costs less than half of what 4 pounds of premade tortillas. This a significant saving and i love doing the work. Loved your presentation, creo que su es muy simpatica y estos burritos estare mas buenos que los otros.

But you have been the best teacher so far with a final product that matches what I remember. You give great detail and I cannot wait to try again. Subscribing!

Rachel: I am so happy that I found you on You Tube. You remind me so much of my Mamá and Abuelita. The dishes you make are what I grew up on. I've made many of the dishes that you have prepared b/c my Mamá taught me how to make them. Even though you put your own twist on some of them, they are delicious! I've even changed some of the recipes my Mamá taught me. Change is good. This is how we learn and create new meals by experimenting. I miss my Abuelita and Mamá so much! Your accent reminds me of them both. About the tortillas. This is one thing that I never could get right. I didn't realize that there was a step-by-step technique to making them. Your video helped me understand the "Why" and "When" to making the tortillas as sublime as you make them. I didn't make them right the first time, though. But today, I'm writing to let you know that I have now mastered your technique, and I am so grateful for your instruction. Keep those videos coming! God Bless!

I absolutely love watching your videos. You cover everything, which I love, and you do it with such love and encouragement. My mother's love language was food, and she was an absolute artist at cooking. Watching you is very comforting. Thank you for sharing your art.

Gracias Rachel. I enjoyed your video.
I would always help my momma roll out the tortillas and cook them. She would make a 25 lb sack of masa for tortillas. We would keep them in the freezer for the month. They were always soooo soft and playable like yours. Soo delicious. 😢

I’ve never made any tortillas, but my husband loves the flour type. I’m doing it for Christmas Eve with white enchiladas! Thank you, Rachel! 😘💪🏼

Rachel thank you thank you, for your tortilla recipe. I think what I did wrong the 1st time was not enough water. I made them again today and this time soft and delicious. I feel so blessed that I found your channel. Thank you so very much. Blessings Rachel 🥺🤗 so yummy.

This made my day my friend, I use a little less water in Ohio than I do in Texas, and I also add a pinch less baking powder in Ohio, I think it's weird, but it's true. Always experiment and write it down until it's perfect for you. Thank you so much for your comment. ❤

When you put the 🧈 on the tortillas, you took me back to my childhood. The restaurants in my area didnt serve salsa and chips when Iwas a kid..They served hot homemade tortillas with butter. Then later on they served Chips and salsa and took away the tortillas!😮 I missed the homemade tortillas and 🧈!! Now Im going to make my own! Thanks Rachel!🎉🎉
