I found your channel while looking up how to make flour tortillas and I must say, your grandma would be proud of me! My wife sure enjoyed them! I'm going shopping tomorrow and will be picking up these ingredients and plan on making this dish you have on this video for us tomorrow evening! I’m Hispanic from south texas and was taught to roast the flour in a hot skillet without any oil until it’s brown than add the broth and spices. The roasting of the flour gives the sauce a unique flavor.
With or with out oil ...roasting the flour is called browning the roux. The darker the roux the richer the flavor...try adi g the dry spices while browning as like she said awakening the spices😅
I am SO happy to see you scrape out all of the ingredients, leaving nothing behind! I am often shocked by how much some of these folks in these videos waste. Can almost make another meal with what they leave behind. Bravo to you!
My tia use to make these for my birthday for many years straight. I never cared for the big party she’d make for me. Her love was more than well felt. At the end my favorite part was knowing she’d make my favorite enchiladas, ever! When she passed nobody really knew how to make them since it wasn’t a house favorite👎 I’ve visited many restaurants and they are rarely on the menu. And when they are they are just not “it”. I made these & only changed the flour in the sauce (I had to use GF flour). Before baking them the enchilada sauce tasted a little flourish but after baking that taste was gone. THESE ARE THE BEST ENCHILADAS EVER! Tonight I made the Mexican Rice to go with them and I feel like I am at my favourite Mexican restaurant, but better! Thank you so much!!!

First time making enchiladas!! I got tired of wanting enchiladas from one of my favorite Mexican restaurants and not being able to have them because of the quarantine...so I looked it up and your tutorial seemed so simple that I had to try it out!! I’m so happy I did. The taste was just what I was looking for to satisfy that craving I had. With some more practice...I’ll be a pro!!😅 One thing I noticed was that these do dry up when reheating so making an extra batch of enchilada sauce is encouraged... I’ll make sure i’ll make some next time!!! Thanks 😊

I have been looking for a great enchilada recipe and your is the one I follow to the letter! My Mother made the best enchiladas in the world and I could never figure out the rue. She passed away February 2021. Yours is exactly like my Mom's. I thought I was going to live the rest of my just wishing I could taste my Mother's Enchiladas. My Mother always made them when I came back from my Military deployments. You rock! I have made 3 batches so far and I always watch this video and follow your recipe. My wife loves them as do I! This recipe was sooooooo delicious! My 6 year old daughter is an extremely picky eater and she was ranting and raving about how good the enchiladas where that I made tonight. We will definitely be making this recipe again!
I like using bullion it gives it another layer of flavor to me and I tend to not use additional salt. But that's me and my tastes. My family doesn't complain. I love every recipe I've tried of yours. Last weekend our 25 yr old came over for dinner and he was amazed at everything I made. I made your chilies rellenos with the sauce, rice, beans and a recipe for burrito I got from a friend. He thought I ordered from the restaurant. All he could say was 'dang no left overs for me to take home'.

I like to put a thin layer of sauce down in the casserole dish, as a nice base for the enchiladas. I also dip my pliable tortillas in the sauce as well, before filling and rolling. Yours looks so gooey & good! I’ve got to make a batch tomorrow. Thanks so much girl. Love you’re videos!

My mom does it your way sometimes, I've also seen her do it Mama's way... My mom sometimes make it Mama's way and adds a tablespoon of sauce when rolling the enchiladas. But thank you Mama for the recipe, theres no sacrifice in taste, the clean up is easy, and you made it fun to listen to. I LOVE the tip of how to heat up the tortillas! I have spent 40 years using a frying pan and hating the fact that it took so long to do each tortilla individually and always felt like I was wasting oil doing it. Also, for anyone hating the using the 'unhealthy' chicken bouillon, I would mention that Knorr makes a salt-free chicken broth and Herb-Ox makes salt-free chicken and beef broth.
I am a displaced Texan male, living in Florida. I watched your video which made my mouth water, so I tried to make it. Let's just say that with a lot of sweat (97deg. outside) I ended up with something that resembles a casserole that has some tex mex flavoring. You sure do make it look easy.

This is the first time I’ve added beef enchiladas to my Christmas dinner.... frickin yum!!! Since my mother passed away seven years ago, I have been cooking her chicken enchiladas for Christmas… But this year I thought I would also add beef enchiladas because my husband likes beef. My mom would cook the meat, then assemble the sauce in the pot with the meat. She would use a slotted spoon the bring the meat out to roll the enchiladas. It made the enchiladas inside really saucy and delicious. It is basically the same recipe, except much more cumin in the suave.

I’ve been living in Arizona for the past two years and not only do I miss the Rio Grande Valley - Brownsville but all of beautiful Texas, especially it’s Tex-Mex food. From the masa tasting “enchiladas” served at the school cafeteria, to my moms, to the ones all throughout South Texas. And I’ve never tasted such delicious enchiladas until I made your recipe. After seeing your "short" on this dish, I looked this video up (along with the Easy Mexican Rice) and I fixed them tonight for our weekly Friday night Family dinner. I made a double run of both. I did use flour shells as the family as a whole do not seem to like corn shells and as I got lazy I used canned enchilada sauce. They were absolutely great and the rice was best I have had. This grandfather says thanks!
My family loves enchiladas.. I'll definitely try this one! Looks so delicious. I definitely warm my tortillas in a little bit of oil. I think it adds flavor and brings out the corn flavor of the tortilla. To be honest I'd probably be using 16 oz of cheese.. lol.. we love it cheesy!
I am making these now. Simple to do, not a lot of weird or hard to find ingredients. Getting ready for the final assembly but the red sauce is great, the meat is flavorful - no reason why the final product won’t be delicious. Thanks again for sharing with us.
Thanks for another great video and recipe. The only thing I would change is to add about 1 cup of plain tomato sauce (Hunts is a good one) to the enchilada sauce, and pour some of the sauce in the bottom of the pan before placing the enchiladas in the pan. Yum!!

4:00 cooking them in oil, seems to build a protection for the bread (tortilla) from becoming soggy. Thats the reason for the oil frying vs, a microwave. In case anybody was wondering. This is a perfect idea!

I tried this with some leftover baked chicken, and it came out fabulous! Only added a bit more chillie powder for the enchilada sauce, because I love spice. Thank you for the recipe!
I like to put a thin layer of sauce down in the casserole dish, as a nice base for the enchiladas. I also dip my pliable tortillas in the sauce as well, before filling and rolling. Yours looks so gooey & good! I’ve got to make a batch tomorrow. Thanks so much girl. Love you’re videos!

My mom does it your way sometimes, I've also seen her do it Mama's way... My mom sometimes make it Mama's way and adds a tablespoon of sauce when rolling the enchiladas. But thank you Mama for the recipe, theres no sacrifice in taste, the clean up is easy, and you made it fun to listen to. I like how you encourage everyone to reply, the comraderie of dialogue is so nice to see..this would not had happened if you did not post the wonderful recipe. First tried this about a year ago and use this recipe every time I make enchiladas for the family now. If you’ve never made homemade enchilada sauce as i never had you definitely need to and you’ll never buy a can of it ever again. Sooo good and easy.🤤

I LOVE the tip of how to heat up the tortillas! I have spent 40 years using a frying pan and hating the fact that it took so long to do each tortilla individually and always felt like I was wasting oil doing it. Also, for anyone hating the using the 'unhealthy' chicken bouillon, I would mention that Knorr makes a salt-free chicken broth and Herb-Ox makes salt-free chicken and beef broth.
I am a displaced Texan male, living in Florida. I watched your video which made my mouth water, so I tried to make it. Let's just say that with a lot of sweat (97deg. outside) I ended up with something that resembles a casserole that has some tex mex flavoring.

This is the first time I’ve added beef enchiladas to my Christmas dinner.... frickin yum!!! Since my mother passed away seven years ago, I have been cooking her chicken enchiladas for Christmas… But this year I thought I would also add beef enchiladas because my husband likes beef. My mom would cook the meat, then assemble the sauce in the pot with the meat. She would use a slotted spoon the bring the meat out to roll the enchiladas. It made the enchiladas inside really saucy and delicious. It is basically the same recipe, except much more cumin in the suave.

I’ve been living in Arizona for the past two years and not only do I miss the Rio Grande Valley - Brownsville but all of beautiful Texas, especially it’s Tex-Mex food. I used to roll also. But I do the easy lazy way. I layer them like lasagna. Occasionally I layer depends on how many people i have to feed.

After seeing your "short" on this dish, I looked this video up (along with the Easy Mexican Rice) and I fixed them tonight for our weekly Friday night Family dinner. I made a double run of both. I did use flour shells as the family as a whole do not seem to like corn shells and as I got lazy I used canned enchilada sauce. They were absolutely great and the rice was best I have had. This grandfather says thanks!
My family loves enchiladas.. I'll definitely try this one! Looks so delicious. I definitely warm my tortillas in a little bit of oil. I think it adds flavor and brings out the corn flavor of the tortilla. To be honest I'd probably be using 16 oz of cheese.. lol.. we love it cheesy!

Thanks for another great video and recipe. The only thing I would change is to add about 1 cup of plain tomato sauce (Hunts is a good one) to the enchilada sauce, and pour some of the sauce in the bottom of the pan before placing the enchiladas in the pan. Yum!!

Awesome recipe. I used to fry my tortillas and roll each like you. I've gotten so lazy I make a casserole and don't even fry the tortillas. Doesn't taste as good or look as pretty but hey it works. Especially if you're short on time. Thanks for sharing!

4:00 cooking them in oil, seems to build a protection for the bread (tortilla) from becoming soggy. Thats the reason for the oil frying vs, a microwave. In case anybody was wondering. This is a perfect idea!
