- Today I am making cheesy ground beef enchiladas my favorite way, baking in the oven. The homemade enchilada sauce gravy and the cheese make this a baked comfort food my family loves. I am also making a pan of Mexican rice and a salad to make this a delicious enchilada dinner.

INGREDIENTS
1 lb ground beef (I used 97/3 lean to fat ratio)
1/4 cup diced onions
2 garlic cloves minced
1/2 tsp ground cumin
1/2 tsp salt
pepper to taste
14 corn tortillas
1/3 cup oil (for softening corn tortillas)
12 oz cheddar cheese (or Colby jack cheese)
ENCHILADA RED SAUCE INGREDIENTS
1/4 cup oil
4 tbsp all purpose flour
2 Tbls chili powder
1/4 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1 Knorr brand chicken bouillon cube
2 cups (16 oz) water
**You can substitute the bouillon cube and water with
2 cups of chicken stock or broth
**If using chicken broth, be sure to adjust salt and seasoning to taste
**Bake in a 9x13 baking dish
**Preheat oven to 375 degrees F
**Bake covered for 20 minutes and then uncovered for 10 to 15 minutes.

Brand new subscriber! I'm 60 and am my wife's caregiver and I'm always trying to mix things up in providing us both with tasty and creative homemade meals that are not only healthy, but DELICIOUS! I found your channel while looking up how to make flour tortillas and I must say, your grandma would be proud of me! My wife sure enjoyed them! I'm going shopping tomorrow and will be picking up these ingredients and plan on making this dish you have on this video for us tomorrow evening! Plus, we have a HUGE snow storm that will be bringing a foot + of snow starting tomorrow after midnight, so Thursday, while it's snowing all day heavily, I will be doing even more cooking! I grew up in south Texas and this is the way we enjoyed enchiladas, I've been in Los Angeles area for over 20 yrs, where Tex-Mex food does not exist!!! Your recipe brought me home! Thank you for sharing! We loved it! God bless you!

Omg thank you so much for this. I especially appreciate the enchilada sauce recipe using dry ingredients that I have. I am on an extremely tight budget and can’t go to the store right now. I’m trying to make do with what I have in my cupboards for a while. Getting super creative. Thankfully I have all of this and can make this tonight!!
My tia use to make these for my birthday for many years straight. I never cared for the big party she’d make for me. Her love was more than well felt. At the end my favorite part was knowing she’d make my favorite enchiladas, ever! When she passed nobody really knew how to make them since it wasn’t a house favorite👎 I’ve visited many restaurants and they are rarely on the menu. And when they are they are just not “it”. First time making enchiladas!! I got tired of wanting enchiladas from one of my favorite Mexican restaurants and not being able to have them because of the quarantine...so I looked it up and your tutorial seemed so simple that I had to try it out!! I’m so happy I did. The taste was just what I was looking for to satisfy that craving I had. With some more practice...I’ll be a pro!!😅 One thing I noticed was that these do dry up when reheating so making an extra batch of enchilada sauce is encouraged... I’ll make sure i’ll make some next time!!! Thanks 😊
I made these & only changed the flour in the sauce (I had to use GF flour). Before baking them the enchilada sauce tasted a little flourish but after baking that taste was gone. THESE ARE THE BEST ENCHILADAS EVER! Tonight I made the Mexican Rice to go with them and I feel like I am at my favourite Mexican restaurant, but better! Thank you so much!!!
Thank you SO MUCH for sharing! These were absolutely delicious and so easy to make! I had flour tortillas on hand so I skipped warming them in oil and went straight to wrapping. I served them with rice and beans, salsa and sour cream. It was a big hit with my husband and dinner guest! You're the best!

I made this and the family loved them!! You definitely walk through it in an easy to understand way. I made a less spicy version with mainly paprika and it turned out delicious. I think warming the tortillas and prepping them the way you explained, make this dish so much better. I sprinkled garlic powder on the tortillas while I was warming them with the oil. I also agree that your voice is very calming. Nice video, thank you

Taco bell was inspired by Mexican Food, the owner of taco bell copied ideas from a still existent mexican restaurant and the owners of that restaurant did not take legal action, they just let him get inspired and made it his own fastfood restaurant,that's all.

I like to put a thin layer of sauce down in the casserole dish, as a nice base for the enchiladas. I also dip my pliable tortillas in the sauce as well, before filling and rolling. Yours looks so gooey & good! I’ve got to make a batch tomorrow. Thanks so much girl. Love you’re videos!

My mom does it your way sometimes, I've also seen her do it Mama's way... My mom sometimes make it Mama's way and adds a tablespoon of sauce when rolling the enchiladas. But thank you Mama for the recipe, theres no sacrifice in taste, the clean up is easy, and you made it fun to listen to. I like how you encourage everyone to reply, the comraderie of dialogue is so nice to see..this would not had happened if you did not post the wonderful recipe. I like using bullion it gives it another layer of flavor to me and I tend to not use additional salt. But that's me and my tastes. My family doesn't complain. I love every recipe I've tried of yours. Last weekend our 25 yr old came over for dinner and he was amazed at everything I made. I made your chilies rellenos with the sauce, rice, beans and a recipe for burrito I got from a friend. He thought I ordered from the restaurant. All he could say was 'dang no left overs for me to take home'.

This is the first dinner my mom taught me to make and is so close to yours. I want to say I love the way your warmed your tortillas on the pan on the burner, genius! Don't get so much oil as frying them. Thanks for sharing.
My mom would cook the meat, then assemble the sauce in the pot with the meat. She would use a slotted spoon the bring the meat out to roll the enchiladas. It made the enchiladas inside really saucy and delicious. It is basically the same recipe, except much more cumin in the suave.
