Canning Watermelon Rind Pickles for Food Storage

  • Canning pickled watermelon rind pickles is a great addition to your food storage and help you utilize more of your produce at the retreat in case of shtf.
    Watermelon Rind Pickles
    8 cups sliced peeled watermelon rind
    6 cups water
    1 cup canning salt
    4 cups sugar
    2 cups white vinegar
    6 cinnamon sticks (total 18")
    1 tsp whole cloves
    1 tsp whole peppercorns
    Place rind in a nonreactive bowl. stir in water and salt. Refrigerate overnight. Rinse and drain well.
    In pot mix sugar, vinegar, cinnamon stick, cloves and peppercorns. Bring to a boil add rinds and return to boil. Simmer uncover 10 minutes or until tender. Remove cinnamon sticks. Ladle into pint jars leaving 1/2" head space. Remove air bubbles and process for 10 minutes in boiling water bath. Store for 2 weeks before opening.

    Thank you. This is the way my Aunts' made pickled watermelon. They kept the outer part of the watermelon on, and it was good.

      Do it. Its well worth the trouble. My late husband and I started canning in 2009-12. He died in 2013. I ate the canned foods for 4yrs. It saved me a lot of money.

    THANK YOU SO MUCH! Your is the first recipe I found that doesn’t peel the outer skin off the rind. I knew it was edible and I really wanted color. I also wanted to can these instead of lacto fermenting. And you’ve inspired me to make pie filling and mini pies too! Thank you again for putting so much work into your videos :)

    My mother told me how her mother made these and I never inheireted a recipie, my mom never knew how, and no one I ever asked ever knew of them at all! SO glad you made this! I have been looking for how to do this for years!

    I just made this tonight and it was fantastic! That flavor was awesome, I never knew watermelon rind could taste like that from the little piece I ate before canning the rest. I was able to make six pints with the amount of rind I had while using the 4 cups of vinegar and 8 cups of sugar like the video. I should have been making this with the rinds for years. I will from now on.

    Very nice. I've done watermelon pickling but didn't know to leave the green rind on. I only would use the white. Lol. So much easier not having to peel it.

    I've never heard of watermelon rind pickles and I think it's a pretty cool idea if it tastes good. That'd be one way to reduce food waste.

    Pickled watermelon , Great idea ! , you could also grate white rind of watermelon in yogurt add lime garlic and dill and salt for a dipping sauce .

    Oh I was waiting for this. My watermelon is gone. But there will be a couple more. Yeah know. I luv this kind of stuff. I have tasted watermelon pickles before. Gotten from farmers markets and bought from Amish/Mennonites. Great way to use up ALL the watermelon. Pickles, watermelon jelly and even slushies. YEAH!

    This is so interesting, thank you for the video. What is the purpose of adding the cloves, pepper and cinnamon to the boiling water and vinegar mixture while processing? Does this somehow get into the jar and add flavor?

      Lol, whomever edited the video got it out of order. The vinegar sugar brine is pored over the cubes before sealing, and put in the water bath.

    I have about 6 watermelons. Can I freeze the rinds till I'm ready to use them?

      No they will be soggy pickles but you can brine them and drain put in mason jar in water in fridge for up to 3 weeks then bring to room temp then process but its easier to just get them done all at once. Bleesings

      My mom use to blanch and freeze her watermelon rine but they were inferior to that of fresh, not frozen. Come January and 5' of snow, they did taste pretty good! My dad and I fought over them at the dinner table! hehehe

      Good question. I tasted mine after the boiling process and they were tough a .....
      I hope they soften up. The white part was delicious however🙂

    Hi! I'm getting ready to make watermelon pickles tomorrow (hopefully!) The recipe says peeled but your don't look peeled to me - are they or aren't they?       I am no expert, but in my Ball canning book, will state, for example, "6 cups sugar or sweetener of choice".

    La scorza non è assolutamente indigesta, perciò come per tutte le altre cucurbitacee, del frutto si può mangiare tutto, dai semi fino alla scorza. Ottima se preparata come i cetrioli in salamoia, ossia pickles. L'ideale sarebbe bollirla in zuppe come si fa tradizionalmente in diversi paesi asiatici.

    Salt's a base by the way, but yes, high acid or high alkaline will corrode or mess with reactive bowls.
