The Best Coconut Cream Buns

Growing up in Chinatown, we used to get coconut cream buns every Sunday after having dim sum; so this recipe is really close to home for us! This bun recipe was passed down to us from Aunt May and brings us back to our childhood memories with our family. Now, we’re sharing it with you! It’s the perfect snack when hosting parties, given as a gift or just for your own personal enjoyment (which we’re definitely guilty of).
We think it’s so important to know what is going into your food, just as it’s important to know what is going into your beauty products. Ingredients:
Batter:
1/2 cup milk
1/2 tbsp instant yeast
1/2 tsp salt
3 tbsp sugar
2 cups bread flour
1 room temp egg
2 tbsp butter
Egg Wash:
1 Egg
1 tbsp water
Homemade Cream:
1 can coconut cream (chilled overnight in fridge)
1/4 powdered sugar
OR
1 can coconut whipped cream (vegan options available!)
Top with:
Coconut flakes
Chai Tea powder (optional)
Process:
Create the Batter:
Microwave milk for 20 seconds
Add 1/2 tbsp instant yeast to the warm milk
Stir until fully blended in
Leave to sit for 5 minutes (top layer should thicken after this time)
Mix in the proofed yeast
Add 1/2 tsp salt and 3 tbsp sugar to 2 cups bread flour and mix
Add in milk/yeast mixture
Add one room temp egg
Knead with hands once shaggy texture
Create a dough ball
Proof 1: Cover dough ball with cloth for 15 mins
Remove cloth and knead until the texture begins to smooth
Create a divot/bed for the butter
Add 2 tbsp butter, fold in and knead together until incorporated evenly
Reform into dough ball
Proof 2: Allow to sit for 1 hour with plastic wrap
Cut in half and then into sections
Pull dough upwards forming a ball
Proof 3: Cover with two cloths, 1 dry, 1 damp
Leave to sit for 30 mins
Form into football shape
Proof 4 (Final): Cover with cloth for 15 mins
Egg wash before putting into oven
Egg Wash: Cover in egg wash (1 egg + 1 tbsp water)
Cook at 390 F until golden brown
Remove from oven
Cover in brush of syrup which will stick to the coconut flakes
Cover with coconut flakes
Create a slit in the middle of the buns for the cream
Fill with cream
Make the Cream:
Add one can of coconut cream chilled overnight
Mix well with 1/4 powder sugar

There is yeast, it’s in the milk mixture
How long can these sit out? Got these from bakery & left them out for 2 days
Can you use all purpose flour or cake flour instead of bread flour?
Yes! They will be slightly less puffy / bouncy, but AP flour still works fine! :)
